1 envelope taco seasoning
1 can (15 ounces) tomato sauce
1/4 cup chopped green pepper
1 teaspoon garlic powder
1 teaspoon dried oregano
8 ounces uncooked spiral pasta, cooked and drained
1 cup shredded cheddar cheese, divided
1/2 cup sour cream

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, tomato sauce, green pepper and spices. Bring to a boil; remove from the heat. , Meanwhile, combine the pasta, 1/2 cup cheese and sour cream. Spoon into a greased 2-qt. baking dish. Top with meat mixture and remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through.

1 ½ cups medium chunky salsa
1 cup mayonnaise
½ cup sour cream
1 (16 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexican-style corn with red and green peppers, drained
½ cup chopped red bell pepper
2 green onions, sliced thin
1 (4.25 ounce) can sliced black olives, drained
½ teaspoon garlic powder
½ teaspoon ground cumin, or to taste
½ teaspoon dried cilantro, or to taste
1 teaspoon salt
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil; cook the rotini in the boiling water until the pasta is cooked through yet firm to the bite, about 8 minutes. Drain. Rinse under cold running water until completely cooled; drain thoroughly.
  • Whisk the salsa, mayonnaise, sour cream, black beans, Mexican-style corn, red bell pepper, green onions, black olives, garlic powder, cumin, cilantro, salt, and pepper together in a large bowl; add the cooled pasta and stir to coat evenly. Cover the bowl with plastic wrap and refrigerate 2 hours to overnight before serving.

12 uncooked jumbo pasta shells
1 medium onion, finely chopped
1 pound lean ground beef
1 1/2 teaspoons chili powder
1 package (3 ounces) cream cheese
3/4 cup Old El Paso™ taco sauce
1 cup shredded Colby-Monterey Jack cheese (4 ounces)
1/2 cup crushed corn chips
4 green onions, sliced
1/2 cup sour cream

Steps:

  • Heat oven to 350° F. Spray 9-inch square baking dish with cooking spray. Cook and drain pasta shells as directed on package.
  • In 10-inch skillet, cook ground beef and onion over medium-high heat 5 to 6 minutes, stirring occasionally, until beef is brown; drain.
  • Stir chili powder, cream cheese and 1/4 cup of the taco sauce into the beef mixture. Heat over medium-low heat 2 to 3 minutes, stirring occasionally, until cheese is melted. Remove from heat.
  • Fill pasta shells with beef mixture, using about 2 tablespoons for each shell. Place filled shells in dish. Pour remaining taco sauce over shells.
  • Cover; bake 20 minutes. Remove dish from oven; uncover. Sprinkle cheese and corn chips over shells. Bake about 10 minutes longer or until cheese is melted. Garnish pasta shells with sour cream and green onions.

1 medium sweet red pepper, sliced
1 medium green pepper, sliced (optional)

2 onions, chopped
1 green bell pepper, chopped
½ cup sweet corn kernels
1 (15 ounce) can black beans, drained

¼ cup sliced black olives
1 ½ tablespoons taco seasoning mix
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and pepper in oil until lightly browned, 10 minutes. Stir in corn and heat through. 1/2 cup chopped fresh cilantro, plus more for garnish
1/3 cup mayonnaise
3 tablespoons sour cream
1 1/2 tablespoons fresh lime juice
8 ounces dried elbow macaroni
1/2 cup frozen corn, thawed
1 cup canned black beans, drained and rinsed
1 cup shredded rotisserie chicken, skin and bones removed
1/4 cup finely chopped red onion
2 vine-ripened tomatoes, chopped
1/2 jalapeno, stemmed, seeded and minced

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the cilantro, mayonnaise, sour cream, lime juice and 1/2 teaspoon salt together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Three minutes before the pasta is done, add the corn to the pot. Drain and rinse under cold water to cool and add to the bowl.
  • Add the beans, chicken, onions, tomatoes and jalapeno to the bowl and toss to combine. Season with salt and garnish with cilantro. The pasta salad is best if served right away.

