2 (8.5 ounce) packages cornbread mix (such as Jiffy®)
1 ½ cups milk
2 large eggs
1 pound ground beef
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
2 (10 ounce) cans diced tomatoes with green chile peppers, divided
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon red pepper flakes
½ cup frozen corn
1 (14 ounce) can refried beans
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix cornbread mix, milk, and eggs together in a bowl. Pour into a lightly greased, nonstick oven-proof skillet.
  • Bake in the preheated oven until center is set, about 15 minutes.
  • Meanwhile, cook and stir ground beef in a skillet until hot and crumbly, 5 to 7 minutes. Add onion, bell pepper, and garlic; saute until onion is translucent. Add 1 can of tomatoes, chili powder, cumin, oregano, and red pepper flakes. Stir in frozen corn.
  • Mix refried beans and remaining can of tomatoes in a separate bowl. Spread over the baked cornbread. Top with the beef mixture and cover with Cheddar cheese.
  • Return to the oven until cheese is melted, about 5 minutes.

Number Of Ingredients 21

2 boxes corn muffin mix, 8 1/2 ounces each (recommended: Jiffy)
2 eggs
4 tablespoons melted butter
1 1/2 cups milk
1 cup frozen corn kernels
Extra-virgin olive oil or, vegetable oil, for drizzling
2 tablespoons extra-virgin or vegetable oil, 2 turns of the pan
1 pound ground beef
1 small onion, finely chopped
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons cayenne sauce
Salt
2 1/2 cups (10-ounce sack from dairy aisle) shredded Cheddar or jack cheese
1/2 red bell pepper, chopped
1 small can, 2 1/4 ounces sliced chillies or jalapenos, drained
2 scallions, chopped
2 small vine ripe tomatoes, seeded and diced
2 tablespoons drained sliced green olives (salad olives)
1 to 2 tablespoons chopped cilantro leaves, optional garnish
Mild to medium taco sauce to pass at table, 1 cup

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together 2 packages muffin mix with 2 eggs, 4 tablespoons melted butter (melt in microwave 30 seconds), 1 1/2 cups milk and frozen corn kernels. Wipe a nonstick skillet with a little extra or vegetable oil and pour in the muffin mix. Use a large skillet, 10 to 12 inch. Choose a pan with oven safe handle or, double-wrap handle with foil to protect it in the oven. Place pan in oven and bake 12 to 15 minutes in center of the oven until light golden in color.
  • Brown the meat over medium high heat in a second skillet in extra or vegetable oil, 2 turns of the pan. Add onions and spices and cook meat 5 minutes more.
  • Remove cornbread from oven and top with meat, cheese, and veggies. Add pan back to oven and cook 5 minutes more to melt cheese. Garnish with cilantro, optional. Cut into 8 wedges and serve the deep dish pan pizza from the skillet. Pass taco sauce at the table to sprinkle on top.

1 (16 ounce) can refried beans (refritos)
1 teaspoon ground black pepper
1 teaspoon ground paprika
1 pinch salt
1 tablespoon vegetable oil
1 green bell pepper, sliced, or more to taste
1 red bell pepper, sliced
½ onion, chopped
½ pound ground beef
½ pound Mexican chorizo, crumbled
1 (7 ounce) can chipotle peppers in adobo sauce
1 tablespoon chili powder, divided
2 teaspoons ground cumin, divided
3 (10 inch) flour tortillas
1 cup shredded sharp Cheddar cheese, divided
1 cup shredded Monterey Jack cheese, divided
¼ cup salsa
¼ cup guacamole
¼ cup sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 3-inch deep cast iron skillet.
  • Heat refried beans in a small pot until warmed through, about 5 minutes. Stir in pepper, paprika, and salt. Remove from heat.
  • Heat oil in a large skillet over medium heat. Add green bell pepper, red bell pepper, and onion; cook and stir until soft, 5 to 10 minutes. Transfer to a plate.
  • Combine ground beef and chorizo in the skillet; cook and stir until browned, about 5 minutes. Carefully drain excess grease. Stir in chipotle peppers with sauce, 1 1/2 teaspoon chili powder, and 1 teaspoon cumin. Simmer until flavors combine, 5 to 10 minutes. Remove from heat.
  • Place 1 tortilla in the bottom of the prepared skillet. Layer some of the refried beans, bell pepper mixture, ground beef mixture, 1/3 cup Cheddar cheese, and 1/3 cup Monterey Jack cheese on top. Repeat layers twice more, ending with remaining Cheddar cheese and Monterey Jack cheese.
  • Bake in the preheated oven until cheese starts to brown, 30 to 45 minutes. Remove from oven and let cool before slicing, 2 to 5 minutes. Garnish with salsa, guacamole, and sour cream.

