MEATLOAF IN A MUG
I was hungry for meatloaf but I was the only one home. Found this quick and easy meatloaf that is made for one and made in the microwave. Could also make this in the oven if you prefer.

Steps:
- In a bowl, mix milk, ketchup, oats and soup mix.
- Fold beef into mixture and mix well.
- Put into a microwave-safe mug or custard cup coated with cooking spray.
- Cover and microwave on high for 3 minutes or until meat is no longer pink and a meat thermometer reads 160°.
- Drain meatloaf and let stand for 3 minutes.
- Top with ketchup if desired.

- In a bowl, combine the first five ingredients. Add meat and mix well. Shape into a 5-in. x 3-in. loaf. Place in an ungreased shallow baking pan. Bake, uncovered, at 350° for 15 minutes. Drizzle with ketchup. Bake 20 minutes longer or until no pink remains and a thermometer reads 160°.

- In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well. , Shape into a 7-1/2x3-1/2x2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350° for 45 minutes. , Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a thermometer reads 160°, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.

- Place the torn bread into a small bowl, and pour in the milk and Worcestershire sauce; set aside for a few minutes for the bread to absorb the liquid. Add the ground beef, green onion, seasoned salt, and pepper to the bread; mix well and place into a 10 ounce, microwave-safe mug.
- Cook in the microwave at 70 percent power until the meatloaf is firm and no longer pink in the center, 4 to 5 1/2 minutes depending on the microwave. Remove the meatloaf from the microwave, and allow to stand 2 minutes before serving.