1 (16 ounce) box elbow macaroni
2 garlic cloves
1 (16 ounce) jar salsa (I used medium)
8 ounces cream cheese
1 cup sour cream
1 (16 ounce) can refried beans
2 tablespoons hot sauce
1 teaspoon cumin
1 teaspoon chili powder
4 ounces canned jalapeno slices
2 cups four-cheese Mexican blend cheese

Steps:

  • Preheat oven to 350°F
  • Cook macaroni until al dente; set aside.
  • Sauté garlic in 2 Tbsp olive oil about 30 seconds on medium heat. Add jar of salsa and bring to simmer. Add in can on refried beans a dollop at a time. (I used wire whisk to whisk in). Add hot sauce to taste. If too thick at this point add a little bit of water. I actually put some in the same jar as the salsa and got the extras out. Simmer 10 minutes.
  • Add 4 oz of the cream cheese in dollops (again using wire whisk to blend in). Once the cream cheese is blended, add the cup of sour cream and stir. Sauce will be thick and creamy. I added a dash of cumin and chili powder--your preference on the spices.
  • Spray casserole dish and add in pasta. Stir in sauce mixture until blended. Top with dollops of remaining cream cheese. Sprinkle with shredded cheese and top with jalapeño slices.
  • Bake covered with foil 30-40 minutes Enjoy!

3/4 pound fusilli or other spiral-shaped pasta
1/3 cup finely chopped onion
1 garlic clove, minced
1 tablespoon vegetable oil
a 15-ounce can black beans, rinsed and drained (about 1 1/3 cups)
a 10-ounce can mild enchilada sauce
a 3-inch pickled jalapeño chili if desired, chopped fine (wear rubber gloves)
1/4 cup sour cream
freshly grated Monterey Jack or sharp Cheddar to taste
2 scallions, sliced thin

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta. Cook pasta until tender, about 12 minutes.
  • While pasta is cooking, in a 2- to 3-quart heavy saucepan cook onion and garlic in oil over moderately low heat, stirring occasionally, until softened. Add beans, enchilada sauce, and jalapeño and simmer gently, stirring occasionally, until thickened, about

I put Sopa in the title because that is what my mom calls it and I'm not sure if there is a better name for this dish. It is a wonderful side dish and I just made it a few moments ago and I had to share. You can use almost any type of pasta.

2 cups of uncooked pasta (I use small pasta shells, you can use almost anything. If you use a long pasta like spaghetti, break)
2 tablespoons olive oil
1/4 cup onion
1 garlic clove, minced
1 teaspoon salt
1 (8 ounce) can tomato sauce
1/4 cup of shredded cheddar cheese
water

Steps:

  • Heat the olive oil in a 2 qt sauce pan.
  • Put the uncooked pasta, onions and garlic in 2 qt sauce pan.
  • Stir regularly until onions become translucent and pasta has brown spots on it where it has fried.
  • Put tomato sauce and salt in sauce pan.
  • Put enough water in saucepan to cover pasta completely but not too much.
  • Stir then cover saucepan and let simmer for 5 minutes.
  • Uncover saucepan and let water cook down until sauce nearly disappears, stirring ocassionally.
  • Once the liquid has mostly disappeared, sprinkle with cheese, take off heat and cover with lid so cheese can melt.

3 cups whole wheat penne or 3 cups whole wheat ziti (6 oz. dried)
1 cup fat-free ricotta cheese
1/2 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 425*.
  • Spray 7x11 baking dish with cooking spray.
  • Blend together onions, tomatos, taco mix and black beans.
  • You can use the food processor if you prefer a smooth.
  • sauce.
  • Spread 1 cup of tomato mixture on bottom of pan.
  • Add cooked pasta.
  • Dot with ricotta cheese and then spread ricotta over pasta mixture.
  • Stir ground beef into remaining tomato mixture.
  • Spoon over ricotta.
  • Sprinkle with cheese.
  • Bake 25-30 minute.

Street corn just became a potluck favorite in this simple pasta salad.

1 lb uncooked pasta
1 tablespoon butter
3 ears fresh sweet corn, husks removed
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro leaves
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (4.5 oz) Old El Paso™ chopped green chiles
1/4 cup crumbled queso fresco cheese

Steps:

  • Cook and drain pasta as directed on package. Cool 10 minutes.
  • While pasta is boiling, heat 10-inch skillet over high heat. Add butter and corn to skillet. Char the corn on each side, about 10 minutes total. Cut corn off cobs; place in large bowl.
  • Add cooked pasta to bowl. Top with remaining ingredients. Stir well to combine.
  • Refrigerate about 4 hours or until chilled before serving.

MEXICAN CHICKEN LASAGNA SALAD (NO PASTA)

My family loves this recipe. Which I tweaked from a friend of mine she got her recipe from Martha Stewart this is a very easy recipe to follow; and the end result will be amazing. Go ahead and try it you will be making it over and over.

