2 cans (4 ounces each) chopped green chilies
2 eggs, lightly beaten
1/3 cup salsa
1/4 cup finely chopped onion
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
2 pounds ground beef
3/4 cup finely crushed corn chips
8 flour tortillas (10 inches), warmed
TOPPING:
Chopped tomatoes
Chopped ripe olives
Shredded cheddar cheese
Shredded lettuce
Salsa
Sour cream

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef and chips over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until no longer pink. Wrap burgers and desired toppings in tortillas.

My husband and I are trying to add more variety to our diets, and cut back on red meat, so I came up with this ground chicken burger, and it is delish! I used my George Foreman grill to cook them. I served them with the spicy baked sweet potato fries found on this Website. They make a nice substitution for a regular cheeseburger and French fries.

1 pound ground chicken
½ small onion, diced
1 teaspoon minced garlic
½ (1 ounce) package dry taco seasoning mix
1 egg
salt and pepper, to taste
4 wheat hamburger buns, toasted
4 slices pepperjack cheese
1 avocado - peeled, pitted and sliced
¼ cup chopped jalapeno pepper
½ cup salsa, or to taste

Steps:

  • Preheat outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Mix the ground chicken, onion, garlic, taco seasoning, and egg together in a bowl until thoroughly blended. Season with salt and pepper to taste. Divide chicken mixture evenly and form into 4 soft patties.
  • Cook the chicken patties on the preheated grill until meat is no longer pink and juices run clear, 5 to 8 minutes per side, depending on thickness. To serve, place each patty on one half of a hamburger bun, top with a slice of cheese, avocado slices, and desired amounts of jalapeno peppers and salsa. Cover with remaining half of bun.

1 cup finely crushed corn chips
1 envelope taco seasoning
1 tablespoon dried minced onion
1 large egg, lightly beaten
1-1/2 pounds ground beef
6 slices cheddar cheese
Sandwich buns, split
Lettuce leaves
Tomato slices
Salsa, optional

Steps:

  • In a large bowl, combine the corn chips, taco seasoning, onion and egg. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 7-8 minutes on each side or until a thermometer reads 160° and juices run clear., Top each burger with a cheese slice; heat just until cheese begins to melt. Serve on buns with lettuce, tomato and, if desired, salsa.

1 pound ground beef
1 (1 ounce) packet taco seasoning
5 slices pepper Jack cheese
5 roll (blank)s hamburger buns, split
¼ cup sour cream, or to taste
¼ cup salsa, or to taste
1 cup chopped fresh cilantro
1 tomato, sliced
1 avocado, sliced
½ onion, sliced

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground beef and taco seasoning together in a bowl with your hands. Separate mixture into 5 equal portions. Form into patties.
  • Cook patties on the preheated grill for 5 minutes. Flip, top with pepper Jack cheese slices, and continue to grill until no longer pink or to desired doneness, about 5 minutes more. An instant-read thermometer inserted into the center of a patty should read at least 160 degrees F (70 degrees C).
  • Spread sour cream and salsa on buns, add patties, and top with cilantro, tomato, avocado, and onion.

I came up with this one because I wanted a burger and a taco, and couldn't have both in one meal. Turned out delicious, and got rave reviews! Also really simple to prepare!

1 lb lean ground beef or 1 lb ground turkey
1/2 envelope taco seasoning
1 can whole green chili, drained,rinsed,and patted dry
4 slices white cheddar cheese or 4 slices muenster cheese

Steps:

  • Mix the ground meat and taco seasoning with your hands.
  • Make 4 patties.
  • Spray grill with nonstick cooking spray before igniting.
  • Heat to medium, then put burgers on.
  • Cook about 5 minutes per side, or until done.
  • Place on chile and 1 slice of cheese on each burger, and cover until cheese is melted.
  • Serve on buns with sour cream, salsa, lettuce and tomato, or preferred garnishes.
  • You can make these on the stove as well, just cook them like you would a regular hamburger.
  • Make sure to use some cooking spray though!
