DAD'S MEATLOAF WITH TOMATO RELISH



Dad's Meatloaf with Tomato Relish image

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1 cup shredded sharp Cheddar
3/4 cup chopped cooked bacon
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-4 loaf pan with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, Cheddar, bacon, chives, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands to mix together until combined well. Transfer the mixture to prepared loaf pan. Bake the meatloaf for 30 minutes.
  • Meanwhile, stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl.
  • Remove the meatloaf from the oven and brush the top and sides all over with the ketchup glaze. Bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

MEATLOAF BURGER WITH TOMATO BACON RELISH

two slices white bread, torn
three eggs, beaten
1/2 cup onions, diced
one garlic clove, minced
1/4 cup minced fresh parsley
1 teaspoon worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 pound ground chuck
onion mixture, see above
grilled french bread
tomato bacon relish, recipe follows

Steps:

  • 1. soak the bread and eggs in a mixing bowl. Let stand while preparing remaining ingredients. Sauté onions and garlic in the skillet in butter over medium-high heat, about three minutes. Cool five minutes. Add parsley, Worcestershire, salt and pepper into bread mixture, then mash together.
  • 2. Mix bread mixture, cooled onion mixture, and ground beef. Divide evenly into four portions and shape to match bread shape. Cover and chill while preparing the relish. Preheat grill or grill pan to medium-high. Grill burgers on medium high to 160°, about 4 or 5 minutes on each side. Serve on slices of grilled French bread and top with tomato bacon relish.
  • 3. Tomato bacon relish: two strips thick sliced bacon, chopped 1/2 cup onions, chopped 1/4 cup Brown sugar 1/4 cup prepared yellow mustard 1/4 cup catsup 1/2 cup tomatoes, seeded and diced sauté bacon until crisp in a frying pan. Add onion and sauté three more minutes. Stir in sugar, mustard, and catsup. Add tomatoes and simmer one minute. Makes about 1 cup.

Tomato relish:
2 tablespoons olive oil
2 garlic cloves, minced
2 bay leaves
1 onion, diced
2 red bell peppers, seeded and chopped
2 tomatoes, seeded and chopped
1/4 cup chopped flat-leaf parsley
1 tablespoon Worcestershire sauce
12 ounces bottled ketchup
1 1/2 pounds ground beef
1 pound ground pork
3 eggs
2 tablespoons fresh thyme leaves
Salt and pepper, to taste

Steps:

  • For the tomato relish, coat a skillet with olive oil and place over medium heat. Saute the garlic, bay leaves, and onion together until they caramelize. Add the red peppers and cook until soft. Add the tomatoes, parsley and Worcestershire sauce, cook for 10 minutes until the vegetables cook down. Stir in the ketchup and continue to cook until heated through, about 5 minutes. Remove from heat.
  • In a large mixing bowl, combine the ground beef and pork together with your hands. Fold in 1/2 cup of the tomato relish. Add the eggs and thyme and mix with both hands just until blended. Do not over mix or the meat loaf will become dense and tough. Season with salt and pepper. Coat a 9 by 5-inch loaf pan with nonstick spray. Fill the loaf pan with the meat mixture, mounding it a bit on top. Generously spoon some tomato relish on the surface. When cooked, this will form a top crust. Place the loaf pan on a cookie sheet and bake in a preheated 350 degree F oven for 1 to 1 1/2 hours or until the meat loaf has pulled away from the sides of the pan. Remove from pan, allow to cool slightly before cutting into slices. Serve with remaining sauce on the side.

1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 400 degrees F.
  • Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
  • Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
  • Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Mix up your midweek dinner options and shape beef mince and smoked bacon lardons into a hearty loaf, topped with tangy onion marmalade

1 tbsp vegetable oil , plus extra for greasing
1 onion , chopped
200g smoked bacon lardons
1 tsp smoked paprika
50g fresh breadcrumbs
500g beef mince
1 egg
2 garlic cloves , crushed
500g pack passata
2 tbsp onion marmalade
small pack basil , leaves only

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large saucepan and fry the onion and lardons until the onion is soft and the lardons are cooked through and golden at the edges. Remove from the heat and add the smoked paprika, breadcrumbs, mince, egg and half of the crushed garlic. Season and stir really well. Grease a 450g loaf tin with a little oil, then fill with the meat mixture. Spread 1 tbsp of the onion marmalade evenly over the top and place on a tray in the oven for 35-40 mins.
  • Meanwhile, pour the passata into a saucepan over a low heat, add the remaining garlic, the rest of the onion marmalade and half of the basil. Season, stir and heat gently until ready to serve.
  • Once the meatloaf is cooked through, take it out of the oven and let it sit for a few mins before turning out onto a plate to slice. Serve with the tomato sauce and the rest of the basil leaves scattered over.
