This Mediterranean Roasted Vegetable Pasta will please the whole family. With sweet roasted bell peppers, onion, and zucchini this pasta dish is healthy comfort food! The veggies are drizzled with olive oil, then placed in the oven to bake, making them sweeter and more intense. Everything is added to pasta with a simple sauce, for a dinner that is packed with flavor and so easy to make! Serve it on its own as an easy vegetarian dinner, or as a side for grilled chicken, shrimp or steak!

12 oz penne pasta ((see note 1))
1 zucchini
1 large red onion
1 red bell pepper
1 yellow bell pepper
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/4 cup olive oil
1/4 cup parmesan (- grated)
1 garlic clove (- minced)
1 tsp dried Italian herbs
1/2 tsp salt
1/2 tsp pepper
additional parmesan
Fresh oregano (- for garnish)

Steps:

  • Pre-heat the oven to 230ºC/450°F.
  • Cut the zucchini in half lengthways and then cut into 1/4 inch slices.
  • Cut the bell peppers into 1/2 inch pieces.
  • Peel the onion and then cut into thick wedges.
  • Pour the olive oil, salt, and pepper into a large roasting tin.
  • Add in all the chopped veg and stir well until everything is well coated.
  • Roasted for 30 minutes until slightly charred and tender.
  • Combine the olive oil, grated parmesan, minced garlic, Italian herbs, salt and pepper in a jar or measuring cup. Stir well and set to one side.
  • Whilst the veg is roasting bring a large pan of water to the boil.
  • Salt it well and add the pasta.
  • Cook as per the packet until al-dente.
  • Reserve a cup of the pasta cooking water and drain the pasta, then return it to the pan.
  • Add 1/4 cup of the pasta cooking water to the sauce and stir/shake to combine.
  • Remove the veg from the oven and empty the veg and any oil over the drained pasta.

1 cup chopped zucchini
1/2 cup chopped fresh mushrooms
1/3 cup chopped green pepper

6 pitted ripe olives, halved
1/8 teaspoon pepper

EASY PASTA PRIMAVERA RECIPE

Simple pasta primavera with roasted vegetables and dressed in a light sauce using the pasta cooking water, extra virgin olive oil, lemon zest and a little Parmesan cheese. I use a medley of vegetables, and you can feel free to change them up depending on what is in season! This is a great way to keep your primavera exciting and delicious. If you want to add some extra protein, throw in some quick lemon chicken or grilled shrimp skewers.

2 zucchini, (halved length-wise and sliced (half moons))
2 yellow squash, (halved length-wise and sliced (half moons))
2 to 3 carrots, (peeled and cut into short sticks)
1 red bell pepper, (cored and sliced into thin sticks)
1 yellow or orange bell pepper, (cored and sliced into thin sticks)
1 red onion, (halved and sliced (half moons))
3 large garlic cloves, (minced)
1 tbsp dried oregano, (more for later)
1 ½ tsp fresh thyme, (more for later)
Kosher salt
Black pepper
Extra virgin olive oil
12 ounces short pasta of your choice
8 oz grape tomatoes, (halved)
Zest of 1 large lemon
½ cup Parmesan cheese, (more to your liking)

Steps:

  • Heat oven to 450 degrees F.
  • Place the vegetables in a large mixing bowl. Add garlic, oregano, and thyme. Season with a big pinch of kosher salt and black pepper. Drizzle a good amount of extra virgin olive oil. Toss to coat.
  • Transfer the vegetables to a large sheet pan (or two if needed). Spread them out well. Roast in heated oven for about 20 minutes (stirring half-way through).
  • While the vegetables are roasting, cook the pasta in salted boiling water according to package (about 10 to 12 minutes). Reserve some of the pasta cooking water. Drain pasta.
  • Transfer pasta to a large bowl and season with salt and pepper, and if you like, a little oregano and fresh thyme. Add the vegetables in. Add the tomatoes and lemon zest. Add a bit of the pasta cooking water, a bit of extra virgin olive oil. Toss to combine.
  • Sprinkle Parmesan cheese and serve immediately.

1 large eggplant, washed
1 large onion
1 red pepper, washed
1 garlic clove, crushed
3 tablespoons olive oil
2 teaspoons paprika
14 ounces pasta sauce, Napoletana, store bought
3 tablespoons fresh flat-leaf parsley, chopped
fresh ground black pepper
1 lb pasta

Steps:

  • Preheat the oven to 400°F Trim and discard the top and bottom of the eggplant and cut the remainder into small cubes.
  • Peel the onion and chop finely. Cut the red pepper in half, deseed and slice into small pieces.
  • Place the prepared vegetables in a medium-sized roasting tin with the garlic. Stir in the olive oil, paprika and 4 tbsp cold water. Roast in the preheated oven for 20 minutes, stirring occasionally to stop the vegetables from sticking.
  • When the vegetables are soft and golden, stir in the Napoletana Sauce and parsley, and season well. Return to the oven for a further 10 minutes to heat through. Meanwhile, cook the pasta according to the pack instructions. Drain the pasta, then stir into the sauce. Serve with a crisp green salad.

