1/2 pound white american cheese
1/4 cup milk (maybe more if you want it thinner)
1 tablespoon butter
1 4 oz can of green chili's
1/4 teaspoon cumin
1/4 teaspoon garlic salt
.125 tsp cayenne pepper - a pinch

Steps:

  • Place cheese, milk, and butter in a sauce pan over low heat.
  • Heat until melted - stirring frequently.
  • Stir in the green chillis, cumin, garlic salt, and the cayenne pepper. Remember, it doesn't take much cayenne.
  • Add more milk if you want it thinner.
  • Serve immediately with chips, tortillas, and your favorite mexican dish.

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) package cream cheese, softened
2 cups shredded Cheddar cheese
1 teaspoon Mexican-style seasoning blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine salsa, spinach, cream cheese, 1 cup Cheddar cheese, and Mexican seasoning in a large bowl. Spread into an oven-safe dish. Sprinkle with remaining Cheddar cheese.
  • Bake, uncovered, in the preheated oven until heated through and cheese is melted, 20 to 25 minutes.

4 cups Mexican blend cheese (I use Sargento brand for this)
3 tablespoons flour
1 cup non-alcoholic beer
1 (4 ounce) can green chilies (about 1/2 cup)
1 tablespoon finely chopped cilantro (or to taste)
1 -2 jalapeno pepper, seeded and finely chopped
salt and pepper
taco sauce
tortilla chips

Steps:

  • In a large bowl, combine the cheese and flour.
  • In a heavy-bottomed saucepan bring the beer to a boil; reduce heat and add in the cheese/flour 1/2 cup at a time, stirring constantly until the cheese is melted.
  • Repeat with remaining cheese mixture, stir until thickened DO NOT BOIL.
  • Stir in chiles, cilantro, jalapeno pepper and salt and pepper to taste.
  • Immediately pour the mixture into a glass 8-inch baking dish.
  • Drizzle with taco sauce.
  • Serve immediately, or keep warm in oven.

1 large anaheim chili, chopped (New Mexico)
1/2 cup onion, minced
1 small tomatoes, chopped
1/2 cup chicken broth
1 (16 ounce) package shredded monterey jack and cheddar cheese blend

  • Heat oil in saucepan over medium heat. Add the chopped chile, minced onion, and chopped tomato and cook until softened, 5 minutes.
