1/4 cup fresh lime juice
1 tablespoon fresh lemon juice
2 tablespoons tequila
3 tablespoons extra virgin olive oil
1 teaspoon white wine vinegar
salt and pepper
2 cups papayas, peeled seeded and cut into 1-by-1/2-inch batons
2 cups seedless watermelon, cut into 1-by-1/2-inch batons
2 cups jicama, peeled and cut into 1-by-1/2-inch batons
5 ounces spring mix greens
1 avocado, cut into 1/2-inch cubes

Steps:

  • In a large bowl, whisk the lime juice and vinegar with the tequila. Whisk in the olive oil and season the vinaigrette with salt and pepper.
  • Add the papaya, watermelon, jicama and greens and toss well.
  • Add the avocado and toss gently.
  • Season with salt and pepper and serve right away.

Katie loved visiting the various Mexican-American fruit stands during her time in Los Angeles. The vendors would sprinkle fruit cups with fresh lime juice and the popular chile-lime salt Tajin. Inspired by those stops, she created this larger format fruit salad that has a hint of spice. The result is a refreshing and irresistible snack.

2 cups cubed mango
2 cups cubed papaya
2 cups cubed pineapple
2 cups cubed watermelon
1 cup English cucumber chunks
1/2 cup unsweetened coconut flakes
2 oranges, sliced into wheels
Juice of 1 lime
Chile-lime salt, such as Tajin, to taste

Steps:

  • Mix the mango, papaya, pineapple, watermelon, cucumber, coconut flakes and oranges in a large bowl. Stir in the lime juice. Sprinkle with the chile-lime salt to your desired spiciness level.

This is one of those salads that the longer it sits, the better it gets. The heat from the chipotle chili powder is tamed by the juicy watermelon, sweet mango and crisp cucumber.

2 tablespoons honey
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon lime zest plus 3 tablespoons lime juice
1/2 teaspoon chipotle chile powder
Kosher salt
2 cups cubed watermelon
1/2 cup very thinly sliced red onion
1 large mango, peeled, pitted and chopped
1/2 English cucumber, cut into half-moons
1/2 cup fresh mint leaves

Steps:

  • For the spicy chipotle-lime vinaigrette: Whisk together the honey, olive oil, vinegar, lime zest and juice and chipotle chile powder in a small bowl. Season with salt to taste.
  • For the watermelon salad: Combine the watermelon, red onion, mango and cucumber in a medium bowl.
  • Pour the vinaigrette over the mixture and toss to coat. Cover and refrigerate for 30 minutes or until ready to serve. Just before serving, add the mint and toss to combine.

Green papaya is usually found in Asian, Vietnamese, and Thai salads and dishes. I've taken the crisp crunchiness of green papaya and given it a Mexican/Tex-Mex twist! My kids love it when I use a bit less cilantro and chili powder.

ΒΌ cup chopped fresh cilantro, or to taste
3 cloves garlic, minced, or more to taste
2 limes, juiced
2 tablespoons olive oil
1 tablespoon brown sugar
1 pinch chili powder, or more to taste
salt to taste
1 green papaya, peeled and shredded
2 cups cold cooked black beans
1 cup cold cooked corn
1 red bell pepper, cut into small dice

Steps:

  • Blend cilantro, garlic, lime juice, olive oil, brown sugar, chili powder, and salt in a blender until smooth.
  • Toss shredded papaya, black beans, corn, and red bell pepper together in a large mixing bowl; add dressing and toss to coat.
  • Cover bowl with plastic wrap and refrigerate at least 30 minutes.

1 garlic clove
4 chilies
1 tablespoon shrimp paste
1/4 tablespoon crab, paste
1 tablespoon fish sauce
1 tablespoon msg (option)
1 tablespoon fermented fish (padek option)
3 tablespoons sugar
2 tablespoons lime juice
6 cherry tomatoes, but in half

Steps:

  • Using a large mortar and pestle and pound garlic and chilies together.
  • Add shrimp and crab paste and continue pounding.
  • Add papaya than add the rest of the ingredients and use a spoon to help mix ingredients together.
  • Taste and adjust to your taste, its should be sweet, sour, salty and hot.
  • Enjoy.