1 (19 ounce) can chickpeas, drained and rinsed
2 (28 ounce) cans plum tomatoes
1 large onion, chopped
4 garlic cloves
1 teaspoon olive oil
1 cup dry red wine
1 tablespoon tomato paste
1/2 lb fresh mushrooms, sliced
1 large zucchini, chopped (I like to slice in rounds, then in half again)
1/2 cup fresh parsley
1/4 cup fresh basil
1/4 cup fresh oregano
1 carrot, grated
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon dried hot red chilies

Steps:

  • In large pot saute the onion in olive oil until translucent then add garlic.
  • Run the chickpeas and tomatoes through a blender or food processor until they are finely chopped, but not smooth.
  • Add all the ingredients to the pot, and simmer uncovered for 45 minutes, stirring occasionally.
  • When I don't have fresh I exchange 1/4 cup fresh basil= 4 tsp dried. 1/4 cup fresh oregano = 1 tablespoon dried. 1/2 cup parsley = 2tsp dried.

2 small zucchini
1 medium eggplant, peeled (about 1 pound)
1 red bell pepper
1 medium onion
1 stalk celery
2 garlic cloves, minced
1/2 cup dry white wine or 1/2 cup red wine
1 1/2 teaspoons dried thyme or 1 1/2 teaspoons dried oregano
2 (28 ounce) cans plum tomatoes, coarsely chopped
1 teaspoon salt
fresh ground pepper

Steps:

  • Cut zucchini, eggplant, bell pepper, onion, and celery into 1/2 inch pieces.
  • Put a pot of water on to boil for cooking pasta, if preparing at same time as sauce.
  • In a large nonstick skillet, heat 1T olive oil over medium-high heat.
  • Add diced vegetables. Saute until tender, about 10 minutes.
  • Add minced garlic and cook, stirring for 1 minute more.
  • Add wine and stir until wine is almost evaporated, about 2 minutes.
  • Add tomatoes and juice. With tomatoes,grab and rip hard stem off each tomato and then hand crush the tomato before adding it to the sauce (or you can chop them :).
  • Add thyme (or oregano), salt, and pepper.
  • Bring to a simmer and cook until thickened, 10-15 minutes.
  • Toss with penne and serve!

1 medium onion, chopped
1 tablespoon olive oil
4 garlic cloves, pressed
1 lb tomatoes, chopped
1 large red bell pepper, chopped (about 8 oz.)
1/8-1/4 teaspoon crushed red pepper flakes
salt & freshly ground black pepper, to taste
2 -3 tablespoons vegetable stock (optional) or 2 -3 tablespoons water (optional)
2 tablespoons fresh basil leaves, chopped
1 lb penne (a 450-500 g box- I mix regular and whole wheat, and I think it tastes best that way)
coarse salt and black pepper, to serve

Steps:

  • You can make this sauce ahead of time, and it actually tastes better the next day. Only cook enough pasta for the day you are serving it, and serve any leftover sauce with freshly cooked pasta.
  • In a skillet, soften the onion in a little water over medium heat. Add the oil and garlic, and saute them, stirring often, till they are starting to caramelize.
  • Add the tomatoes, pepper, crushed red pepper and salt/pepper if desired. Raise heat till juices are bubbling. Then turn it down to low and simmer 15-20 minutes, till the bell pepper is well-softened.
  • In the meantime, start your pasta cooking in a large pot.
  • Transfer the mixture to a food processor and blend, adding a few tablespoons of stock or water as needed to make a smooth sauce. Return to the skillet, stir in the basil, cover and keep warm.
  • Drain pasta and return it to the pot. Pour in the sauce and stir to coat. Serve with a sprinkle of coarse salt and freshly ground black pepper, and a salad.

Silvana Franco's fast, easy and healthy vegetarian pasta is perfect for a midweek meal

2 red peppers , seeded and cut into chunks
2 red onions , cut into wedges
2 mild red chillies , seeded and diced
3 garlic cloves , coarsley chopped
1 tsp golden caster sugar
2 tbsp olive oil , plus extra to serve
1kg small ripe tomatoes , quartered
350g dried pasta
a handful of fresh basil leaves and 2 tbsp grated parmesan (or vegetarian alternative), to serve

Steps:

  • To roast the veg, preheat the oven to 200C/gas 6/fan 180C. Scatter the peppers, red onions, chillies and garlic in a large roasting tin. Sprinkle with sugar, drizzle over the oil and season well with salt and pepper. Roast for 15 minutes, toss in the tomatoes and roast for another 15 minutes until everything is starting to soften and look golden.
  • While the vegetables are roasting, cook the pasta in a large pan of salted boiling water according to packet instructions, until tender but still with a bit of bite. Drain well.
  • Remove the vegetables from the oven, tip in the pasta and toss lightly together. Tear the basil leaves on top and sprinkle with Parmesan to serve. If you have any leftovers it makes a great cold pasta salad - just moisten with extra olive oil if needed.
