Next time you decide to make meatloaf, be sure to use this recipe for the seasoning mix. This recipe is enough for one pound of beef, so plan accordingly.

1 lb ground beef, lean
2 eggs, beaten
1 c plain panko crumbs
3/4 c ketchup, divided
meat loaf seasoning.
MEAT LOAF SEASONING
1 tsp dried mustard (if you don't have any 1tbs of prepared mustard = 1 tsp dry.
1 tsp paprika
1/2 tsp salt
3/4 tsp dried thyme
3/4 tsp basil
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder

Steps:

  • 1. Preheat oven to 350 F. Lightly grease a baking pan.
  • 2. Place the ground beef, eggs, and 1/2 cup Ketchup in large bowl.
  • 3. Mix by hand and add the meat loaf seasoning. Form into a loaf shape and place in prepared baking pan. Drizzle with remaining 1/4 cup of ketchup.
  • 4. Bake 1 hour in preheated oven.

1 lb hamburger, lean
1/2 teaspoon pepper
2 cups whole wheat bread crumbs
1 1/2 teaspoons dry mustard
2 eggs, beaten
3/4 milk, fat free
1 1/2 teaspoons salt
2 tablespoons Worcestershire sauce
1 onion, chopped
1 bell pepper, chopped

Steps:

  • Preheat oven to 350 degrees.
  • *To make fresh bread crumbs, tear sliced whole wheat bread into pieces and add to blender and pulse until all uniform "crumbs".
  • Mix together all ingredients in a plastic baggie and spray casserole or meatloaf pan or muffin tin with butter spray and add meat mixture and press into selected pan.
  • Bake in 350 degree oven for 45 minutes.
  • NOTE: Chopped onions and chopped green peppers can be added if desired before baking.When meatloaf is done you can top with ketchup if desired and/or cheddar cheese.
