Red peppers and crumbled feta give these moist and marvelous mini meatloaves their Mediterranean-style appeal.

1 lb. extra-lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix
1 cup hot water
1 tsp. dried oregano leaves
3/4 cup chopped roasted red peppers
3/4 cup ATHENOS Traditional Crumbled Feta Cheese

Steps:

  • Heat oven to 375°F.
  • Mix first 4 ingredients just until blended; press into 12 muffin pan cups sprayed with cooking spray.
  • Use back of spoon to make indentation in center of each meatloaf; fill with peppers.
  • Bake 30 min. or until meatloaves are done (160°F). Top with cheese; bake 5 min. or until melted.

1 egg
¾ cup milk
1 cup shredded Cheddar cheese
½ cup quick cooking oats
1 teaspoon salt
1 pound ground beef
⅔ cup ketchup
¼ cup packed brown sugar
1 ½ teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  • In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

1/2 cup Italian seasoned breadcrumbs
1 teaspoon salt
1 lb ground beef
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the egg, milk, cheese, breadcrumbs and salt. Add the ground beef, mixing well, and form this mixture into six to eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.

This is a nice substitute for regular meatloaf. We're not big fans of traditional meatloaf but we really like this dish. I've served it with a Greek salad, marinated olives and bread. From an AP food story in the newspaper which said the recipe was developed by the Quaker Oat Company.

1/4 cup sun-dried tomato
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup chopped onion
1/4 cup crumbled feta cheese
1 1/2 lbs ground turkey
1 cup quick oats or 1 cup old fashioned oats, uncooked
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt (optional)
1/4 teaspoon ground black pepper
1/2 cup nonfat milk

Steps:

  • Heat oven to 400°F Soften tomatoes according to package directions; coarsely chop and set aside.
  • In small skillet, cook spinach and onion over low heat 4 to 5 minutes or until onion is tender.
  • Remove from heat; cool slightly.
  • Stir in cheese; set aside.
  • In large bowl, combine turkey, oats, garlic powder, oregano, salt, if desired, pepper, milk and sun-dried tomatoes; mix lightly but thoroughly.
  • Shape 2/3 of turkey mixture into 9-by-6-inch loaf in 13-by-9-inch baking dish.
  • Make a deep indentation down center of turkey mixture, leaving about 1 1/2 inches around edges of loaf; fill with spinach mixture.
  • Top with remaining turkey mixture to completely cover spinach filling; pinch edges to seal.
  • Bake 30 to 35 minutes or until juices run clear when pierced with fork.
  • Let stand 5 minutes before slicing.

1 (6 ounce) package Stove Top stuffing mix
1 cup water
1 teaspoon dried oregano leaves or 1 tablespoon fresh oregano leaves
3/4 cup roasted red pepper, chopped
3/4 cup feta cheese, crumbled

Steps:

  • Preheat oven to 375 degrees.
  • Mix meat, stuffing mix, water and oregano leaves together.
  • Spray a 12 cup muffin tin with cooking spray and press meat mixture into each cup.
  • Make a well in the center of each cup and spoon the peppers evenly into each of the twelve cups.
  • Bake 30 minutes or until meatloaves are cooked through.
  • Top with the cheese and return back to the oven until melted, about 5 minutes.

An updated retro favourite that makes a cheap and easy family meal

4 tsp olive oil
1 onion , finely chopped
1 carrot , finely chopped
50g fresh breadcrumb
175ml passata
2 tsp Worcestershire sauce
1 egg , beaten
500g lean beef or pork mince
2 tsp thyme leaves
2 plum tomatoes , halved, seeds scraped out
1 tsp sugar

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
  • Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
