I was hungry for meatloaf but I was the only one home. Found this quick and easy meatloaf that is made for one and made in the microwave. Could also make this in the oven if you prefer.

Number Of Ingredients 6

2 tablespoons 2% low-fat milk
1 tablespoon ketchup
2 tablespoons quick-cooking oats
1 teaspoon onion soup mix
1/4 lb lean ground beef
additional ketchup (for topping)

Steps:

  • In a bowl, mix milk, ketchup, oats and soup mix.
  • Fold beef into mixture and mix well.
  • Put into a microwave-safe mug or custard cup coated with cooking spray.
  • Cover and microwave on high for 3 minutes or until meat is no longer pink and a meat thermometer reads 160°.
  • Drain meatloaf and let stand for 3 minutes.
  • Top with ketchup if desired.

1 egg, beaten
1/4 cup frozen corn, thawed
1/4 cup seasoned bread crumbs
1 teaspoon Dijon mustard
1/8 teaspoon dried thyme
4 ounces ground beef
2 ounces bulk pork sausage
1 to 2 tablespoons ketchup

Steps:

  • In a bowl, combine the first five ingredients. Add meat and mix well. Shape into a 5-in. x 3-in. loaf. Place in an ungreased shallow baking pan. Bake, uncovered, at 350° for 15 minutes. Drizzle with ketchup. Bake 20 minutes longer or until no pink remains and a thermometer reads 160°.

2/3 cup whole milk
3 slices bread, torn
1/2 cup chopped onion
1/2 cup grated carrot
1 cup shredded cheddar or part-skim mozzarella cheese

1 teaspoon dried basil, thyme or sage, optional
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef

1/2 cup tomato sauce

2 tablespoons milk
1/2 teaspoon Worcestershire sauce
1/4 lb ground beef
1 green onion, thinly sliced
1/4 teaspoon seasoning salt
1/8 teaspoon ground black pepper

  • Place the torn bread into a small bowl, and pour in the milk and Worcestershire sauce; set aside for a few minutes for the bread to absorb the liquid. Add the ground beef, green onion, seasoned salt, and pepper to the bread; mix well and place into a 10 ounce, microwave-safe mug.
