My mom's meat loaf is inarguably better than yours, but this is not my mom's meat loaf recipe. This one is an amalgam, intended to evoke all the important meat loaves in my life-and there have been many: The meat loaf I'd get at the family table as a child; the meat loaf I'd find (if I was lucky) in the steam table in the school cafeteria, usually festering in a pool of graying commercial gravy (God, I loved that stuff-especially when stoned); the meat loaf in the familiar foil tray of a Swanson TV dinner (which freed me from the oppression of a loving dinner table!); and the meat loaf my bosses insisted I keep on the menu at my first chef job-the restaurant failed, but the meat loaf was quite good. This, then is the sum of all those experiences.

2 1/2 tablespoons canola oil
1 large yellow or white onion, peeled and very finely chopped
3 ribs celery, very finely chopped
2 sprigs fresh marjoram, leaves only, very finely chopped
3 sprigs fresh thyme, leaves only, very finely chopped
Salt and finely ground black pepper to taste
2 pounds ground beef chuck
1 1/3 pounds ground veal
3 eggs, lightly beaten
1 cup panko bread crumbs
1/4 cup tomato paste
3 tablespoons unsalted butter
1 pound cremini mushrooms, diced
2 large or 3 to 4 shallots, peeled and finely chopped (about 1/2 cup)
2 tablespoons all-purpose flour
1 1/4 cups veal stock
1/2 cup heavy cream

Steps:

  • In a large, heavy-bottom sauté pan, heat 2 tablespoons of the oil over medium heat and add the onion, celery, marjoram, and thyme. Season with salt and pepper and cook over medium-low heat, stirring regularly with a wooden spoon, until the vegetables are soft and translucent but not browned. Remove from the heat and transfer to a large mixing bowl to cool.
  • Preheat the oven to 350˚F.
  • Once the vegetable mixture is cool, add the beef, veal, eggs, bread crumbs, and about 2 teaspoons salt and 1/2 teaspoon pepper and mix well with scrupulously clean or rubber-gloved hands. Use the remaining 1/2 tablespoon oil to grease a loaf pan and transfer the mixture to the pan, packing it down gently. Cover the loaf with foil and place the loaf pan on a sheet pan. Cook in the oven for 1 hour.
  • Remove the foil and spread the top of the meat loaf with the tomato paste. Continue to cook for another 30 to 45 minutes, until the instant-read thermometer inserted into the center reaches 150˚F. Remove from the oven and let the meat loaf rest, in the loaf pan, on a wire rack.
  • While it rests, make the gravy. In a large, heavy-bottom sauté pan, heat the butter until it foams and subsides. Add the diced mushrooms and cook over high heat, stirring occasionally, until their released juices evaporate and the mushrooms begin to squeak against the surface of the pan when stirred. Add the shallots and salt and pepper to taste and continue to cook until the mushrooms get browned and the shallots are translucent or slightly golden, 3 to 5 minutes. Sprinkle the flour over the mushrooms and stir well to evenly coat. Cook over medium heat, stirring more or less constantly, for about 2 minutes, to cook off the raw flour taste, then stir in the stock. Whisk the mixture to pull the stuck flour up from the surface of the pan and into the gravy. Add a splash more stock or water if necessary if the mixture seems too thick, then reduce the heat to low and stir in the cream. Taste and season with salt and pepper as needed.
  • Serve the meat loaf in slices, with the gravy ladled over or alongside. Accompany with mashed potatoes if you like.

These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

2 lbs ground beef
6 pieces bread, broken into small bits (potato bread works great, but I usually use white bread)
1 envelope onion soup mix, dry
to taste salt, to taste (because of the soup mix, you may not need it, although we still do)
1/2 teaspoon pepper
2 tablespoons ketchup
1/2 teaspoon garlic powder
2 teaspoons parsley flakes
2 eggs
2 envelopes brown gravy mix
2 cups water

Steps:

  • Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
  • Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
  • Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
  • Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
  • Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
  • When gravy has thickened, place burgers back in the pan and cover.
  • Simmer for about 20 minutes, or until burgers are done.
  • Serve with mashed potatoes or egg noodles.

