SPICED COCOA NUTS



Spiced Cocoa Nuts image

With a subtle cocoa flavor and the tingly spice of cinnamon and cayenne pepper, these spiced nuts are a holiday favorite!

2 cups pecans
2 cups cashews
2 cups almonds
1/2 cup brown sugar
1/2 cup white sugar
2 tablespoons cocoa powder
1 teaspoon cayenne pepper
2 teaspoons cinnamon
1 teaspoon salt
1 egg white (from an extra large egg)
1 tablespoon water

Steps:

  • Arrange oven racks to the center of the oven. Preheat the oven to 350°. Line two large baking sheets with parchment paper and set aside.
  • In a medium bowl, combine the brown sugar, white sugar, cocoa powder, cayenne pepper, cinnamon and salt. Whisk together to combine, breaking up any lumps in the brown sugar.
  • Add the egg white and water to a large bowl and whisk vigorously until foamy and light. Add the nuts to the egg white mixture and use a large spatula to mix the nuts until they are completely covered in egg white -- but not gloopy. Nuts should be glossy and tacky -- and there shouldn't be any liquid remaining at the bottom of the bowl -- it should all be on the nuts. If there is excess liquid, add more nuts and continue to toss until they are completely coated. Add the spice mixture to the nuts and fold the spice into the nuts until completely coated.
  • Divide the nuts between the two baking sheets and spread evenly into a single layer. Place one pan on the upper rack and the other on the lower rack and bake for 10 minutes. Remove the nuts and stir or flip them. Spread into a single layer and move the baking sheet that was on the top rack to the lower rack and vice versa. Bake for an additional 10 minutes.
  • Cool the nuts on the baking sheets for a few minutes before transferring to a heat proof bowl to finish cooling. They harden and crisp as they cool. Store in an airtight container.

Mexican chile lime peanuts are coated in fresh lime juice, zest, and spices then roasted.

3 cups (375 grams) shelled raw peanuts, unsalted
3 tablespoons fresh lime juice
2 teaspoons lime zest
1 ½ teaspoons ancho chile pepper
1 ½ teaspoons smoked paprika
1 teaspoon mild chili powder
1 teaspoon cumin
½ teaspoon onion powder
2 teaspoons salt

Steps:

  • Preheat oven to 350°F/177°C.
  • To a bowl add all of the ingredients except the nuts. Mix well.
  • Add the nuts to the spice mix, stir to make sure the peanuts are all coated well. Spread the peanuts evenly onto a large baking sheet and roast for 12-15 minutes, stirring halfway through.
  • Remove from the oven, allow to cool to room temperature and serve.

1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
4 cups unsalted mixed nuts, such as walnuts, pecans, hazelnuts, and almonds
4 tablespoons unsalted butter
6 tablespoons brown sugar
1 teaspoon salt
Mix spices and reserve.

Steps:

  • Heat the nuts in a dry skillet and cook, stirring frequently, until they begin to toast, about 4 minutes. Add the butter and cook, stirring, until the nuts begin to darken, about 1 minute. Add the spices, the sugar, 1 tablespoon water, and the salt and cook, stirring, until the sauce thickens and the nuts are glazed, about 5 minutes.
  • Remove the nuts from the heat and transfer to a baking sheet lined with aluminum foil, separating them with a fork. Let the nuts stand until cooled and the sugar has hardened, about 10 minutes. Store in an airtight container.

2 tablespoons of vegetable oil
1 lb of peanuts (the ones with the skins still on)
6 whole dried Arbol peppers
2 thinly sliced garlic cloves (optional)
1/2 teaspoon of salt

Steps:

  • Heat oil in a large skillet over medium-high heat and add the peppers and garlic. Sauté peppers and garlic for about 2 minutes to release their aroma.
  • Add the peanuts, lower the heat, and stir frequently to avoid burning them. Keep roasting for about 7 minutes. By this time, the combination of the garlic, pepper, and peanuts will be very fragrant. Season with the salt and remove from heat. Place in a serving container to cool and enjoy!
  • If you want to make the peanuts even spicier, grind some of the roasted arbol peppers and mix again. The peppers will be very crispy and easy to crumble over the peanuts.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.

1 teaspoon ground cumin

Steps:

  • Preheat the oven to 400 degrees F.

1 teaspoon ground ginger
1 teaspoon mustard powder
1/2 cup sugar
Kosher salt
1 large egg white
4 cups mixed roasted salted nuts

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper.
  • Mix the cayenne, cinnamon, ginger, mustard powder, sugar and 1/2 teaspoon salt in a small bowl. Whisk the egg white in a large bowl until frothy. Toss in the nuts, then add the spice mixture and toss until well coated.
  • Spread the nuts on the prepared baking sheet; bake until dry, about 45 minutes. Let cool completely on the baking sheet.
  • Hot: These nuts are a not-too-spicy crowd pleaser. Cayenne, ginger and mustard powder give them mild heat.
  • Hotter: Add 2 teaspoons chipotle chile powder to the spice mixture, then continue as directed.

1 tablespoon egg white
Finely grated zest of 1 lime
2 teaspoons sugar
1 teaspoon chipotle powder
1/4 rounded teaspoon ground coriander
1/4 rounded teaspoon garlic powder
Kosher salt
1 1/2 cups lightly salted dry-roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil; rub lightly with oil.
  • Put the egg white, lime zest, sugar, chipotle powder, coriander, garlic powder, 1/2 teaspoon salt and 1 tablespoon oil in a medium bowl. Beat with a fork to combine. Add the peanuts and toss to coat.
  • Spread the spiced peanuts on the prepared baking pan in a single layer. Bake until dry and a shade darker, about 15 minutes. Cool completely before adding the cilantro.

1 cup roasted, unsalted peanuts
3 tablespoons sugar
1 teaspoon cayenne pepper
1 teaspoon coarse salt or kosher salt
1 lime, quartered

Steps:

  • In a nonstick pan over high heat, toast peanuts for 2 to 3 minutes, shaking pan or stirring often until nuts begin to smell toasty. Pour into a bowl and set aside.
  • Decrease heat under pan to medium and sprinkle sugar, cayenne pepper and salt evenly into it. Melt mixture slowly, stirring a bit with a heat-proof silicone spatula. When sugar has melted, add peanuts to pan and coat well. Mixture might clump a bit.
  • Pour nuts onto parchment paper. As soon as mixture is cool enough to handle, break apart any clumps of peanuts. Serve with wedges of lime. Squeeze lime over nuts right before eating.
