MELON-CUCUMBER COOLERS



Melon-Cucumber Coolers image

1/4 honeydew melon, peeled, seeded and chopped (about 2 cups)
1/2 seedless cucumber, chopped, plus spears for garnish
1/4 cup sugar
2 tablespoons fresh lemon juice
1 cup vodka
1/4 cup green melon liqueur (such as Midori)

Steps:

  • Combine the melon, cucumber, sugar, lemon juice and 1 cup water in a blender and puree until smooth. Strain through a fine-mesh sieve into a pitcher, using a ladle to push the mixture through.
  • Add the vodka and liqueur to the pitcher and stir to combine. Refrigerate until cold, at least 30 minutes or up to 4 hours. Divide among ice-filled glasses; garnish with cucumber spears.

Mexican aguas frescas, or "fresh waters," made from all kinds of fresh fruit, flowers, or herbs, are a great way to beat the heat. This cantaloupe version gets additional vim from a splash of club soda.

Number Of Ingredients 6

1 (4-pound) cantaloupe, seeded and cut into 1-inch cubes (about 8 cups)
1 1/2 cups water
1 tablespoon fresh lime juice
1 tablespoon sugar
1 quart chilled club soda or seltzer
Garnish: lime wedges, honeydew melon slices

Steps:

  • Purée cantaloupe in batches with water in a blender. Transfer to a colander lined with a kitchen towel (not terry cloth) or fine cheesecloth set over a deep bowl and let drain 1 hour. Gather ends of towel and very gently squeeze any remaining juice from melon, then discard solids.
  • Stir in lime juice, sugar, and 1/4 tsp salt and chill 1 hour.
  • Divide among 8 (10-ounces) glasses and top off with club soda.

1 tablespoon fresh lime juice
1 tablespoon sugar
1 quart chilled club soda
lime wedges or thinly sliced honeydew melon slices for garnish

Steps:

  • Purée cantaloupe in batches with water in a blender. Transfer to a colander lined with a kitchen cloth (not terry cloth) or cheesecloth (or use a fine-mesh china cap) set over a deep bowl and let drain 1 hour. Gather ends of towel and very gently squeeze and remaining juice from melon, then discard solids. Stir in lime juice, sugar and 1/4 teaspoon salt and chill 1 hour. Divide amongst 8 10-ounce glasses and top off with club soda.
