MEDITERRANEAN TURKEY-STUFFED PEPPERS

- Heat oven to 190C/170C fan/gas 5. Halve the peppers lengthways, then remove the seeds and core but keep the stalks on. Rub the peppers with a drizzle of olive oil and season well. Put on a baking tray and roast for 15 mins.
- Meanwhile, heat 1 tbsp olive oil in a large pan over a medium heat. Fry the mince for 2-3 mins, stirring to break up the chunks, then tip onto a plate.
- Wipe out your pan, then heat the rest of the oil over a medium-high heat. Add the onion and garlic, stir-fry for 2-3 mins, then add the cumin and mushrooms and cook for 2-3 mins more.
- Tip the mince back into the pan and add the chopped tomatoes and tomato purée. Crumble in the stock cube and cook for 3-4 mins, then add the oregano and season. Remove the peppers from the oven and fill them with as much of the mince as you can. (Don't worry if some spills out it - it will go satisfyingly crisp in the oven.) Top with the cheese and return to the oven for 10-15 mins until the cheese starts to turn golden.
- Carefully slide the peppers onto a plate and serve alongside a pile of your favourite greens blanched, boiled or steamed.

- Combine turkey meatball ingredients; mix well. Shape into 18 (1 1/4") balls.

- Chop up olives.
- Combine cream cheese, feta cheese, olives and oregano in bowl and mix.
- Evenly spread the mixture over entire tortilla.
- Place turkey over the cream cheese mixture on half of each tortilla.
- Place spinach leaves on top of turkey.
- To assemble just start with the side that is topped with the turkey and roll up tightly.
- Wrap each sandwich with saran wrap.
- Refrigerate wraps at least 1 hour.
- Before serving, unwrap, and trim of ends of each roll.
- Cut wraps into 3 sections.
- Cut each section on a slight diagonal into half.
- Wraps can be made a day ahead.
- Enjoy.

- Mix together the turkey, pear, egg, panko, parsley, garlic, sage, rosemary, and allspice in a large bowl until well combined.
- Add the salt and pepper or more to taste. (to test the flavor, cook a tsp or two of the meat mixture in the microwave or small skillet).
- Divide the mixture into 6 equal portions and shape them into patties, gently pressing the center of each to create a slight indentation. This will prevent the patty from bulging in the center, so that you end up with a flat, evenly cooked burger.
- Refrigerate the patties until the grill is ready.
- Prepare a charcoal fire or a gas grill to medium-hot.
- Wipe the rack with canola oil and lay the burgers on it indentation side up.
- Let them cook, without pressing down on them, until the bottoms are well seared, about 5 to 7 minutes.
- Flip the burgers and continue grilling until they are completely cooked through (the juices will run clear) another 5 to 7 minutes.

MEDITERRANEAN TURKEY BURGER WRAPS

- For the Burger: In a bowl mix ground turkey with the fresh oregano, red onion, allspice, cinnamon, red pepper flakes, ground corrinader, salt and pepper. Form them into smaller thicker patties (as not to fall apart). Brush them with olive oil and place them on hot oiled grill. Grill for about 4 minutes per side or until brown. For Filling: In a bowl place prepared as mentioned above: red onion, kalamata olives, lettuce, tomato, basil, pepperoncinni, paresean cheese and garbonzo beans. For Dressing: In measuring cup pour olive oil, pepperoncinni liquid, garlic, red pepper flakes and salt and pepper and mix together. Combine a light coating of dressing over filling mixture. Place flat bread down, spoon on filling mixture, and 2 or 3 turkey burgers and roll it up and then cut in half.
