MEXICAN BROWN RICE SALAD

2 ears corn, husked
Olive oil, for brushing
1 cup cooked brown rice
2 (15-ounce) cans pinto beans, drained and rinsed
1 red bell pepper, seeded and finely chopped
1 bunch green onions, sliced
1 small jalapeno, seeds and rib removed, diced
3 tablespoons olive oil
Juice of 1 lime
1 teaspoon cumin
1 clove garlic, finely chopped
3 tablespoons chopped fresh cilantro
Kosher salt and freshly ground black pepper
1 cup crumbled queso fresco or feta cheese

Steps:

  • Preheat the grill to medium-high heat.
  • Brush corn with olive oil, and season with salt and pepper. Grill for 5 to 6 minutes, rotating on all sides, until the corn has some nice charred spots. Let cool and remove corn kernels from the cob.
  • Add corn, brown rice, beans, red bell pepper, jalapeno, and green onions to a large bowl.
  • In a smaller bowl, whisk together the olive oil, lime juice, cumin, garlic, cilantro, and salt and pepper. Fold dressing into the veggies and top with the crumbled cheese and toss.

1 1/2 tablespoons canola oil
1 onion, diced
3 garlic cloves, sliced
2 -3 jalapeno peppers, seeded and chopped
1 1/2 cups long grain brown rice
2 3/4 cups water
3/4 cup crushed canned tomato
1 teaspoon dried ancho chile powder or 1 teaspoon chili powder
1 1/2 teaspoons fine sea salt

Steps:

  • Preheat oven to 350 degrees. In an ovenproof saucepan or Dutch oven, heat oil on medium-high heat. Add onion, garlic, and jalapeños and cook, stirring, 4 minutes. Add rice and cook, stirring, 1 minute.
  • Add remaining ingredients. Bring to a boil, stir, and cover. Place in oven and bake until rice is tender, about 50 minutes. Fluff with fork before serving.

Delicious as a side dish to Mexican fare or as a vegetarian taco filling. Easy, cheap and healthy with tons of flavor. My extremely picky boyfriend not only ate this but actually complimented me on it! You may use fresh onion if you like but picky bf doesn't like it so I use the powder. This is also nice garnished with fresh cilantro if you have it.

1 tablespoon butter or 1 tablespoon oil
1 tablespoon lime juice
1/2 cup brown rice
1 teaspoon onion powder
1 (8 ounce) can tomato sauce
1 cup water
2 tablespoons pickled jalapeno peppers, minced
1 teaspoon hot sauce
1 garlic clove, minced
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1/2 bouillon cube

Steps:

  • Heat butter or oil with lime juice in a skillet over medium-high heat.
  • Add the rice and stir until the rice gets heated.
  • Add remaining ingredients, stir well, reduce heat and cover.
  • Cook for about 45 minutes or until the liquid is absorbed and rice is fully cooked.

1 (13 ounce) can chicken broth
1 large onion, finely chopped
1 cup dried lentils
1 cup water
1/2 cup brown rice or 1/2 cup basmati rice
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/8 teaspoon cayenne pepper
1/4 cup chopped fresh cilantro (optional)

Steps:

  • Combine all ingredients, including canned tomato liquid, in stockpot.
  • Bring to boil.
  • Redcue heat to medium and cover.
  • Simmer 55 to 60 minutes or until liquid is absorbed and rice is tender, stirring occasionally.
  • Serve with cilantro sprinkled on top.

4 cups cooked brown rice
1 1/4 cups salsa
1 teaspoon ground cumin
15 ounces canned refried beans
10 ounces frozen corn kernels, thawed
4 ounces canned green chili peppers, mild, diced
1 tablespoon chili powder
10 ounces frozen chopped spinach or 10 ounces collard greens, thawed and set to drain in a strainer over a bowl
3/4 cup low-fat shredded cheddar cheese, divided
2 tablespoons cilantro, fresh, chopped (optional, for garnish)

Steps:

  • Preheat oven to 375ºF. Coat a 2-quart rectangular, round or oval baking dish with cooking spray.
  • In a large bowl, combine rice, salsa and cumin. Spoon 2 cups of rice mixture into prepared baking dish and spread out to evenly cover bottom of dish.
  • In another large bowl, combine refried beans, corn, chili peppers and chili power. Using a rubber spatula, scrape bean mixture on top of rice layer and smooth out top.
  • Squeeze out any excess water from spinach or collard greens and then spread on top of bean layer; sprinkle with 6 tablespoons of cheese. Top with remaining rice mixture and smooth out top; sprinkle with remaining cheese.
  • Place casserole on a large rimmed baking sheet to catch any spillage. Bake until heated through and cheese is browned and bubbling, about 30 minutes. Sprinkle with cilantro (if desired), cut into 6 pieces and serve.

