2-1/2 cups rotini pasta, uncooked
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. TACO BELL® Taco Seasoning Mix
1 cup grape tomatoes, cut in half
1 cup cooked fresh corn kernels
2 green onions, sliced
1/2 avocado, chopped
1-1/4 cups KRAFT Cheddar & Asadero Cheese Expertly Paired for Tacos, divided

Steps:

  • Cook pasta as directed on package, omitting salt. Drain pasta; rinse with cold water. Place in large bowl.
  • Mix sour cream and taco seasoning mix until blended. Add to pasta; stir until pasta is evenly coated with sour cream mixture.
  • Add tomatoes, corn, onions, avocados and 1 cup cheese; mix lightly.
  • Top with remaining cheese.

Fiesta Pasta Salad is a Mexican pasta salad loaded with corn, black beans, tomatoes, jalapeño, cilantro, and a fresh lime vinaigrette for a zesty, flavorful, summer side dish!

1/2 cup extra-virgin olive oil (or canola oil)
2/3 cup freshly squeezed lime juice
3 tablespoons red wine vinegar
2 cloves garlic (finely minced)
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
8 ounces corkscrew pasta (cooked in salted water according to package directions & drained)
2 (15-ounce) cans black beans (drained & rinsed)
16 ounces frozen corn
16 ounces cherry or grape tomatoes (quartered (OR about 2 extra-large tomatoes, seeded & chopped))
2 fresh jalapeños (seeded, all membranes removed, & finely diced, optional)
1/2 cup fresh cilantro leaves (chopped, plus additional for garnish)

Steps:

  • Make the dressing by whisking all of the ingredients together in a medium bowl until thoroughly incorporated, or shaking them in a jar with a tight-fitting lid. Set aside.
  • Place the cooked pasta and the rinsed black beans in a very large bowl. Thaw the corn by placing it in a colander and running it under warm water; drain well and add to bowl. Add the tomatoes, jalapeños, and cilantro to the bowl, and pour about two-thirds of the dressing over top. Gently mix all of the ingredients with a large spoon until well combined. Refrigerate for several hours to allow the flavors to blend. Just before serving, stir in the remainder of the dressing and garnish with additional cilantro, if desired.

1 lb fusilli (uncooked)
1 1/2 tablespoons olive oil
4 large tomatoes, seeded and diced
3 cups corn kernels (fresh or frozen, thawed)
3 large carrots, thinly sliced on diagonal, slices cut lengthwise into thin strips
1/2 large red onion, chopped
1/2 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons fresh lime juice
2 jalapeno peppers, seeded and minced
1 1/4 teaspoons chili powder
1 1/4 teaspoons ground cumin
1/2 cup fresh cilantro, chopped
salt & pepper

Steps:

  • Cook fusilli pasta according to package directions, until just tender but firm to the bite.
  • Drain pasta and rinse with cold water to cool.
  • Transfer drained pasta to a large bowl.
  • Add 1 1/2 Tablespoons olive oil and mix thoroughly to coat.
  • Add diced tomatoes, corn kernels, carrot strips and chopped onions; toss well.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, and fresh lime juice.
  • Mix in minced jalapenos, chili powder, ground cumin and chopped cilantro.
  • Add dressing to pasta mixture and mix well to blend.
  • Season to taste with salt and pepper.
  • Chill at least 1 hour before serving.
