1 1-to-1 1/4 pound eggplant, cut lengthwise into 8 wedges
2 medium-size zucchini, each cut lengthwise into 4 wedges
3 large leeks (white and pale green parts only), halved lengthwise, cut crosswise into 2 1/2-inch pieces
1 red bell pepper, cut into 1/2-inch-wide strips
10 large garlic cloves, unpeeled
3 1/2 tablespoons plus 1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
2 1/2 cups water
1 teaspoon salt
1 10-ounce box couscous
1 cup pitted brine-cured black olives (such as Kalamata), halved
6 tablespoons fresh lemon juice
3 tablespoons drained capers
3 tablespoons thinly sliced fresh basil

Steps:

  • Preheat oven to 400°F. Divide first 5 ingredients between 2 heavy large baking sheets. Brush vegetables with 3 tablespoons oil and balsamic vinegar. Sprinkle herbs over. Sprinkle with salt and pepper. Roast until tender, turning occasionally, about 45 minutes. Cool. Remove and discard peels from garlic. Coarsely chop garlic. Cut roasted vegetables into 3/4-inch pieces. Set aside.
  • Bring 2 1/2 cups water, 1 teaspoon salt and 1/2 tablespoon oil to boil in medium saucepan. Stir in couscous. Remove from heat. Cover; let stand until water is absorbed, about 5 minutes. Fluff couscous with fork. Transfer to large bowl.
  • Gently mix roasted garlic and vegetables, 1/4 cup oil, olives, lemon juice, capers and basil into couscous. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Let stand 30 minutes at room temperature before serving.)

1 cup lentilles du Puy* (French green lentils) or brown lentils
3 tablespoons white-wine vinegar
1 1/4 cups water
1 cup couscous
1/2 teaspoons salt
1/4 cup olive oil (preferably extra-virgin)
1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/2 cup finely chopped fresh mint leaves
1 bunch arugula, stems discarded and leaves washed well, spun dry, and chopped
2 cups vine-ripened cherry tomatoes, halved
1/4 pound feta, crumbled (about 1 cup)
*available at specialty foods shops and some supermarkets

Steps:

  • In a small saucepan simmer lentils in water to cover by 2 inches until tender but not falling apart, 15 to 20 minutes, and drain well. Transfer hot lentils to a bowl and stir in 1 tablespoon vinegar and salt and pepper to taste. Cool lentils completely, stirring occasionally.
  • In a saucepan bring water to a boil and add couscous and salt. Remove pan from heat and let couscous stand, covered, 5 minutes. Fluff couscous with a fork and transfer to a large bowl. Stir in 1 tablespoon oil and cool completely, stirring occasionally.
  • In a small bowl whisk together garlic paste, remaining 2 tablespoons vinegar, remaining 3 tablespoons oil, and salt and pepper to taste. Stir lentils and dressing into couscous. Chill salad, covered, at least 3 hours and up to 24.
  • Just before serving, stir in remaining ingredients and season with salt and pepper.

I created this Mediterranean salad to pair with a white-blend wine from South Africa. The saltiness of the feta and the freshness of the mint and vegetables made a perfect accompaniment to the citrus and herb notes of the wine. I cut up and dressed the vegetables the night before and then the morning that I was serving the salad, I cooked up the couscous following the directions on the package then tossed it with the vegetables and feta.

4 yellow tomatoes
1 pound Israeli couscous (pearl pasta)
1 red bell pepper, stems and seeds removed and cut brunoise
1/2 cup fresh mint leaves, packed plus a few small sprigs for garnish
1 (8-ounce) jar picked cipollini onions
2 English cucumbers, peeled and sliced into 1/4-inch thick disks
2 tablespoons red wine vinegar
2 garlic cloves, lightly crushed with the side of a knife blade and quartered
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup extra-virgin olive oil

Steps:

  • Preheat oven to 325 degrees F. Brush 1 tablespoon olive oil on the tomatoes (reserving the rest) and roast for about 25 minutes. Remove from oven, allow to cool, and cut into wedges.
  • Boil couscous until al dente as you would for pasta, drain well, and toss with 1 tablespoon reserved olive oil.
  • For the dressing, add the vinegar to a blender and replace the cover. Turn on the blender and through the feed opening add, 1 at a time, the garlic, mustard, salt, and pepper. Leaving the blender running, add the olive oil in a slow thin stream. Set aside briefly.
  • Toss together the couscous, tomatoes, bell pepper, mint leaves, cipollini onions, and cucumber with enough of the dressing to coat. Serve additional dressing on the side.

12 kalamata olives, sliced
1/2 large red capsicum, diced small

1 small head of broccoli

3 shallots, sliced fine
60 ml balsamic vinegar
30 ml lemon juice

Steps:

  • Mix couscous and stock in a bowl which has a lid, let stand uncovered.