2 large poblano peppers , i used some from a jar
10 small corn tortillas (6-inch)
1/4 c olive oil
1 c yellow onion, chopped- i used a sweet viadalia diced
3 clove garlic, minced, i used 1 tablespoon minced from a jar
2 Tbsp coarse salt- i used sea salt
2 Tbsp chopped fresh oregano, i used 2 teaspoons dried oregano spice
2 tsp finely chopped chipotles in adobo sauce, i just used a dab
28 oz can whole peeled tomatoes, pureed, i used with juice
1 c heavy cream
3 c poached, shredded chicken breast- i used rotisserie chicken breast
8 oz package shredded monterey jack cheese
10 medium radishes, thinly sliced - 1 bunch
1 medium head romaine lettuce, thinly sliced crosswise
2 Tbsp white wine vinegar, i used 3

Steps:

  • 1. Preheat oven to 375^. Spray 9x13-inch baking dish with non stick olive oil.Set aside. --- Char poblanos over an open flame until blackened, 5 minutes. Transfer to a medium bowl, cover with plastic, and steam 10 minutes.Then peel skins from poblanos, discard stems and seeds and coarsely chop.(skip this if using from a jar like me)
  • 2. Char tortillas over an open flame, turning once, about 15 seconds on each side, and place under a cloth towel to steam and soften.Chop poblanos coarsely from jar now, if using like me.
  • 3. Place 2 Tablespoon of the olive oil in a medium sauté pan over medium-high heat. When oil shimmers, add the onion and cook until it becomes translucent, about 3 minute. Add garlic, 1 teaspoon of the salt, oregano, and chipotles to pan and cook, 30 seconds. Add pureed tomatoes and simmer, stirring occasionally, until sauce thickens slightly, 6 minutes.
  • 4. Spread 1 cup of tomato sauce mixture in the bottom of the prepared pan. Layer 5 of the tortillas over sauce and cover them with 1/2 the remaining sauce, 1/2 the pablanos, 1/2 the cream, 1/2 the chicken, and 1/2 the cheese. Repeat with a second layer in same order.
  • 5. Cover dish with foil and bake 30 minutes. Uncover and bake until bubbly and golden brown on top about 15 more minutes.
  • 6. In a large bowl, combine radishes, lettuce, vinegar and remaining salt. Toss to combine and serve on top of each lasagna serving. This is SO GOOD!

MEXICAN-STYLE PESTO WITH RICE OR WHOLE GRAIN PASTA



Mexican-Style Pesto With Rice or Whole Grain Pasta image

About 1/3 cup Parmigiano and Herb-Fortified Stock, recipe follows
3 Fresno chile peppers
1/4 cup pistachio nuts or sliced almonds
1 cup fresh cilantro leaves or fresh flat-leaf parsley, packed
1 cup arugula or other spicy greens, packed
A couple sprigs fresh marjoram or oregano, leaves picked
2 cloves garlic, grated or finely chopped
1 teaspoon cumin, 1/3 palmful
Juice of 1 lime
Salt and freshly ground black pepper
About 1/4 cup extra-virgin olive oil
1 pound rice flour, whole grain or whole wheat spaghetti
Grated Manchego cheese, for garnish
1 large rind trimmed from a hunk of Parmigiano-Reggiano cheese or a few small pieces rind perhaps saved-up
Herb bundle of several sprigs each fresh thyme, parsley and rosemary, tied
1 onion, quartered
2 ribs celery, sliced on angle
2 carrots, sliced on angle
Peeled rind of 1 lemon
2 fresh bay leaves
4 cups chicken stock
12 cups (3 quarts) water

Steps:

  • Set aside or prepare the stock.
  • Char and blister the chile peppers by placing over a burner, an open flame or under a broiler, and turning until black. Place the charred peppers in a small bowl and cover until cool enough to handle. Peel and seed the peppers and add them to a food processor. Meanwhile, lightly toast nuts and add to the processor bowl. Add the cilantro, spicy greens, marjoram, garlic, cumin, lime juice, a splash of stock, salt, and pepper, then pour in about 1/4 cup extra-virgin olive oil and pulse the processor to form the pesto sauce. Place in a container, cover, and store in the refrigerator for a make-ahead meal.
  • To serve, place the pesto in the bottom of a large serving bowl. Heat a large pot of water to a boil for pasta, salt the water and cook pasta to al dente. Just before draining, add a ladle of starchy cooking water to the pesto, drain the pasta and add the hot pasta to the serving bowl and toss 1 to 2 minutes, serve immediately with grated Manchego on top.
  • Place the cheese rind, herb bundle, onion, celery, carrots, lemon rind, bay leaves, chicken stock, and water into a pot and bring to a bubble, then reduce the heat to a simmer. Simmer at least 1 hour, and then remove the rind, herb bundle, and vegetables with a slotted spoon or strainer.
