SWEET AND SPICY MELON SALAD
Steps:
- Add the agave, lime juice, cayenne pepper and salt to a large bowl and whisk to combine. Add the cantaloupe and honeydew to the bowl along with the mint leaves and toss to coat with the dressing. Serve as is, or for a more intense flavor, refrigerate for a few hours and up to overnight and toss again before serving.

- Cut watermelon into a basket. Melon ball the fruit out of all the pieces. You will need about 4 cups of balls and save the rest for another use. In a large bowl, combine fruit cocktail, oranges, cherries, pineapple, marshmellows and watermelon balls. Add soda, toss lightly. Cover and refrigerate until chilled. (about 2 hours) Just before serving, stir in coconut and spoon into the basket.

- In a medium bowl, combine cantaloupe, grapes, and coconut. Fold in yogurt. Cover and refrigerate 30 minutes. Best served the same day.To serve, stir mixture and spoon onto lettuce leaves. Sprinkle nuts over the top. Garnish with mint leaves if desired.NOTE: A combination of two kinds of melon makes a colorful salad combination. Mixture can easily be doubled and served in an attractive glass bowl for buffets or as a brunch side dish.
