This is very easy to make. It doesn't take much time and anyone who likes tacos will love this dish.

2 lbs hamburger
1 medium onion
2 (1 1/4 ounce) packages taco seasoning mix
2 cups water
1 (6 ounce) can tomato paste
12 -16 ounces shredded cheddar cheese
1 (8 ounce) bag taco chips (crushed)

Steps:

  • Brown hamburger with onion; drain.
  • Add seasonings, water and paste; simmer uncovered 10 minutes.
  • Place meat mixture in a 9x13-inch pan.
  • Cover with cheese and top with crushed taco chips.
  • Bake at 350° for 25-30 minutes.
  • We garnish with tomatoes, lettuce, taco sauce sour cream, etc. (but is also very good without).

A guy at the pool was talking about his wonderful Mexican rice recipe, I eavesdropped and came up with this one-dish meal! You can omit the ground turkey to make this more of a side dish. Or use beef, or use chicken, or...

1 Tbsp olive oil
1 medium onion, diced
2 clove garlic, minced
1 medium red pepper, dices
1 lb lean ground turkey
1 medium zucchini, diced
1 c corn, frozen, canned or fresh
1 can(s) 14 oz, diced tomatoes, including juice
1 1/2 c water
1 c rice, raw
1 little foil envelope goya sazon, if available
2 tsp chili powder
1 Tbsp cumin
salt and pepper, to taste
1 c shredded mexican cheese, or favorite
1/4 c fresh chopped cilantro, for garnish
avocado, diced, for garnish

Steps:

  • 1. Heat oil in large skillet or dutch oven. Sauté onion until it starts to soften, add red pepper, garlic and cook for another minute. Add ground turkey, breaking it up with wooden spoon while browning. Continue to stir until turkey is no longer pink. About 5 minutes.
  • 2. Stir in zucchini and corn stirring until warmed, about 2 minutes.
  • 3. Add tomatoes, rice, seasonings and water. Bring to boil, cover and simmer until water is absorbed, about 15 -18 minutes.
  • 4. Stir in cheese until melted, about 1-2 minutes. (On my electric stove, I just turn the heat off, cover and let sit for a couple minutes to melt the cheese)
  • 5. Serve, garnish with cilantro and/or avocado, if desired.

MEXICAN CHICKEN AND RICE HOT DISH

Not too spicy and so delicious!It is not to hard to make, either.

2 cup(s) cheddar cheese, shredded
2 can(s) diced tomatoes with green chiles (do not drain)
1 - medium onion, chopped
2 cup(s) uncooked rice
2 package(s) taco seasonings
3 cup(s) chicken, cooked and cubed
1 can(s) 14 oz. chicken broth
2 cup(s) monterey jack cheese or mozarella, shredded

Steps:

  • Spray a 9 x 13 baking pan with cooking spray. Set aside.
  • In a bowl mix together tomatoes with green chiles, cheddar, onion, uncooked rice, taco seasoning, chicken, and chicken broth.
  • Put in baking pan and spread out evenly.
  • Sprinkle with monterey jack or mozarella.
  • Cover with aluminum foil.
  • Bake 350 at about 35- 45 minutes or until the cheese on top is completely melted and rice is not hard.
  • I serve this with sour cream on top and corn bread on the side.
