Watermelon and Cantaloupe Salad with Mint Vinaigrette image

1 bunch fresh mint, chopped
1/4 cup lemon juice, from about 1 lemon
1/4 cup simple syrup, recipe follows
1/8 teaspoon amaretto
2 cups watermelon balls, from about half a watermelon
2 cups cantaloupe balls, from about 1 cantaloupe
1/2 cup water
1 cup sugar

Steps:

  • In a blender, combine mint, lemon juice, simple syrup, and amaretto. Blend until smooth.
  • In a large bowl, combine the watermelon and the cantaloupe. Add the vinaigrette and toss. Transfer to a serving bowl and serve.
  • In a saucepan, combine water and sugar over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator.

Enjoy honey dew melon and cantaloupe dunked in orange syrup for a delicious fruit salad recipe that can double as a dessert - garnish with fresh mint sprigs!

1/2 cup sugar
2 teaspoons grated orange peel
1/2 cup fresh orange juice (1 large orange)
1 teaspoon cornstarch
1 tablespoon thinly sliced mint leaves
1 medium honeydew melon, cut in half, seeded
1 medium cantaloupe
Fresh mint sprigs, if desired

Steps:

  • In 1-quart saucepan, mix sugar, orange peel, orange juice and cornstarch. Heat to boiling over medium heat, stirring occasionally. Reduce heat to low; simmer uncovered about 8 minutes, stirring frequently, until sugar has dissolved and syrup has thickened. Stir in sliced mint. Cover; refrigerate at least 30 minutes, stirring occasionally.
  • Meanwhile, cut honeydew melon in half; remove and discard seeds. With melon baller, scoop out melon into balls; place in medium bowl. Cut cantaloupe in half; remove and discard seeds. Remove rind; cut cantaloupe into 1-inch-thick wedges. Arrange cantaloupe on serving platter.
  • Gently toss melon balls with cooled syrup. To serve, spoon melon balls on top and around cantaloupe; drizzle with remaining syrup. Garnish with mint sprigs.
