12 ounces ground turkey
1 medium sweet red pepper, chopped
1 small sweet yellow pepper, chopped
1/3 cup chopped onion
3 garlic cloves, minced
1-1/2 cups salsa
1/2 cup canned kidney beans, rinsed and drained
2 teaspoons chili powder
1 teaspoon ground cumin
8 cups torn romaine
2 tablespoons fresh cilantro leaves
Optional toppings: chopped tomatoes, shredded cheddar cheese and crushed tortilla chips

Steps:

  • In a large skillet, cook turkey, peppers, onion and garlic over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles; drain., Stir in salsa, beans, chili powder and cumin; heat through., Divide romaine among four plates. Top with turkey mixture; sprinkle with cilantro and toppings of your choice. Serve immediately.

This Mexican Ground Turkey Bowl recipe with rice, black beans and tomatoes is a healthier twist on restaurant-style Mexican rice! Leftover cooked rice is mixed with sauteed veggies, lean ground turkey, spices, lime and cilantro! YUM!

1 tbsp olive oil
1 onion (minced)
2 garlic cloves (minced)
1 bell pepper (chopped finely)
1 lb/500 grams ground turkey (- or ground chicken)
2 cups leftover cooked rice (- if you don't have leftover rice you can also start by cooking 1 cup dry rice.)
1 14 oz can black beans, ( drained and rinsed)
1 cup plain tomato sauce
1 cup salsa
2 teaspoons chili powder
1 teaspoon cumin
1 tbsp lime juice (up to 2 tbsp to taste)
1/3 cup cilantro (chopped + more for serving)
salt (to taste)

Steps:

  • Heat olive oil in large skillet over medium heat. Add onion, garlic, bell pepper and turkey to the skillet. Cook, stirring often and breaking down the turkey in small bits with the spoon, until turkey is no longer pink (it will finish cooking after).
  • Stir in rice, black beans, tomato sauce, salsa, chili powder and cumin. Reduce heat to low and cook for about 4-5 minutes, stirring often, to let the flavor develop. If it starts to dry out, add a bit more tomato sauce or salsa, just enough to moisten.
  • Turn off the heat, stir in lime juice and cilantro. Taste and adjust salt if needed.
  • Serve immediately with more cilantro and some lime wedges; or pack in containers to eat later.

1 large flour tortilla
2 tbsp olive oil
juice ½ lime
1 tbsp sliced jalapeños , plus 1 tbsp of vinegar from the jar
handful crisp salad leaves
½ avocado , stoned & cut into chunks
1 tomato , chopped
½ small red onion , sliced
2 thick slices cooked turkey , shredded
1 tbsp cheddar , grated
soured cream , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. To make a tortilla basket, soften the tortilla in the microwave for a few secs, then brush with a little of the oil and gently push the oiled side to line a small ovenproof bowl. Line with foil and weigh with baking beans or a slightly smaller ovenproof bowl. Cook for 8-12 mins until crisp, allow to cool slightly before removing.
  • Make the dressing by mixing the oil, lime juice and vinegar, season. Mix the leaves, avocado, tomato, onion and turkey and toss with the dressing. Pile into the bowl and top with the cheese, jalapeños and a dollop of soured cream.

¾ pound cooked turkey meat
2 stalks celery
2 green onions
½ red bell pepper
3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt

Steps:

  • Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.
  • Transfer the turkey mixture to a medium bowl. Mix in mayonnaise, prepared Dijon-style mustard, cider vinegar, white sugar and salt. Cover and refrigerate 8 hours, or overnight, before serving.
