1 1/2 teaspoons olive oil
1 1/2 lbs beef stew meat, cut into 1 inch pieces
3 1/2 cups halved mushrooms (about 8 ounces)
2 cups diagonally sliced carrots
1 1/2 cups chopped onions
1 1/2 cups sliced celery
2 garlic cloves, minced
1 1/2 cups water
1 cup dry red wine, such as cabernet sauvignon
1/2 teaspoon dried thyme
1 1/4 teaspoons kosher salt
1/4 teaspoon fresh coarse ground black pepper
2 (14 1/2 ounce) cans no-salt-added stewed tomatoes, undrained
2 bay leaves
1 (2 1/4 ounce) can sliced ripe black olives, drained
2 tablespoons red wine vinegar
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Heat oil in large Dutch oven over medium-high heat.
  • Add beef and cook for 5 minutes, browning all sides.
  • Remove meat from pan.
  • Add mushrooms, carrots, onion, celery and garlic to the pan.
  • Cook 5 minutes, stirring occasionally.
  • Return beef to the pan.
  • Stir in water, and all the rest of the ingredients except the olives, red wine vinegar and parsley.
  • Bring to a boil.
  • Cover, reduce heat and simmer for 1 hour.
  • Stir in olives and cook for 30 minutes or until beef is tender.
  • Discard the bay leaves.
  • Stir in vinegar and sprinkle with parsley.

2 zucchini, cut into bite size pieces
3/4 lb beef stew meat, trimmed and cut into 1/2 inch pieces
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic, undrained
1/2 teaspoon pepper
2 inches cinnamon sticks

Steps:

  • Place zucchini in bottom of a slow cooker.
  • Add beef and remaining ingredients.
  • Cover with lid, and cook on high heat setting for 5 hours or until meat is tender, or cover and cook on high heat setting for 1 hour; reduce to low heat setting, cook 7 hours.
  • Remove and discard cinnamon stick before serving!

2 lbs boneless beef chuck
3 tablespoons all-purpose flour
1/2 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon dried oregano
1 large onion, finely chopped
4 shallots, sliced
2 tablespoons extra virgin olive oil
1 garlic clove, minced
1/2 cup beef broth
1/4 cup red wine
1/4 cup balsamic vinegar
1/2 cup dates, chopped, pitted

Steps:

  • whisk together flour, salt, pepper and organo.
  • chop the roast into cubes, one or two inches.
  • put beef in a plastic bag along with flour mixture.
  • shake up the bag to coat the meat well.
  • place instant pot in saute mode and add olive oil to grease the pot.
  • saute onions, garlic, shallots and meat together until lightly browned (about 4 or 5 minutes). don't burn it.
  • mix in broth, wine, balsamic vinegar and dates.
  • cancel saute mode, put lid on and seal valve. use manual mode to cook for 40 minutes.
  • when done, allow depressurize using 'natural release' method.
  • serve over rice, mashed potatoes, or calliflower.

I honestly don't remember where this one came from - I just have a photocopy. But it is an incredibly flavorful stew. Great over polenta, couscous, potatoes. Stored in a tightly covered container, this stew will freeze well for up to 6 months, though the basil will darken in color. You might want to freshen it up with some fresh shredded basil or chopped parsley.

2 lbs lean stewing beef, such as bottom round, cut into 1-1/2 inch cubes
2 tablespoons olive oil
2 medium onions, sliced
3 garlic cloves, thinly sliced
3/4 cup dry vermouth
1 (28 ounce) can peeled Italian tomatoes, coarsely chopped, juices reserved
2 teaspoons balsamic vinegar
1/4 teaspoon fresh ground black pepper
1/8 teaspoon crushed red pepper flakes
1/3 cup quartered and pitted kalamata olive
1/3 cup sun-dried tomato, strips drained
1/2 cup lightly packed fresh basil leaf, shredded

Steps:

  • Pat the meat dry. In a large flameproof casserole, heat the olive oil over moderately high heat. Add the meat in 2 batches and cook, turning, until nicely browned, about 5 minutes per batch. As the meat is cooked, remove it to a plate.
  • Add the onions and cook, stirring occasionally, until they are golden and beginning to brown around the edges, about 5 minutes. Add the garlic and cook until softened and fragrant, about 1 minute. Pour int he vermouth and boil until reduced by half, 1 to 2 minutes. Then add the chopped tomatoes with their juices, the vinegar, black pepper, hot pepper, and 1-1/2 cups water.
  • Add the meat to the sauce, along with any juices that have collected on the plate. Bring to a boil, reduce the heat to low, cover, and simmer 1-1/4 hours. Add the olives and simmer 20 to 30 minutes longer, or until the meat is tender.
  • Add the sun-dried tomatoes and simmer 5 minutes. (The stew can be made to this point up to 2 days in advance.) Just before serving, stir in the fresh basil.

2 (14 1/2 ounce) cans Italian-style diced tomatoes (do not drain)
1/2 teaspoon ground pepper
1 (2 inch) cinnamon sticks (or 1/2 teaspoon ground cinnamon)

Steps:

  • Place zucchini in bottom of a 3 1/2 quart slow cooker.
  • Add stew meat and remaining ingredients. Cover and cook on high setting 5 hours or until meat is tender.
  • One half hour before serving, remove cover from slow cooker and stir stew.

Number Of Ingredients 12

1 pound boneless bottom round roast, cut into 1-inch chunks
3 leeks, white and light green parts only, cleaned, halved lengthwise, and sliced
2 teaspoons herbes de provence
3/4 teaspoon salt
6 cloves garlic, minced
1 (28-ounce) can diced tomato with juice
1 cup dry red wine
1 tablespoon olive oil
1/2 pound brown mushrooms, sliced
1/2 cup mixed olives, pitted
3 tablespoons fresh basil, chopped
1 teaspoon orange zest

Steps:

  • Set Global Sun Oven out to preheat. Combine the beef, leeks, Herbes de Provence, 1/2 teaspoon of the salt, and all but 1 teaspoon of the garlic in a large pot. Add the tomatoes and wine; mix well. Cover and cook in GSO until the beef is fork tender, 2 to 3 hours. About 30 minutes prior to serving, heat the oil in a large skillet over medium-high heat. Add the mushrooms, the reserved garlic, and the remaining 1/4 teaspoon salt. Cook, stirring occasionally, until the mushrooms brown and any liquid evaporates, about 5 minutes. Stir the mushrooms and olives into the pot in the GSO. Cover and continue cooking until the mushrooms are tender, about 20 minutes. Combine the basil and orange zest in a small bowel; sprinkle over each serving.
