2 cucumbers
4 tomatoes
1 red onion
½ cup feta cheese
2 tablespoons olive oil
2 tablespoons red wine vinegar
salt, to taste
black pepper, to taste
1 tablespoon lemon juice
1 cup kalamata olive

Steps:

  • Peel the cucumbers. Cut into discs, and then quarter the discs. Place in a large salad bowl.
  • Cut tomatoes into quarters, lengthwise, and then rotate and cut into large chunks. Add to the salad bowl.
  • Cut the red onion in half, removing the skin, stem, and bottom. Thinly slice and add to the bowl.
  • Add the feta cheese, olive oil, red wine vinegar, salt, pepper, lemon juice, and olives to the salad bowl and toss gently.
  • Enjoy!

2 precooked chicken breasts, diced
1 (10-ounce) bag romaine hearts
1 English cucumber, sliced
1 cup chopped kalamata olives
1/2 medium red onion, diced
1/2 cup red wine vinaigrette
1 teaspoon Greek seasoning (recommended: Spice Islands)
1/2 cup crumbled feta cheese, plus extra for garnish
3 Roma tomatoes, sliced, for garnish

Steps:

  • In a bowl large enough for tossing salad, add diced chicken breast.
  • Chop the romaine and add to salad bowl. Toss in the cucumber, olives and red onion and set aside.
  • In a sealable jar or container with a lid, combine red wine vinaigrette, Greek seasoning and crumbled feta cheese. Seal lid and shake vigorously.
  • Pour dressing over salad and toss to combine. Divide among chilled salad plates and garnish with extra crumbled feta cheese and sliced tomatoes.

1 small shallot, minced

2 heads romaine lettuce, chopped into 1/2-inch pieces

1/4 teaspoon dried oregano
1/4 red onion, sliced thin and soaked in water
2 Persian cucumbers, cut into 1/4-inch pieces

8 ounces small red potatoes, peeled
Coarse salt
4 ounces haricots verts, stems trimmed
12 ounces cherry tomatoes, quartered
3 anchovy fillets, finely chopped
12 Kalamata olives, pitted and thinly sliced
1/4 cup thinly sliced fresh basil
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Freshly ground pepper
4 small yellowfin tuna steaks (about 2 1/2 pounds total)
Sliced crusty bread, for serving

Steps:

  • Cover potatoes with cold water in a medium saucepan; add salt. Bring to a boil; cook until potatoes are tender, 10 to 12 minutes. Drain, and rinse under cold running water. Cut potatoes into 1/4-inch-thick slices; transfer to a large bowl.
  • Prepare an ice-water bath; set aside. Bring a medium saucepan of water to a boil. Add haricots verts; cook until almost tender, 4 to 5 minutes. Plunge haricots verts into ice-water bath; let cool completely. Drain, and cut haricots verts in half. Add to bowl with potatoes. Add tomatoes, anchovies, olives, basil, oil, and lemon juice; season with salt and pepper. Toss to combine, and set aside.
  • Preheat grill to high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 2 seconds). Season tuna with salt and pepper. Grill tuna, turning once, 3 minutes per side for rare. Transfer to a cutting board; slice tuna against the grain. Grill bread, turning once, until slightly charred. Serve tuna with salad and bread.

2 cucumbers (seeded and chopped or sliced)
3 ripe roma tomatoes, chopped
1/3 cup sun-dried tomato packed in oil (drained, diced and reserve 2 tablespoons of the oil)
quartered artichoke heart (use any amount desired)
1 small red onion, thinly sliced
1 cup kalamata olive
1 1/2 cups feta cheese, crumbled
2 tablespoons extra virgin olive oil (mixed with red wine vingar to taste)
salt & freshly ground black pepper (to taste, lots black pepper!)
dried oregano (optional and to taste)

Steps:

  • In a large bowl toss together cucumbers, Roma tomatoes, diced sun-dried tomatoes, 2 tablespoons of the sun-dried tomato oil, artichokes, and the red onion and olives; toss to combine.
  • In a small bowl whisk together the olive oil with a small amount of red wine vinegar (or to taste) drizzle over the salad.
  • Season with salt and lots fresh ground black pepper to taste.
  • Chill until ready to serve.
  • Just before serving sprinkle the feta cheese on top of the salad, then prinkle a small amount of dried oregano on top of the feta if desired.

Lamb Patties with Garlic and Mint over Mediterranean Chopped Salad image

3/4 cup fresh flat-leaf parsley leaves, divided
1 3/4 pounds ground lamb
5 to 6 garlic cloves, chopped
1 large shallot, chopped
1/4 cup fresh mint leaves (a generous handful), finely chopped
2 teaspoons to 1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning (half a palmful)
2 teaspoons to 1 tablespoon ground cumin (half a palmful)
3 tablespoons extra-virgin olive oil (EVOO), plus some for drizzling
1/2 seedless cucumber, chopped
1 green bell pepper, cored, seeded, and chopped
1 small red onion, chopped
3 plum tomatoes, chopped
1 cup pitted kalamata olives
1 cup feta cheese crumbles (1/3 pound)
8 pepperoncini peppers, chopped
Juice of 2 lemons
Salt and freshly ground black pepper, to taste
4 pita breads, any flavor or brand, warmed in the oven or toaster oven, then cut into halves or quarters

Steps:

  • Coarsely chop the parsley. Set aside two thirds and finely chop the rest.
  • Heat a grill pan or a large nonstick skillet to medium-high heat. Place the ground lamb in a bowl with the garlic, shallots, mint, finely chopped parsley, grill seasoning, cumin, and a generous drizzle of EVOO. Mix the meat and score it into 8 portions. Form 8 patties, each 3 inches across and 1 inch thick. Add the patties to the skillet. Cook for 3 minutes on each side.
  • While the meat cooks, combine all the vegetables with the reserved coarsely chopped parsley, the olives, cheese, and hot peppers. Dress the salad with the juice of 2 lemons and about 3 tablespoons EVOO (3 times around the bowl). Season the salad with salt and pepper. Serve the salad with 2 patties of lamb on top and warm pita bread alongside.

1/2 English cucumber, unpeeled and cut into 1/2-inch dice
1 scallion, thinly sliced
1 cup cherry tomatoes, quartered
1/4 cup crumbled feta cheese
3 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees. Place pita on a baking sheet, and bake until crisp, about 10 minutes. Cool; store in an airtight container at room temperature.