200 g aubergines or 200 g eggplants, sliced
4 tomatoes, ripe, cut into halves
1 white onion, quartered

3 tarragon leaves
2 garlic cloves, chopped
400 g couscous
500 ml chicken stock
1 lemon, juice and zest

Steps:

3 oz. sun dried tomatoes, sliced in olive oil, with the oil
½ cup fresh parsley or fresh cilantro, chopped
¼ cup mixed olives (packed in olive oil), cut in half and drained
6 TBSP. extra virgin olive oil
--- zest and juice of one (or half) medium organic lemon
½ tsp. sea salt
¼ tsp. freshly ground pepper
1 medium garlic, finely minced (or grated with a microplane)
¼ tsp. ground coriander (optional)
2-3 oz. arugula
1-2 oz. Greek Feta cheese, crumbled

Steps:

  • Cook couscous in plenty of water, according to the package instructions. Once cooked, drain the water and let the couscous cool a bit then place in a large bowl.
  • To the bowl, add the red onion, chickpeas, sun dried tomatoes and olives.
  • In a separate, small bowl, mix together the olive oil, lemon zest and juice, grated garlic, sea salt, black pepper and coriander. Pour it over the couscous mixture, to taste (you might not need it all). Toss well to combine. Gently fold in the arugula, sprinkle the Feta over the salad and taste. Adjust the seasoning if necessary, and serve.

3 Tbsp. GREY POUPON Dijon Mustard
1/2 tsp. grated lemon zest
1 pkg. (4 oz.) ATHENOS Traditional Feta Cheese, crumbled
1/3 cup chopped drained roasted red peppers
1/2 cup chopped pitted black olives

Steps:

  • Prepare couscous as directed on package; cool slightly. Beat dressing, mustard and lemon zest with wire whisk until well blended.
  • Combine cheese, peppers and olives in large bowl; stir in couscous. Add dressing mixture; toss to coat well. Cover.
  • Refrigerate at least 1 hour before serving.

I found this recipe from Giada De Laurentis but adapted it to my taste.. It is really yummy!!! I love salads like this, i've never had israeli couscous before but it's delicious! It is basically pasta so if you can't find it (I found mine at Trader Joe's) just use a small pasta and it won't be a big deal.. Hope you like it!

3 Tbsp extra virgin olive oil, plus 1/4 cup
2 clove garlic, minced
1 8 oz box israeli couscous (or any tiny pasta)
2 c chicken stock
2 lemons, juiced
1 lemon, zested
salt and pepper to taste
1 c chopped fresh basil
1/2 c dried cranberries
1/2 c slivered almonds, toasted

Steps:

  • 1. In a medium saucepan, warm 3 tablespoons of the olive oil over medium heat. Add the garlic and cook for 1 minute or until fragrant. Add the couscous and cook until toasted and lightly browned, stirring often, about 5 minutes.
  • 2. Carefully add the stock, and the juice of 1 lemon and bring to a boil. Reduce the heat and simmer, covered, until the couscous is tender, but still firm to the bite, stirring occasionally, about 5-8 minutes.Taste once in a while to make sure it's not overcooking. Drain the couscous.
  • 3. In a large bowl, toss the cooked couscous with the remaining olive oil, remaining lemon juice, zest, dried cranberries, salt and pepper and let cool.
  • 4. Once the couscous is at room temperature, add the fresh basil, and almonds. Toss to combine and serve.

I was craving a non-mayo-based pasta salad with tons of veggies, so I kinda made this one up by combining a few other recipes I found. I've been on a big Israeli couscous kick lately, but this could probably be made with bowties or pretty much any pasta. Also, it would be great with any combination of veggies! Cook time doesn't include time to cook couscous.

1 (13 ounce) box israeli couscous (can be found in the Jewish food section)
1/2 red bell pepper, chopped
1/2 orange bell pepper, chopped
1/2 lb grape tomatoes, halved (or other heirloom)
1/2 cucumber, seeded and chopped
1/3 cup pimento stuffed olive, chopped
0.5 (8 ounce) can artichoke hearts, halved
2 ounces prosciutto, chopped
1/2 red onion, chopped
1/2 cup fresh basil, chopped
8 ounces feta cheese
1/8 cup olive oil
1/8 cup red wine vinegar
salt and pepper

Steps:

  • Cook the couscous according to package directions. Set aside to cool for a bit.
  • Mix the rest of the ingredients in a large bowl. Add the couscous and combine. Serve immediately or refrigerate for later.

This delicious Mediterranean Couscous Salad combines couscous with cucumber, red onion, tomatoes, garbanzo beans, Kalamata Olives, and feta cheese all drizzled with an easy three ingredient lemon vinaigrette. I love to serve it for a light summer lunch or dinner. This simple salad is the perfect accompaniment for Grilled Marinated Chicken, Lemon Pepper Baked Cod or Garlic Lemon Butter Seared Scallops. My husband and I enjoy this salad on a frequent basis.

1/4 cup(s) olive oil
1 tablespoon(s) white wine vinegar
1 lemon juiced

Reduce heat and simmer, covered, about 8-10 minutes. In large bowl toss the cooked couscous with olive oil, remaining lemon juice, zest, salt and pepper. Add fresh herbs, craisins and almonds.
