My husband's a vegetarian so I love finding meatless recipes we all like. These burgers are not only easy to make, but they freeze well. We sometimes top them with chipotle mayo for a more smoky flavor. They're good with hot sauce, too. -Ellen Finger, Lancaster, Pennsylvania

1 can (4 ounces) chopped green chiles
1/2 medium onion, cut into wedges
1/2 medium sweet red pepper, chopped
4 garlic cloves, halved
1 can (15 ounces) black beans, rinsed and drained
1 large egg
1 tablespoon chili powder
3/4 teaspoon ground cumin
3/4 cup dry whole wheat bread crumbs
4 whole wheat hamburger buns, split
4 tablespoons reduced-fat sour cream
4 tablespoons salsa

Steps:

  • Preheat oven to 375°. Place chiles, onion, pepper and garlic in a food processor; pulse until finely chopped. Drain and set aside. In a large bowl, mash beans. Add the onion mixture, egg, chili powder, cumin and bread crumbs; mix well., Shape into 4 patties; transfer to a 15x10x1-in. baking pan coated with cooking spray. Refrigerate for 30 minutes. Bake until heated through, 8-10 minutes on each side. Serve on buns with sour cream and salsa.

At our house we love healthy food! The only requirement is that it also has to have taste , as well as being healthy. Who wants to eat healthy, if it tastes like cardboard? If you love mexican food, you are going to like these burgers!! Perfectly seasoned and great for healthy grilling. This recipe was found in an issue of First magazine. Makes 4 burgers.

1 (15 1/2 ounce) can black beans, rinsed and drained
1/4 cup chopped onion
1/4 lb sliced white fresh button mushroom
1/4 cup healthy breadcrumbs
1 tablespoon chopped fresh cilantro
1 chipotle chile in adobo, chopped
1/2 teaspoon cumin
1/2 teaspoon mccormicks McCormick's Montreal Brand steak seasoning
1 tablespoon canola oil
1 cup shredded mexican cheese, we use shredded soy cheese (optional)

Steps:

  • Heat grill or broiler.
  • In skillet cook sliced mushrooms in one tablespoon canola oil for 6 minutes.
  • In bowl, combine cooked mushrooms, black beans,chopped onions,bread crumbs, fresh cilantro,chopped chipotle in adobo, cumin, and Montreal steak seasoning. Form into 4 patties.
  • Place on greased grill or broiler rack.
  • Grill 4 minutes, turning once.
  • Top with 1 cup shredded mexican cheese, divided. ( or 1 cup Shredded soy cheese)and 1/2 cup salsa.
  • Cook one minute. Serve on toasted multi grain.
  • hamburger buns or multi grain bread.

3 tablespoons OLIVE OIL
1/2 cup SCALLIONS THINNLY SLICED
1/3 cup POBLANO CHILI, FINELY CHOPPED
2 cloves CLOVES GARLIC, FINELY CHOPPED
2 cans BLACK BEANS, 15OZ CANS
1/2 cup CILANTRO, FINELY CHOPPED
1/2 cup BREAD CRUMBS
1 l EGG LARGE, LIGHTLY BEATEN
1/2 teaspoon CHILI POWDEWR
1/2 teaspoon CUMIN

Steps:

  • Heat 1 Tbs. of the oil in a 10-inch skillet over medium heat. Add the scallions, poblano, and garlic and cook until beginning to soften, 1 to 2 minutes. Transfer to a food processor. Add the beans and pulse 2 or 3 times to roughly chop. Be careful not to overprocess.
  • Transfer the mixture to a large bowl and gently mix in the cilantro, breadcrumbs, egg, chile powder, cumin, and 3/4 tsp. salt. Shape the mixture into 4 equal 3/4-inch-thick patties. Refrigerate, covered, for at least 30 minutes and up to 4 hours.
  • Heat the remaining 2 Tbs. oil in a large skillet over medium heat. Cook the burgers until nicely browned on both sides, flipping carefully, about 5 minutes total.
