Meatballs and Gravy image

"CHRISTMAS was the time when our family forgot about the food budget and splurged on one special meal. I can still see Grandmother making dozens of these little meatballs! The hint of spices gives them a savory taste that makes them authentically Norwegian."

Ground sausage makes it easy to cook up meatballs and gravy over rice in under 30 minutes!

Provided by Andi Gleeson

Categories     Main

Time 20m

Number Of Ingredients 6

1 pound Italian turkey sausage (sweet or hot, casings removed)
2 tablespoons olive or vegetable oil
2 tablespoons flour
2 cups reduced-sodium chicken or beef broth
1/4 cup milk
3 cups rice (cooked)

Steps:

  • Place ground sausage in a bowl. Spray medium skillet with cooking spray and heat over medium-high heat.
  • Scoop sausage with a medium disher (or cookie scoop) directly into the hot skillet. (If you don't have a disher, form rounded tablespoons of meat into balls by hand.)
  • Cook meatballs about 5 minutes until brown on one side, then use tongs to flip. Cook an additional 5-7 minutes until cooked through. Transfer meatballs to a clean bowl.
  • Reduce heat to medium, and add flour and oil to the skillet, whisking together until smooth. Cook 2-3 minutes until flour mixture starts to brown, then very slowly add broth, about ¼ c. at a time, whisking constantly. Stir in milk, and bring gravy to a low boil.
  • Return meatballs to the gravy, and spoon gravy over the meat. Simmer for a few minutes before serving over cooked rice.

this has been in my family for decades. sure, its a regular rice and gravy recipe but its a family favorite thats been passed down through the years. Great old fashioned southern dinner here...You can use regular old meatballs, sausage, or even left over chicken.

1 lb ground beef
Tony Chachere's Seasoning
garlic powder

Steps:

  • defrost and season ground meat.add bread crumbs to help meatballs stick. roll into meatballs.

Simple Baked Meatballs with Rice & Gravy Recipe - (3.9/5) image

Provided by juliedee29

Number Of Ingredients 9

16 to 20 ounces ground turkey or beef
2 tablespoons soy sauce
1 tablespoon worcestershire sauce
1 teaspoon chili powder
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 (10-ounce) can condensed cream of mushroom soup, I used reduced-fat
2 cups chicken broth
1 cup long grain white rice

Steps:

  • Preheat oven to 375°F. Spray a 9 x 13" baking dish with cooking spray and set aside. In a large bowl, stir together ground meat, soy sauce, Worcestershire sauce, chili powder, onion powder, and garlic powder. In another bowl, whisk together cream of mushroom soup and chicken broth. Add rice, and stir. Pour the rice mixture into the prepared baking dish. Using a medium disher or a tablespoon, evenly measure meatballs and drop into the rice mixture. Arrange in straight lines to be sure they all fit. Cover pan with foil, and bake for 40 minutes. Remove foil, and bake an additional 15 to 20 minutes until meatballs are cooked through and most of the liquid is absorbed.
