1 tablespoon canola oil
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cups frozen corn
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (4 ounces) chopped green chilies
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet, brown chicken in oil. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low until chicken is no longer pink, 5-6 hours.

I started with a copycat recipe, added more of my favorite (garlic salt) ingredient, and then made this for my son, as well as for my co-worker, who had just had a baby. Everyone's comment: "Wow! That was really tender, tasty chicken!" (I didn't tell them how incredibly easy it was!) I served it with my Mexican rice (another favorite)and black beans.

4 boneless skinless chicken breasts
1 cup margarita mix
1/4 cup tequila
1 tablespoon minced garlic
garlic salt, to taste
pepper, to taste
1 cup white rice
2 cups chicken broth
1/4 cup salsa
cumin, to taste

1 tablespoon vegetable oil

Steps:

  • Marinate chicken in margarita mix, tequila, and garlic in refrigerator for several hours, or overnight. (I soaked it overnight, and it was really flavorful.).
  • Remove chicken from marinade, and sprinkle with garlic salt and pepper.
  • Preheat George Foreman or gas grill. Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Serve with Mexican rice and black beans.
  • Mexican Rice:.
  • Cook rice in 1 tablespoon oil, until lightly browned.
  • Add chicken broth, salsa, cumin, and garlic salt; cover pan and simmer for about 25 minutes, or until rice is tender.

1 lb chicken breast fillet (4 fillets)
1 tablespoon olive oil
10 cups water
2 cups chicken stock
1/2 cup tomato sauce
1 potato, peeled & chopped
1 small onion, diced
1 cup frozen corn
1/2 carrot, sliced
1 stalk celery, diced
1 cup canned diced tomato
1 (15 ounce) can red kidney beans, plus liquid
1/4 cup diced canned pimiento
1 jalapeno, diced
1/4 cup chopped Italian parsley
1 garlic clove, minced
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon salt
1 dash cayenne pepper
1 dash basil
1 dash oregano
sour cream
1 pinch chopped Italian parsley

Steps:

  • Sauté the chicken breasts in the olive oil in a large pot over medium/high heat.
  • Cook the chicken on both side until done-- about 7-10 minutes per side.
  • Cool the chicken until it can be handled.
  • Do not rinse the pot.
  • Shred the chicken by hand into bite-sizes pieces and place the pieces back into the pot.
  • Add the remaining ingredients to the pot and turn heat to high.
  • Bring mixture to a boil, then reduce heat and simmer for 4-5 hours.
  • Stir mixture often so that many of the chicken pieces shred into much smaller bits.
  • Chili should reduce substantially to thicken and darken (less orange, more brown) when done.
  • Combine some chopped Italian parsley with sour cream and serve it on the side for topping the chili, if desired.

I was fooling around with basic staples that I have in the house and on a whim, threw this together. It was a HIT! Not quite sure what to name it, but it reminds me of a chili of sort, so I named it Mexican Chicken Chili.

5 boneless skinless chicken breasts (can be frozen)
1 (1 1/4 ounce) packet chicken taco seasoning mix
1 (32 ounce) can petite diced tomatoes
1 (15 ounce) can dark red kidney beans, undrained
1 (15 ounce) can garbanzo beans, undrained
1 (15 ounce) can corn (or use frozen)
1/4 cup butter (sliced)
1 tablespoon salt
diced raw white onion (optional)
1 lime, juice of
sour cream (optional)
tortilla chips (optional)

Steps:

  • Place chicken breasts in bottom of crock pot.
  • Top with Seasoning Mix, Diced Tomatoes, Kidney Beans, Garbanzo beans and Corn.
  • Slice butter and arrange on top of mixture. Sprinkle salt on top.
  • Cook on High 6 hours.
  • When done, use two forks and shred the chicken in the crock pot.
  • While your shredding, put on a pot of white rice. I usually cook 2 cups of rice to go with mixture. Or, you can serve in warm tortillas, eat like a soup or use tortilla "scoop" chips to eat.
  • Put rice in bowl and serve chicken mixture on top of the rice. Optional and VERY YUMMY toppings would be chopped white onion, sour cream, crumbled tortilla chips and then a nice squeeze of fresh lime juice. Fantastic when served with everything!

12 ounces cooked frozen chicken fingers and/or chicken nuggets, thawed
1/2 cup milk
Two 15.5-ounce cans pinto beans
2 tablespoons vegetable oil
1 tablespoon chili powder
One 16-ounce jar salsa
Kosher salt
4 cups chicken broth
1 large egg, beaten
3 tablespoons cornstarch
1/3 cup sour cream
1/4 cup fresh cilantro leaves

Steps:

  • Using your hands or the back of a paring knife, scrape off half of the breading from the chicken fingers. Discard the excess breading. Put the chicken fingers into a mixing bowl with the milk and use your hands to break up the chicken into smaller pieces.
  • Place 1 can of the pinto beans along with its liquid into the bowl of a food processor. Blend until completely smooth. Transfer to a bowl and reserve. Do not wash the food processor; you will be using it again to make the chicken dumplings.
  • Heat the oil in a Dutch oven over medium heat. Add the chili powder and cook until fragrant, about 2 minutes, stirring constantly. Stir in the salsa and cook for 2 minutes. Add the chicken broth and blended pinto beans. Stir to combine. Bring to a boil, and then reduce to a simmer. Simmer until slightly thickened, about 10 minutes.
  • Meanwhile, make the chicken finger dumplings. Add the chicken fingers and egg to the used food processor bowl. Blend until it resembles a chunky puree (similar to tuna fish). Transfer the puree to a mixing bowl and stir in the cornstarch.
  • Add the remaining can of beans with their liquid to the stew. Then drop rounded teaspoons of the dumpling batter into the stew, making about 24 dumplings. Cover with a lid and cook until the dumplings are cooked through, 5 to 7 minutes.
  • To serve, divide the stew among 6 bowls. Top with a dollop of sour cream and a sprinkle of cilantro leaves.

