1 large egg, lightly beaten
1/3 cup evaporated milk
2 tablespoons Worcestershire sauce
3/4 cup quick-cooking oats
1/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1/8 teaspoon pepper
1-1/2 pounds ground beef
1/4 cup ketchup

Steps:

  • In a large bowl, combine the egg, milk, Worcestershire sauce, oats, onion, salt, sage and pepper. Crumble beef over mixture and mix well. , Press into an ungreased 8x4-in. loaf pan. Bake, uncovered, at 350° for 1-1/4 hours; drain., Spread ketchup over meat loaf. Bake until meat is no longer pink and a thermometer reads 160°, about 10 minutes longer. Let stand for 10 minutes before slicing.

A long time ago on the side of my Quaker oat box, there was a similar recipe for meatloaf. I tried it and found that the oats were a perfect substitute for breadcrumbs, healthier and solved the wheat allergy problem. I have since used oats in my ground meat recipes in place of bread crumbs. No one can ever tell and it absorbs the juices perfectly. Especially handy if you run out of bread crumbs too.

1 lb ground beef or 1 lb ground chicken
1 egg
1/4 cup ketchup
1 cup quick oats
1 tablespoon onion soup mix
1 teaspoon parsley flakes
1/2 teaspoon garlic powder
1 teaspoon paprika

Steps:

  • Mix all ingredients together and form into a loaf.
  • Bake at 350 for 45 minutes-1 hour.
  • Uncover for last 5 minutes.

This meatloaf is a family favorite. My children (9, 6, and 3) love it, too. I've shared this loaf with families who HATE meatloaf and they've all asked for the recipe. I use whatever organic ground pork or organic ground beef that I have on hand as long as I use at least 1# of each. Can be made into 1 large loaf or 2 small loafs.

2 eggs
1 1/2 cups quick oats
1 md. onion (finely chopped)
1/2 teaspoon black pepper
3 lbs ground meat (combination of ground pork and lean ground beef)
1/4 cup packed brown sugar
1/2 cup ketchup (Organic without HFCS)

Steps:

  • Combine eggs, onion, black pepper, and oatmeal in large bowl. Using your hands, add ground meats and coat evenly with oatmeal mixture.
  • Spread in 10 x 5 loaf or 3-quart rectangular dish.
  • Bake 1 1/4 hours at 350°F
  • After baking, with a spoon, remove excess grease from loaf (if you use lean meat, you will have very little grease).
  • Combine brown sugar and ketchup topping. Spread over top of loaf and bake an additional 10 minutes.

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

2 pounds lean ground beef
1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten
2 tablespoons minced dried onion
¼ teaspoon granulated garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
  • Remove from the oven and spread ketchup over top. Serve with additional ketchup.

1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. As good as the meatloaf is, it would not be complete without the sauce. Mom formed the mixture into a loaf and placed it in the middle of a roast pan to cook. Twenty minutes before it was done, the grease/liquid was drained off. She then covered the meatloaf with 1/2 cup of grated onion, followed by 1 cup of (Heinz) ketchup mixed with 4T of brown sugar, 4T vinegar, 2T Worchestershire Sauce; heated mixed ingredients but did not boil. I always make a double batch to spoon over each piece. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.
