Banana Bread with Sour Cream image

1/3 cup butter (softened)
1 1/4 cups white sugar
2 eggs
4 large very ripe bananas (mashed)
1 cup sour cream
1 tsp vanilla extract
2 1/2 cups all purpose flour (or white whole wheat)
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 cup walnuts chopped (optional)

Steps:

  • Preheat oven to 325 degrees F and generously grease two loaf pans that are approximately 8 1/2 x 4 1/2 inches in size.
  • Cream butter and sugar in a large bowl. Add the eggs and mix well. Add sour cream, mashed bananas, vanilla and stir to combine. Add the flour, salt, cinnamon and baking soda to the wet ingredients and stir until just combined. Fold in the walnuts, if using.
  • Divide the batter evenly between prepared loaf pans. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

½ cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup sour cream
½ cup chopped walnuts
2 medium bananas, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe banana (2-3 medium bananas)
1/2 cup butter
2 tablespoons milk
2 eggs
1/4 cup chopped walnuts (optional)

Steps:

  • Mix 1 cup flour, sugar, baking power, baking soda, and salt.
  • Add mashed bananas, butter, and milk.
  • Mix for 2 minutes.
  • Add eggs and remaining flour, beat till blended.
  • Stir in nuts.
  • Poor batter into a greased 8x4x2 inch loaf pan.
  • Bake at 350°F for 55-60minutes.
  • Cool for 10 minutes.
  • Remove from pan.

I make this bread in every form imaginable! Loaves, cakes, muffins, mini muffins(kid friendly). This recipe will yield one pan of muffins (12 regular or 24 mini) AND one loaf. Hope you love it as much as my family does!

Number Of Ingredients 12

4 large bananas, very ripe
1/2 c butter, softened to room temp
1 1/2 c all purpose flour
1/2 c oat flour
1 tsp baking soda
1 tsp vanilla extract
1 c brown sugar (less to taste)
1/2 tsp cinnamon
1/4 tsp cloves
1 large egg
1 dash(es) salt
1 c walnuts, chopped, optional

Steps:

  • 1. Preheat oven to 350 degrees. Spray 2 8.5X4.5 loaf pans with baker's spray(nonstick spray with flour already in the can) or grease and flour pans. Set aside.
  • 2. In a large bowl, beat brown sugar and butter till creamy. Add bananas and vanilla. Beat until bananas are fully incorporated. Add egg and beat again.
  • 3. In a small bowl, combine the flours, baking soda, cinnamon, cloves, and salt. Add nuts to the batter and mix with a spatula(if not using, skip this step). Sprinkle the flour mixture on top of the banana mixture. Fold into mixture with a spatula, just until combined. Don't over mix! There will be lumps and dry patches in the batter, and that's okay.
  • 4. Pour batter into prepared pans.
  • 5. Bake at 350 for about 35-40 minutes or until a toothpick inserted comes out fairly clean. Let rest in pan about 10 minutes. Gently invert pans to remove the loaves, and rest on a wire rack till cool.