1 cup brown rice, uncooked
2 cups vegetable broth (or water)
2 carrots, coarsely grated
1 large tomatoes, diced (cored if you prefer)
1 (15 ounce) can kidney beans, drained and rinsed
1 tablespoon jalapeno, diced
1 1/2 teaspoons dried onion, minced
1/4 teaspoon garlic powder
2 teaspoons oil
2 teaspoons apple juice
salt and black pepper
2 tablespoons fresh cilantro or 2 tablespoons parsley, chopped

Steps:

  • Place brown rice in a pot and cover with the 2 cups of broth/water. Bring to a boil and allow to simmer uncovered for 40 minutes or until liquid has evaporated and rice has softened.
  • Meanwhile combine carrots, tomato, kidney beans and jalapenos in a big bowl. Add minced onion, garlic, oil and apple juice. Mix to combine.
  • When rice is ready, drain off any remaining liquid and add rice to veggies. Mix well, season with salt and black pepper to taste. Sprinkle with fresh herbs.

Adapted from a Sunset Magazine special edition, "Sunset Weeknight." The original recipe was for flank steak, but I've changed it a little to use a leaner cut of beef.

1 lb beef beef eye round, trimmed of fat
3 dried ancho chiles, rinsed, stemmed, seeded, and cut into 1 inch pieces
6 tablespoons lime juice
1 tablespoon minced garlic
1/2 teaspoon cayenne
1/2 teaspoon salt (approximately)
2 cups uncooked brown rice
1 tablespoon olive oil
1 lb sweet bell pepper, trimmed, seeded, and cut into thin strips lengthwise (red and yellow)
1 red onion, peeled and cut into thin slivers lengthwise
1/4 cup chopped fresh cilantro leaves (coriander leaves)

Steps:

  • In a blender, cover chilies with 3/4 cup boiling water. Let stand until softened, about 15 minutes.
  • Meanwhile, rinse beef and pat dry. Cut across the grain into 1/8 inch thick slices and place in a non-reactive bowl (such as glass).
  • Add lime juice, garlic, cayenne, and 1/2 tsp salt to soaked chilies. Blend until smooth. Pour over beef strips, cover, and chill for 30 minutes.
  • Meanwhile, in a 3-4 quart pan over high heat, bring 4 cups water and the rice to a boil. Cover, reduce heat, and simmer until liquid is absorbed and rice is tender to bite, about 45 minutes.
  • After beef has marinated and while rice cooks, heat olive oil in a 10-12 inch skillet over high heat. Lift beef out of marinade with a slotted spoon, reserving marinade, and add to pan. Stir-fry until no longer pink, about 3 minutes. Transfer to a bowl.
  • Add peppers and onions to pan. Stir-fry until limip, about 5-6 minutes. Return beef to pan along with reserved marinade. Bring to a boil; cook, stirring 1-2 times, for 1 minute.
  • Spoon rice into four wide, shallow bowls. Top with equal portions of beef mixture and sauce. Sprinkle with cilantro, and season to taste with salt.

Serve simple, make-ahead dishes and be sure to tell everyone it's BYOB. This smoky, savory chili gets more delicious the longer it cooks; the bright and zesty Mexican tabbouleh makes a perfect side dish, but it's even better paired with the chili.

Olive oil, for browning the meat
2 pounds chuck or sirloin, cut into 1-inch cubes
1 pound ground sirloin
1 tablespoon ground cumin
Kosher salt and freshly ground black pepper
One 12-ounce bottle pale ale or IPA
One 28-ounce can whole tomatoes
One 16-ounce can refried beans
2 chipotle peppers in adobo sauce, chopped, plus more sauce from the can
3 cloves garlic, put through a press or minced
Mexican Brown Rice Tabbouleh, recipe follows
2 cups brown rice
Juice of 2 limes
1/2 small red onion, finely chopped
2 tablespoons olive oil
1 garlic clove, put through a press or minced
Kosher salt and freshly ground black pepper
1 medium red bell pepper, diced
1/2 cup chopped cilantro
2 tablespoons chopped mint
Lime wedges, for serving

Steps:

  • Heat a small amount of olive oil in a large heavy-bottom pot over high heat. Working in 2 batches, sear the cubed meat, stirring occasionally, until nicely browned. Transfer the meat to a large bowl and add more oil to the pan between batches if needed.
  • Add a little more oil to the pot. Sear the ground sirloin over high heat, stirring and breaking up chunks with a wooden spoon, until browned. Transfer to the bowl with the cubed meat.
  • Return all the meat to the pot and add the cumin and salt and pepper. Stir for a few seconds until fragrant. Add the ale, tomatoes, refried beans, chipotle peppers and garlic. Season with another few pinches of salt and pepper. Simmer over medium-low heat, uncovered, stirring occasionally, until thickened, at least 1 hour. Keep tasting and seasoning with salt, pepper and more adobo sauce from the chipotles. Serve with Mexican Brown Rice Tabbouleh.
  • Combine the rice with 4 cups of room-temperature water in a large saucepan and bring to a boil over medium heat. Lower the heat so the water just simmers, cover the pot, and cook until the water is absorbed, about 45 minutes. Remove from the heat and let stand, covered, 10 minutes.
  • Meanwhile, in a small bowl, combine the lime juice, red onion, oil, garlic and some salt and pepper. Add the bell pepper, all but 1 tablespoon of the cilantro, and the mint to the rice; drizzle with the red onion mixture and toss to combine. Add more salt, black pepper and lime juice to taste. Garnish with the reserved 1 tablespoon cilantro. Serve with lime wedges.
