CUCUMBER, MINT & MELON PUNCH



Cucumber, mint & melon punch image

A fruity, minty, refreshing punch for a summer party. The mix of juicy honeydew, cantaloupe and watermelon chunks make this the ultimate cooler to beat the heat

Number Of Ingredients 7

1 large cucumber , peeled and chopped into small chunks
small bunch mint , leaves picked
500ml vodka
juice 6 lime , plus wedges to serve
200g white caster sugar
1-2 small melons (we used 1/2 honeydew, 1/2 cantaloupe and 1/2 watermelon)
1l sparkling water , chilled

Steps:

  • Put the cucumber and half the mint in a large bowl or jug, and pour over the vodka. Cover and leave to steep for at least 24 hrs or for up to 1 week in the fridge, stirring every few days. Strain through a fine sieve.
  • Pour the vodka, lime juice and sugar into a larger jug. Stir well.
  • Using a melon baller, scoop out as many melon balls as you can. Add them to the jug and leave to steep for 30 mins-1 hr in the fridge. Top up with sparkling water and add the remaining mint leaves just before serving with extra lime wedges.

Frozen-melon scoops take the place of ice cubes in this rum-spiked fruit punch and add pops of color and sweetness.

Number Of Ingredients 6

1 melon (honeydew or cantaloupe)
2 1/4 cups fresh pineapple juice
1 1/2 cups light rum (optional)
1/4 cup fresh lime juice (from 4 limes)
2 tablespoons Angostura bitters
2 liters ginger ale

Steps:

  • Make melon balls (about 3/4 inch each) using a melon baller. (You should have about 2 cups.) Transfer to a rimmed baking sheet, and freeze, about 1 hour.
  • Stir together pineapple juice, rum, lime juice, and bitters in a punch bowl. Slowly add ginger ale, being careful not to disperse the bubbles too much. Add frozen melon balls. Serve immediately.

This is a refreshing drink that is great with a spicy meal. Very versatile because you can use whatever melons you have on hand, or combine 2 or 3 kinds.

4 cups cubed melon (cantaloupe, honeydew or seedless watermelon)
1 cup orange juice
1/3 cup water
2 tablespoons sugar
ice cube
fresh mint sprig, optional

Steps:

  • In a food processor or blender, place half of melon cubes and orange juice; cover and process until smooth.
  • Strain into a pitcher.
  • In a food processor or blender, place remaining melon, water and sugar; cover and process until smooth.
  • Strain into first mixture.
  • Stir until combined.
  • Serve over ice and garnish with mint sprigs, if desired.

MELON & CUCUMBER PUNCH

Perfectly ripe Galia melon, orange liqueur and Pimm's pump this punch with summery flavour

1 Galia melon
juice 1 lemon
100ml Pimm's
50ml orange liqueur (we used Cointreau)
750ml white wine
½ cucumber , sliced
small bunch mint
300ml sparkling water or sparkling wine
ice

Steps:

  • Cut the melon in half and scoop out and discard the seeds. Using a melon baller cut the fruit into spheres and place in a large punch bowl. Add the lemon juice, Pimm's, orange liqueur and white wine then chill in the fridge for 1-2 hrs.
  • To serve, add the cucumber pieces, mint sprigs and top with sparkling water and ice.

34 ounce(s) ginger ale (1 liter -one of the big bottles)

Steps:

  • Make melon balls (about 3/4 inch each) using a melon baller. (You should have about 2 cups.) Transfer to a rimmed baking sheet, and freeze, about 1 hour.
  • Stir together pineapple juice, rum, lime juice, and bitters in a punch bowl. Slowly add ginger ale, being careful not to disperse the bubbles too much. Add frozen melon balls. Serve immediately.
  • Note: Melon balls can be frozen for up to 3 days.