1 large onion, chopped

1 1/4 cups all-purpose flour
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup butter, cut into 1-inch pieces
3 tablespoons ice water
2 dashes hot pepper sauce
2 tablespoons olive oil

2 cups cooked black beans, rinsed and drained, divided
2 tablespoons sour cream

Steps:

  • Cut chicken into bite-size pieces and refrigerate while preparing tart crust.
  • Preheat oven to 350ºF.
  • Combine flour, cumin, chili powder, paprika, red pepper, garlic powder and salt in food processor bowl. Add butter and pulse until mixture resembles coarse meal, or use pastry blender to cut in butter. Add ice water and hot pepper sauce and pulse or stir with a fork until mixture forms a ball.
  • Press dough onto bottom and partially up sides of 10-inch tart pan with removable bottom.
  • Line tart shell with foil and fill with raw rice or dried beans to weight the shell.
  • Bake in center of preheated oven 10 minutes. Remove from oven, remove foil with rice, and return tart shell to oven to bake an additional 10 to 15 minutes, or until golden. Cool on rack while making filling.
  • Heat olive oil in large skillet, add chicken and sauté until done. Stir in cumin, chili powder and salt; set aside.
  • Puree 1 cup of the black beans and 2 tablespoons sour cream in food processor or blender. Spread mixture over bottom of cooled crust.
  • Top with half of the cooked chicken, one cup of the hot pepper cheese, corn, red bell pepper, green onions, remaining cup black beans, remaining chicken, and remaining cup hot pepper cheese.
  • Sprinkle top of tart with cheddar cheese and bake in preheated oven 20 to 30 minutes or until heated throughout and cheese is melted.
  • Let tart cool 15 minutes.
  • To serve, remove tart from pan and place on serving dish. Serve warm or at room temperature with sour cream, if desired.

1/4 c chopped onion

1/2 tsp salt and pepper
1 c chicken broth (sometimes i add more at the end to make it soupier)
1 rotisserie chicken, precooked, deboned
1/2-1 Tbsp southwest seasoning mix (amount depends on how much heat you want))
1 can(s) black beans, drained and rinsed (15 oz)
3 Tbsp canned chopped green chilies
1 c frozen corn
OPTIONAL
(topping) shredded cheese, like pepper jack cheese
(topping) thick and chunky salsa
(topping) sour cream
(topping) chopped avocado

Steps:

  • 1. Melt butter over medium heat. Add onion and cook until tender. Add flour, salt and pepper; stir until well blended. Gradually stir in chicken broth, until thickened. Stir in chicken, beans, green chiles, and corn. Simmer about 5 minutes until heated through.

1 can(s) 15 oz pinto beans, drained and washed
2 can(s) 14 1/2 oz chicken broth
1 c frozen corn
1 jar(s) 16 oz salsa
1 can(s) 8 oz tomato sauce ( i double this in mine)
3 c shredded cooked chicken
1 tsp garlic salt
2 tsp chili powder
1 tsp ground cumin
1 tsp cilantro, dried
1 c shredded sharp cheese

Steps:

  • 1. Dump everything in a large dutch oven pan. Bring to a boil and reduce to simmer for 30 min. (1 hour if placed in the oven on 375)
  • 2. The 4 hour option on in a crock pot works well, but add zucchini at the half way mark.
  • 3. Other options, I have added roasted red peppers and this was great! For more heat I have added pepper flakes.

2 cups cooked chicken
12 corn tortillas
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup milk
1 lb cheddar cheese, grated
1 can chopped green chili

Steps:

  • Cut tortillas in strips.
  • Mix together soups, milk& chilies.
  • Make layers in a large baking dish, starting with the tortillas at the bottom, then chicken, then soups and ending with the cheese.
  • Bake at 300 degrees for 1 hour.

1 pound boneless, skinless chicken breasts
1 medium-sized yellow onion, chopped (about one cup)
1 pepper (any color), chopped (about one cup)
1 cup frozen corn
2 tablespoons and 1.5 teaspoons of homemade taco seasoning or 1 package of store-bought taco seasoning
10.75 oz can of condensed tomato soup
1/4 pound cheese (we use cheddar or pepper jack), shredded (about one cup)
1 box of Jiffy corn muffin mix + the necessary ingredients listed on the box (Jiffy calls for one egg and 1/3 cup milk)

Steps:

  • Add chicken, onion, peppers, corn, seasoning, and tomato soup to slow cooker. Cover with lid and cook on "low" setting for 4-6 hours, until chicken is cooked through and tender. Shred chicken with fork. Cover shredded chicken chili with cheese and assembled corn muffin batter. Add lid and cook on "high" setting for 60 minutes or until cornbread topping is cooked through.
