Nothing says home cooking like meatloaf, all the better when it's an old family recipe, like this one.

4 slices white bread, torn into pieces
2 1/2 pounds ground beef
1 medium yellow onion, peeled and cut into eighths
2 cloves garlic
2 stalks celery, cut into 2-inch pieces
2 carrots, peeled and cut into 2-inch pieces
1/2 cup flat-leaf parsley leaves
1 large egg
1 cup ketchup
3 teaspoons dry mustard
1 tablespoon coarse salt
2 teaspoons freshly ground black pepper
2 tablespoons brown sugar

Steps:

  • Heat oven to 375 degrees. Place bread in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. Transfer to a medium bowl, and add ground beef.
  • Place onion, garlic, celery, carrots, and parsley in the bowl of a food processor fitted with the steel blade; pulse until fine. Add to meat mixture, using hands to mix well. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
  • Combine remaining 1/2 cup ketchup, remaining teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.
  • Brush mixture over meatloaf; place in the oven with a baking pan set on the rack below to catch drippings. Cook until a meat thermometer inserted in the center reads 160 degrees, about 90 minutes. If top gets too dark, cover with foil, and continue baking.

This is so easy and good! I am a sucker for meatloaf recipes, sometimes I am pleased, but so often, I go back to the basics. I hope you enjoy this as much as my family does. Makes excellent cold or hot sandwiches the next day!

2 lbs ground beef
1 medium onion, finely chopped
1 stalk celery, finely chopped
1 medium carrot, peeled
1 cup old-fashioned oatmeal
2 eggs
1/4 cup milk
1/4 cup ketchup
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon celery salt
1/8 teaspoon paprika

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl, mix ground beef with onions and celery. Peel carrot into short strips, chop and add to meat. Set aside.
  • In a small mixing bowl, lightly beat eggs, then add milk, ketchup and spices and blend. Combine wet mixture with meat and mix together.
  • Sprinkle oatmeal over meat mixture and gently mix all together until oatmeal is well combined.
  • Shape into loaf shape and place in metal loaf pan; drizzle top of loaf with ketchup (I place my ketchup in a small squirt-top dispenser for convenience). Bake for approximately 1 hr 15 minutes.
  • Remove from oven, let stand about 15 minutes. Slice and serve.

This recipe came out of curiosity. I had often wondered why milk was added to so many meatloaf recipes. Well I found out why. It adds a moisture and almost creaminess to it. So moist and tender. I also make mine in single sized loaves. Makes for easy clean up and easy lunches the next day.

2 lb 80/20 ground beef
1 small yellow onion - chopped
1 1/2 c bread crumbs
1 1/2 c milk
1/3 c fresh parsley chopped
2 tsp kosher salt
1/2 tsp black pepper
TOPPING
1/2 c ketchup
2 Tbsp brown sugar
1 tsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350 degrees and place a baking rack on a foil lined cookie sheet.
  • 2. In a small bowl place bread crumbs and milk to soak just until most of the milk is absorbed. In a 2nd small bowl mix together TOPPING ingredients.
  • 3. In a large bowl combine beef, onion, parsley, bread crumbs, salt, and pepper. Mix with clean hands until well combined
  • 4. Divide meat in to 4 equal portions and place on baking rack. Top with ketchup mixture. Bake for 45-1 hour. Loaves are done when internal temp is 170 degrees.
