CLASSIC SLOW COOKER CHILI

1 tablespoon olive oil or avocado oil
1 medium yellow onion (diced small)
1 medium red bell pepper (diced small)
4 medium garlic cloves (finely chopped)
2 tablespoons chili powder
1 tablespoon ground cumin
1/4 teaspoon smoked paprika (optional, but delicious)
1 pound lean ground beef or ground turkey (see note)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon brown sugar
1 (28-ounce) can diced tomatoes (undrained)
1 (16-ounce) can tomato sauce
2 cans (15-ounces each) light or dark kidney beans (rinsed and drained (see note))
Shredded cheddar cheese
Sour cream

Steps:

  • In a large, 12-inch nonstick skillet, heat the oil over medium heat and add the onions, bell peppers and garlic. Cook, stirring often, for 2-3 minutes. Add the chili powder and cumin and stir to combine. Cook for another minute or so.
  • Add the ground beef or turkey, salt and pepper to the skillet and cook, breaking up the meat into small pieces, until the ground beef or turkey is no longer pink, 5-6 minutes. Drain any excess grease.
  • Scoop the mixture into a round 6-quart (or similar size) slow cooker. Stir in the brown sugar, diced tomatoes, tomato sauce, and beans.
  • Cover and cook 8-9 hours on low or 5-6 hours on high. (The chili will thicken slightly the longer it stands after cooking.) Add additional salt and pepper to taste if needed.
  • Serve with shredded cheddar cheese, sour cream and any other chili toppings you like.

2 tablespoons oil
1/2 cup finely chopped onion
1-2 garlic cloves (finely minced)
3 tablespoons flour
1/4 teaspoon cumin
1/4 teaspoon black pepper
1 1/2 cups low-sodium chicken or vegetable broth
1 cup Anaheim or poblano chiles (roasted and peeled OR 1 cup canned diced green chiles, rinsed and drained)
1/4 teaspoon dried oregano
1/2 teaspoon salt
1 medium jalapeno (finely diced (optional))

Steps:

  • In a medium saucepan, heat the oil over medium heat until hot. Add the onion and garlic and cover. Cook for 5-6 minutes, stirring once or twice to make sure the garlic and onions aren't sticking (adjust the heat if they are). Cook until the onions are soft but not browned.
  • Stir in the flour and cook for 2-3 minutes, stirring constantly. It's ok if the flour clumps around the onions, just keep stirring to let the flour get golden and toasty.
  • Gradually add the broth, whisking quickly and constantly to smooth out any lumps.
  • Add all the remaining ingredients and bring to a boil. Reduce the heat to low and simmer for 30 minutes, stirring occasionally. The sauce should be silky and thickened - able to coat a spoon but still drip off. Add more broth to thin out if needed.
  • Add additional salt to taste, if needed. The sauce can be processed in a blender if you prefer a smoother consistency. It will keep well in the fridge for up to 2 weeks. Otherwise, it can be frozen - probably up to a month or two if well sealed.

This is my mom's recipe. It is a wonderful homemade chili sauce that makes FANTASTIC sloppy joes (see Mel's Sloppy Joes , recipe #69795), or can be used for eggs rancheros(?).

24 large tomatoes, diced
4 green bell peppers, diced
2 red bell peppers, diced
5 large yellow onions, diced
3 tablespoons salt (heaping)
1 teaspoon ground cinnamon
1 teaspoon allspice
1 teaspoon ground cloves
1 teaspoon dry mustard
1 teaspoon ground nutmeg
3 1/2 cups vinegar
2 1/2 cups brown sugar
1 cup celery, grated

Steps:

  • Combine all ingredients in non-aluminum pot (recipe is acidic).
  • Simmer ingredients over medium heat, stirring occasionally and slightly mashing vegetables as they cook.
  • Cook until thickened (about an hour).
  • Place in 1-pint (1/2-liter) canning jars.
  • Let stand, cool, and seal using hot-water canning method.
  • NOTE: Can place in 1/2-pint (1/4-liter) jars for smaller sloppy joe recipe using 1-lb ground beef.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

I live about 1 hour from my favorite pizza joint, so I decided to make my own sauce recipe for the days that I can't have the real thing (because let's face it, nothing beats the real thing). After many attempts (10 full batches, to be exact) at adjusting my recipe, this is what my taste buds came up with. I hope you will give it a try and enjoy it as much as my family and I do. For the ultimate pizza experience use Brothers® pepperoni and Mozzarellissima® pizza cheese.

Mel's Diner Chili Recipe - (4.2/5) image

Number Of Ingredients 9

2 lbs ground beef (I used 1 lb. pork sausage + 1 lb. ground beef)
1 onion, chopped
2 cans tomato paste (6 oz cans)
6 tomato paste cans of water
1 clove garlic, minced
1 can kidney beans, rinsed and drained
2 packs low-sodium chili seasoning mix
1 can Fire Roasted tomatoes, undrained
salt and pepper to taste

Steps:

  • Brown the beef, onion and garlic. Drain and rinse under hot water. Add all the other ingredients. Simmer for a few hours or toss it in the crockpot and cook it on low for 5 or 6 hours. I didn't have much time, so mine only cooked 45 minutes or so. It was still yummy.
