JALAPENO HUSHPUPPIES

Number Of Ingredients 9

1 1/2 quarts peanut oil, for frying
1 1/2 cups self-rising cornmeal
1 cup self-rising flour
1/2 cup chopped onion
1 (7-ounce) can diced jalapeno peppers, drained or 3/4 cup fresh jalapenos, seeded and finely diced
1 (15-ounce) can creamed corn
2 large eggs, lightly beaten
Salt and freshly ground black pepper
Paula Deen's Sweet and Spicy Chili Sauce, for dipping, optional

Steps:

  • Heat the oil to 350 degrees F. in a deep-fryer or Dutch oven.
  • In a 1-quart mixing bowl, stir the cornmeal, flour, onion, jalapeno, corn, and eggs, until blended. Allow to stand 5 minutes.
  • Drop the batter by teaspoonfuls into the hot oil. Don't overcrowd; leave room for the hushpuppies to be turned. Cook the hushpuppies until golden brown, about 3 minutes. Remove from the oil with a slotted spoon and drain on paper towels. Keep the cooked hushpuppies warm in an oven while cooking the remaining batter. Lightly sprinkle with salt and pepper, to taste, and transfer them to a serving dish. Serve with Paula Deen's Sweet and Spicy Chili Sauce, if desired.

1/2 cup self rising flour
1 egg
1/2 cup milk
1/2 cup minced onion
1 fresh jalapeno, minced
1/4 teaspoon crushed red chile
1/8 teaspoon cumin (optional) or 1/8 teaspoon dried cilantro (optional)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Mix all and fry by teaspoons or tablespoon (depending how large you like them) in oil till golden brown; drain on paper towel.

My sister made these on New Year's Eve. Everyone loved them. I got her recipe and tweaked it a little to my liking. Hope you like it, too.

3/4 cup(s) yellow cornmeal
1/2 cup(s) all purpose flour
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/8 teaspoon(s) cayenne pepper, powdered ( can also use red pepper flakes, if you prefer)
8 ounce(s) pepper jack cheese, shredded
1 can(s) choppped green chiles, mild, drained
2 tablespoon(s) red onion, minced
1 - egg
1/2 cup(s) milk
- vegetable oil, for frying

Steps:

  • Combine first 8 ingredients in a large bowl; make a well in center of mixture.
  • Combine egg and milk.
  • Add to dry ingredients, stirring just until moistened.
  • In a dutch oven, pour about 3 inches of oil. Heat to 375F.
  • Carefully drop batter by rounded tablespoonsful into hot oil.
  • Fry a few at a time 3 to 4 minutes or until golden brown, turning once.
  • Drain on paper towels.
  • Serve while hot with any dip or sauce you prefer.

SPICY HUSH PUPPIES

These spicy hush puppies make a wonderful side dish to fish. They taste best when served warm.

2 cups cornmeal
1/2 cup pancake mix
2-1/2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup buttermilk
2 tablespoons canola oil
3 jalapeno peppers, seeded and finely chopped
1/2 cup finely chopped onion
1/8 to 1/4 teaspoon hot pepper sauce
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, pancake mix, sugar, baking powder and salt. In another bowl, beat the egg, buttermilk, oil, jalapenos, onion and pepper sauce. Stir into dry ingredients just until combined., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls into oil. Fry for 3-4 minutes or until golden brown. Drain on paper towels. Serve warm.

2 eggs, beaten
½ cup white sugar
1 large onion, diced
1 cup self-rising flour
1 cup self-rising cornmeal
1 quart oil for frying

Steps:

  • In a medium bowl, mix together eggs, sugar, and onion. Blend in flour and cornmeal.
  • Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.
