Steps:
- Marinating the Chicken for the PitasPound the chicken so it is even thickness. Measure the marinade ingredients into a large glass measuring cup or mixing bowl. Whisk using a wire whisk until well combined. Add the chicken to a glass bowl or other container. Then, pour the marinade over, cover, and transfer to the refrigerator. Allow the chicken to marinate for at least 4 hours. Cooking the Grilled Chicken for the PitasPreheat the grill to 450 degrees F. After marinating, remove the chicken from the marinade, and pat dry. Cook the chicken on the preheated grill for 5 minutes per side, or until the chicken reaches 165 degrees F internal temperature. Remove the chicken from the grill. Let it rest on a plate for 5 minutes. Then, slice the chicken into thin strips. Assembling the Greek Chicken PitasStuff pitas with chicken and additional toppings in desired amounts. - 1. Blend salad dressing and dill in a small bowl. Set aside.
- 2. Cook chicken according to package directions. Dice.
- 3. Heat oil in large nonstick skillet over medium. Add mushrooms and onion; cook 3 to 5 minutes or until vegetables are tender. Add chicken and stir.
- Serving Suggestion: Stuff pita bread halves evenly with chicken mixture. Top with lettuce and dressing. Serve with carrot sticks. Refrigerate leftovers.

- In a large bowl, mix oil, thyme, paprika, garlic and 1/4 teaspoon salt until blended. Add chicken; toss to coat. Let stand 10 minutes., Meanwhile, in a large bowl, combine coleslaw mix, mayonnaise and remaining salt; spoon into pita halves. Place chicken on an ungreased baking sheet. Steps:
- In a small bowl mix together the yogurt, parsley, hot sauce, cumin, and salt and pepper, to taste.
- Slice the top off of each pita pocket. Fill each pocket with 2 slices of brisket, a quarter of the pickled cucumbers and drizzle with the yogurt mixture. Arrange on a serving platter and serve.
GREEK CHICKEN PITA POCKETS (A MEDITERRANEAN DELIGHT)
Steps:
- In a bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, dried basil, lemon juice, salt, and pepper. Mix well to create the marinade.
- Add the chicken strips to the marinade and toss to coat them evenly. Allow the chicken to marinate for at least 30 minutes, or refrigerate for up to 4 hours for maximum flavor.
- Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken strips for about 5-6 minutes per side, or until they are cooked through and nicely browned. Remove from heat and set aside.
- Warm the pita bread pockets in a toaster or oven for a few seconds until soft and pliable.
- Open each pita pocket and fill it with the cooked chicken strips, diced cucumber, diced tomatoes, diced red onion, and crumbled feta cheese.
- Drizzle tzatziki sauce over the filling.
- Serve the Greek Chicken Pita Pockets immediately and enjoy!

- Bring a half cup of water to a boil in a medium saucepan; add the frozen peas, bring to a boil, and simmer for 4 minutes (do not overcook); drain, and set aside.
- In a large bowl, combine the cooked chicken, cooked peas, tomatoes, feta cheese, green onion and black pepper if desired.
- Fold in the yogurt, mayo, lemon juice and dillweed; toss well to combine.

- Preheat grill to medium-high. Brush chicken with oil; season with salt and pepper. Brush grates with oil. Grill chicken, turning once, until cooked through and lightly marked in spots, 6 to 8 minutes. Transfer to a cutting board. When cool enough to handle, cut into strips.
