MEDITERRANEAN ARTICHOKE DIP
A quick and zesty dip! Serve with rounds of sourdough toast or with a good sesame crisp. The anchovy really adds a depth of flavor that is not present in other artichoke dips... like them or not, give these little fishes a try in this dip! Makes 48 Tablespoons; 1 Tablespoon per serving on toasts or as a dip. Try this as a spread as well, it is delicious with lettuce and tomato on rye bread.

- Grate 1 tsp zest from the lemon, then squeeze and reserve 1 Tbsp juice.
- Blend lemon zest and juice with remaining ingredients in a food processor or blender, until smooth.
- Scrape mixture into a serving bowl.
- Cover and chill if not serving immediately.
- Will keep in the fridge for up to 1 week this way.

- Set aside 1 basil leaf and 1 sun-dried tomato for garnish.
- In a food processor or blender, blend together all the ingredients until they reach a nice consistency to spread on crackers.
- Place in medium serving dish and garnish dip with the reserved fresh basil leaf and tomato.
- Serve at room temperature with plain crackers or heat in a 400°F oven for about 20 minutes.

MEDITERRANEAN DIP
This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

Steps:
- In a medium bowl, combine sour cream and hummus; mix well.
- Spread into a pie plate or servewear of similar size.
- Sprinkle olives, feta, artichoke hearts, green onions and carrot - adding each as a layer.
- Drizzle with reserved artichoke marinade.
- Cover and refrigerate for at least an hour or up to 12 hours.
- Serve with pita crackers.