2 (8 1/2 ounce) boxes corn muffin mix (Jiffy)
2 eggs
4 tablespoons butter (melted)
1 1/2 cups milk
1 cup frozen corn
extra virgin olive oil
2 tablespoons extra virgin olive oil
1 lb ground beef
1 small onion, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon cayenne pepper sauce
2 1/2 cups monterey jack cheese
1/2 red bell pepper
2 tablespoons green olives, sliced
1 cup salsa
2 tomatoes, chopped and seeded
2 scallions, chopped

Steps:

  • Mix together 2 packages muffin mix with 2 eggs, 4 T melted butter 1 1/2 cup milk and corn. Wipe non stick skillet with a little olived oil and pour in muffin mix. (I used 9 by 13 pan) Place pan in oven and bake at 400 degrees for 12 to 15 minutes or until browned. While the cornbread is cooking brown the beef in a little olive oil. Add onions and spices and cook meat for 5 minutes longer. Remove cornbread from oven and top with meat, cheese and veggies. Add pan back to oven and cook 5 more minutes or till cheese is melted. Cut and serve with salsa.

2 boxes - corn muffin mix,such as jiffy brand
2 - egss
4 Tbs - melted butter (1/2 sticks)
1-1/2 cups - whole milk.then you put oil in the bottom of the glass dish before you put the corn muffin mix in.
1 cup - frozen corn
TOPPING FOR THE MEXICAN PIZZA
1 Tbs - extra-virgin oil or vegetable(1 turn of the pan)
1 pound - ground beef
1 small - yellow onion,finely chopped
1 - pack of taco seasoning.
2-1/2 cups - shredded cheddar or jack cheese
1/2 - red bell pepper
1 - small can of chiles or jalapenos
2 - small vine-ripened tomatoes,seeded and diced
2 Tbs - chopped fresh cilantro.
1 cup - mild to medium taco sauce to pass at table
1 cup - sour cream
2 Tbs - drained sliced black olives

Steps:

  • Preheat oven to 400 F.
  • Mix together 2packages muffin mix with eggs,melted butter,and milk.then,stir in the corn.spray the bottom of the glass pan with coking spray,then poor in the muffin mix.Place glass pan in the oven and bake in the center of the oven until cornbread is light golden in color,12 to 15 min

2 1/2 c. Bisquick
1/2 c. yellow cornmeal
3/4 c. water
1 lb. lean ground beef
1/2 c. chopped onion
2 beef bouillon cubes optional
1 (8 oz.) can tomato sauce or can of diced tomatoes drained
1 tsp. chili power
1 (16 oz.) can refried beans with chilies
1 1/2 c. (6 oz.) shredded cheese
Chopped tomato
Sliced olives
sour cream
avocado

Steps:

  • Preheat oven 425 degrees. In medium bowl combine Bisquick, cornmeal and water; mix well. With floured hands, pat dough on bottom and up sides of greased 15x10 jelly roll pan. Bake 10 minutes; remove from oven. Brown meat with onion, bouillon and tomato sauce. Add chili powder. Cook until bouillon is dissolved. Spread beans evenly over baked crust. Spoon meat mixture evenly over beans. Top with cheese. Bake 10 minutes. Garnish with tomato, lettuce, olives and chives. (Makes 8-10 servings.)

1 can(s) corn
1 can(s) black beans, canned
2 c shredded mexican cheese
1 c salsa, chunky
8 tortillas, flour

Steps:

  • 1. oil the bottom of a round pan, (pie plate or ceramic cake plate
  • 2. layer enough tortillas on the bottom to form the bottom crust, you may need to rip some so it is not too doughy in the middle
  • 3. drain the beans, the corn and pour in a bowl
  • 4. add about 3/4 of the cheese to the mixture, and the salsa, I typically "drain the salsa" also or it gets very watery
  • 5. pour the mixture of beans, corn chees, and salsa in the pan
  • 6. layer tortillas over the top and then sprinkle remaining cheese over the tortillas
  • 7. bake at 400 for ~ 20 min.s covered, uncover and bake for an additional 10 min.s to brown the cheese on top
