This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

2 lbs ground beef
1/2 red onion
1 1/2 cups quick oats
2 eggs
2 (4 ounce) cans tomato sauce
chili powder
garlic powder
onion powder
parsley
liquid smoke
Worcestershire sauce
2 cups ketchup
1 cup brown sugar

Steps:

  • Chop the onion then mix all the ingredients for the meat portion together, uncooked. All the seasonings should be eyeballed in -- just use your own knowledge of what tastes your family likes. Not too much of the liquid smoke or Worcestershire, but give a good few shakes of each. This really adds flavor. Mix together the ketchup and brown sugar for the topping and set aside.
  • Bake at 350°F for 30 minutes. Pull out the meatloaf and drain the excess juice from the pan. Put on the topping and bake for another 30 minutes. This goes very well with cheesy potatoes! Also, the leftovers can be used as meatloaf sandwiches, yummy!

The whole family will devour this Easy Meatloaf! It's super simple-making it perfect for all levels of cooks in the kitchen.

1 cup ketchup
2/3 cup brown sugar
2 tbsp lemon juice, (divided)
2 tsp dry mustard
2 pounds ground beef (lean)
4 bread slices
1/4 cup onion (diced)
1 egg (beaten)
1 beef bouillon cube (crushed)

Steps:

  • Preheat oven to 350.
  • Combine ketchup, brown sugar, 1 tbsp lemon juice and dry mustard in a small bowl and mix until smooth. Set aside.
  • Crumble bread slices in food processor until crumbled and uniform size.
  • Combine ground beef, shredded bread crumbs, onion, eggs, bouillon cube and remaining lemon juice in a large bowl. Add ½ of the ketchup mixture and mix until well combined. Form meat into a loaf and place in a casserole dish.
  • Bake for 1 hour. Drain fat from dish, then top with remaining ketchup mixture and bake an additional 10 minutes.

1 ounce onion soup mix
1 1/2 cups breadcrumbs
2 eggs
1/2 cup catsup
3/4 cup water

Steps:

  • Heat oven to 375 degrees. Combine all ingredients. Form into loaf in loaf pan. Bake 45 to 50 minutes.
  • To vary recipe I have made a mixture of hamburger and local grocery store breakfast sausage, so tender. I've also formed into meatballs and cooked in spagetti sauce in crockpot or on stove till done.

EASY OLD FASHIONED MEATLOAF

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

It's your basic meatloaf but kicked up! My husband hates meatloaf but when I make this he can't get enough!

1 1/2 lbs ground beef
26 -28 ounces spaghetti sauce, ragu chunky garden style is what I recommend
1 egg
1/4 cup plain breadcrumbs
2 cups of shredded mozzarella cheese
1 tablespoon finely chopped fresh parsley
salt and pepper, however much desired
wax paper

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix beef, 1/3 cup of sauce,egg, and bread crumbs.
  • Season with salt and pepper.
  • Roll out wax paper on table and flatten mixture on it.
  • Shape into a rectangle.
  • Sprinkle 1 1/2 cups of cheese and parsley down center leaving 3/4 inch border.
  • Then roll the meatloaf like a jelly roll tightly and be sure when rolling to pull the wax paper off.
  • Press and seal the ends closed put in to pan.
  • Bake uncovered 45 minutes. Pour remaining sauce and cheese on top and bake an additional 15 minutes or until cheese is melted.

1 teaspoon all-purpose seasoning (I used lipton savory herb and garlic seasoning)
1/2 cup celery, chopped

  • combine all ingredients together.
  • shape into a 8 x 4 casserole dish.

DINER MEATLOAF AND MEATBALLS MIXTURE

This is the recipe that my Mother used for both her meatloaf and meatballs prior to cooking. Very simple, quick and few ingredients needed. Freezes easily!!!! I usually double the recipe and freeze half of the amount. Good for OAMC.

1 onion, minced
1/2-3/4 cup saltine crackers, crushed
1 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten
1/2 cup milk
1 lb ground beef

Steps:

  • Combine onion, saltine crackers, salt, pepper, egg and milk.
  • Add ground beef and mix to combine.
  • At this point, you can shape into loaves, wrap in plastic wrap, place in freezer bag and freeze for later use.
  • If using for meatballs, spread mixture out on plastic wrap in a flat square; put in freezer bag and freeze. I use defrost level in microwave to defrost 1 lb ground beef.
  • For meatloaf, we simply pour a layer of ketchup over the loaf and bake for 45 minutes to 1 hour at 350 degrees Fahrenheit.
  • For meatballs, shape into desired size; brown in fry pan with 1 tablespoon oil. Add meatballs to tomato/spaghetti sauce or chili sauce with grape jelly sauce.
  • Variation: Feel free to add garlic powder or minced garlic and/or Parmesan cheese.
