3 cups frozen broccoli florets, thawed
2 medium potatoes, peeled and cubed
3 medium carrots, sliced
1 medium onion, chopped
1 pound smoked kielbasa or Polish sausage, halved and cut into 1-inch pieces
1/2 pound lean ground beef
1 can (14-1/2 ounces) beef broth
Lemon-pepper seasoning to taste

Steps:

  • Preheat oven to 350°. Combine broccoli, potatoes, carrots and onion. Transfer to a greased 13x9-in. baking dish. Sprinkle with sausage. Shape beef into 1-in. balls; arrange over top. Pour broth over casserole; sprinkle with lemon-pepper seasoning. Bake, uncovered, until meatballs are no longer pink, about 40 minutes.

As the grandfather of six oft-hungry children, Pierre Franey sought to develop dishes that would "capture their attention." This hearty, kid-friendly casserole of meatballs, sausage, onions, peppers and mushrooms did not disappoint. It's sort of a cross between a casserole and a stew, and can be served over pasta or polenta, or with a huge hunk of bread to sop up the herb-y tomato sauce. If you'd like, you can easily substitute ground chicken, turkey, pork or veal for the beef in the meatballs (or any combination of them all). The meatballs are seasoned with Parmesan cheese, nutmeg, cumin, garlic, parsley, salt and pepper. Depending on the composition of the meatballs, you might want to try other favorite spices, too, like ginger, coriander seed or fennel.

3/4 pound ground turkey, chicken, beef, pork or veal or any combination
1/2 cup fresh bread crumbs
1/4 cup grated Parmesan cheese
1 egg
1/4 cup fresh or canned chicken broth
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cumin
1 teaspoon plus 1 tablespoon chopped garlic
4 teaspoons chopped parsley
Salt and freshly ground pepper to taste
2 tablespoons vegetable oil
4 sweet or hot Italian sausages, 1 pound
1 cup chopped onions
1/4 pound mushrooms, sliced
1 large green pepper, cored, seeded and cut into 1-inch pieces
2 cups crushed canned tomatoes
2 teaspoons chopped fresh rosemary or 1 teaspoon dried
1/2 cup dry white wine
1 bay leaf
4 tablespoons chopped fresh basil or Italian parsley

Steps:

  • Put the meat in a mixing bowl and add the bread crumbs, cheese, egg, broth, nutmeg, cumin, 1 teaspoon of the garlic, parsley, salt and pepper. Blend well and shape the mixture into 24 small meatballs.
  • Heat the oil in a large nonstick or enamelware skillet and add the meatballs. Cook, turning often, until browned on all sides, about 10 minutes. Remove the meatballs and set aside. Prick the sausages with a fork and add them to the pan. Cook, turning often, until lightly browned on all sides, about 5 minutes.
  • Scatter the onions, mushrooms, green pepper and remaining 1 tablespoon garlic around the sausages, and sauté, about 5 minutes. Add the meatballs and the accumulated juices back to the pan (the pan will be crowded).
  • Add the tomatoes, rosemary, wine and bay leaf and stir to dissolve any browned particles on the bottom of the skillet. Cover closely and simmer for 15 minutes. Remove the bay leaf and sprinkle with basil when served.

Tradtional, Italian style, juicy meatballs. This can be cooked with beef, turky, chicken etc etc mince. It just depends on what your tastes are! This is a fab recipe!Serve it with a simple Sauce ( may I suggest my simple Italian Sauce ) as the meatballs have a flavour all of their own.

300 g premium ground beef
150 g sweet Italian sausage links, cases removed
2 1/2 slices bread
2 tablespoons grated parmesan cheese
1 teaspoon minced sweet onions or 1 teaspoon white onion
1 teaspoon oregano, chopped
1 teaspoon basil, chopped
1/2 cup milk
1 teaspoon ground black pepper
1 teaspoon flat-leaf Italian parsley
1 teaspoon garlic
salt
1 egg
olive oil

Steps:

  • In a bowl soak the bread in the milk until it soaks up most of milk.
  • Once bread has done this, remove from bowl,disgard milk, roughly brake bread apart and place all of the other ingredients in a bowl with the bread and mix together.
  • Roll the mixture into small/medium sized balls with your hands.
  • Brown meat balls in pan with oil then place into oven for 10 minutes at 225 degrees.
  • Add to a great Italian sauce and simmer for 60 minutes.

I felt like carbs for dinner but also wanted something more than just plain spaghetti. I also needed something quick to put out for dinner as dinner was in an hour. Working parents all know this feeling.

12 large meatballs (Italian sausage or ground beef, can use more to suit family needs and size of meatballs)
16 ounces tomato sauce
16 ounces crushed tomatoes (or use fresh cut up)
1 (6 ounce) can tomato paste
1 medium chopped onion
1 jalapeno pepper (optional)
1/4 cup water
boiling water
1 tablespoon basil
1 tablespoon oregano
1 teaspoon salt
1 tablespoon garlic powder (I use more- we love garlic, fresh garlic can be substituted)
8 ounces shredded mozzarella cheese
4 ounces shredded mozzarella cheese
16 ounces ziti pasta (any pasta with a grab- ridges to hold sauce)

Steps:

  • If meatballs are frozen, thaw in microwave to just warmed.
  • Put tomato sauce, crushed tomatoes tomato paste, chopped onion, jalapeno pepper, 1/4 cup water, 8 oz of cheese, and seasonings in a 9 x 13 casserole dish and blend together.
  • In the meantime, boil water and make noodles to al dente.
  • Drain noodles, add to casserole dish and blend in, making sure sauce covers all the noodles.
  • Add meatballs and gently blend in cheese.
  • Sprinkle 4 oz of cheese on top, covering casserole dish.
  • Put in oven at 350°F for 30 minutes.
  • Check for burning of cheese (may cover with aluminum foil gently to prevent some burning or browning of cheese).
  • Cooking is to warm through and through and to melt cheese. If your oven cooks hot or altitude is high, adjust time in oven.
  • Options:.
  • I have also made this in a smaller casserole dish and microwaved for a faster dinner in less than 20 minutes.
  • May substitute cheese flavors such as Fiesta blend, Taco blend to give another flavor.
  • Measurements are not exact on spices as I eyeball them, cheese is a few handfuls in the dish and 1 handful on top.
  • My meatballs are Italian sausage meatballs but can be turkey, ground beef or a mixture of any kind.
  • NOTE: prep does not include boiling water.

16 ounces spaghetti sauce
1 1/2 cups water
3 cups uncooked mafalda pasta (mini lasagna nodles)
16 ounces frozen peppers and onions (stir fry mixture)
1 lb cooked frozen meatballs
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • In 2 quart glass baking dish, mix spaghetti sauce and water until blended. Add uncooked noodles, stir-fry mixture and meatballs and stir to coat. Make sure noodles are completely covered with sauce mixture.
  • Preheat oven to 350 degrees. Bake casserole, covered, for 45 minutes. Uncover, sprinkle with cheese, and bake uncovered 5-10 minutes longer until casserole is bubbly, noodles are tender and cheese is melted.

Steps:

  • Combine all ingredients in a 4- or 5-qt. slow cooker. Cook, covered, on low until heated through, 4-6 hours, stirring every hour.