EMERIL'S MEAT BALLS AND RED GRAVY

2 slices of white bread
1/2 cup milk
1/3 pound ground beef
1/3 pound ground veal
1/3 pound ground pork
1/2 cup minced onions
4 tablespoons olive oil
2 cups chopped onions
Salt
Freshly ground black pepper
2 tablespoons chopped garlic
2 (28 ounce) can of peeled, seeded and chopped tomatoes
1 small can tomato paste
2 cups water
1 pound of dried spaghetti
4 ounces Parmesan Reggiano cheese

Steps:

  • Place the bread in a shallow baking dish. Pour the milk over the bread and let sit for a couple of minutes. In mixing bowl, combine all of the meats together. Season with salt and pepper. Add the minced onions, 1 tablespoon garlic, parsley and bread. Mix well. Season with salt and pepper. Form the mixture into small balls. In a large skillet, heat 2 tablespoons of the oil. When the oil is hot add the meatballs and brown for 4 to 6 minutes. Remove from the pan and drain on paper towels. In a large saucepan, heat the remaining oil. Add the onions. Season with salt and pepper. Cook for 4 to5 minutes or until the onions are soft and clear in color. Add the remaining garlic and tomatoes. Season with salt and pepper. Cook for 30 minutes. Whisk the tomato paste and water together. Add to the tomatoes. Add the meatballs. Bring the liquid to a boil, over high heat. Turn the heat down to medium-low and simmer for 4 hours, stirring occasionally. Reseason with salt and pepper. Bring a pot of salted water to a boil. Add the pasta and cook until tender, about 8 minutes. Remove from the heat and drain. Drizzle the pasta with olive oil. Season the pasta with salt and pepper. Using a box grater, grate the cheese. To serve, mound the pasta in the center of each bowl. Spoon the meat balls and sauce over the pasta. Garnish with the grated cheese.

SWEDISH "MEAT" BALLS WITH GRAVY (VEGAN)

That one uses a whole 2 cups worth of soy creamer...granted, that would make it deliciously creamy, I tried to lighten that up a bit (you could adjust the broth-creamer ratio as you wish). I also changed the meatballs up by using TVP instead of a packaged sausage product which we just can't find where I live.

1/2 cup breadcrumbs
1/4 cup plain soymilk (or rice milk)
1/2 cup vegetable broth
1/2 cup textured vegetable protein
1/2 onion, finely diced
1 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
1/4 teaspoon nutmeg, to taste
1/4 teaspoon sea salt, to taste
black pepper
extra vegetable broth
3 tablespoons canola oil
6 button mushrooms, halved and then sliced
1/3 cup soy coffee creamer
2 tablespoons cornstarch
1 1/2 cups vegetable broth
2 tablespoons nutritional yeast
1 pinch nutmeg
1 dash Braggs liquid aminos

Steps:

  • In a medium bowl combine the breadcrumbs with the soy or rice milk. Set aside. Heat up the vegetable broth in a pyrex measuring cup and then add in the dry TVP. Mix together well and let the TVP absorb for a few minutes. While that sits, dice up your onion.
  • Mix together the breadcrumb mixture with the TVP, about 2 tbsp of the onion. the parlsey flakes, garlic powder, nutmeg, salt and pepper. Adjust the salt to taste as it will really depend on how seasoned your veggie broth is. You want the mixture to hold together when formed into a ball in your hand - you may need to add a little extra broth, maybe a few tablespoons. I find pushing down with the spoon as you mix helps to combine everything. Form into balls, 1 1/2 inches in diameter (should yield 12).
  • Heat up the oil in a saute pan, add in the "meat" balls and brown on all sides as best you can. When complete, place them into a casserole dish and set aside.
  • Put your oven on to 350 degrees.
  • Clean out your saute pan of any bits and then return to medium heat. Saute the rest of the onion and the mushrooms for about 5 minutes until the onions are translucent.
  • In a bowl whisk together 1/3 cup soy creamer (or more if you choose) with the corn starch. Mix in 1 1/2 cups veggie broth, or less if you're using more creamer, along with the nutritional yeast and a pinch of nutmeg.
  • Pour the broth mixture into the pan with mushrooms & onions, bring up to a gentle boil, stirring well to get a smooth sauce. Turn heat down and let it simmer for just a few minutes. Add in some braggs for flavour or colour if you choose.
  • Pour the gravy over the meatballs and bake in the oven for about 20 minutes until bubbly. Serve over noodles or mashed potatoes.

It is a recipe rooted in the culinary traditions of the South Carolina coast and benefits mightily from the use of fresh shrimp and crab.

2 tablespoons olive oil
4 cloves garlic, peeled and finely chopped
1 large Spanish onion, diced

1 red bell pepper, diced
1 1/4 cups all-purpose flour
2 tablespoons fresh sage leaves, rubbed
1 tablespoon fresh thyme leaves, finely chopped
1/2 cup dry sherry
1/4 cup Worcestershire sauce
3 pinches nutmeg
2 pinches cayenne pepper
3 to 4 cups clam juice, or fish or chicken stock
1 tablespoon tomato paste
Kosher salt and freshly ground black pepper to taste
3 pounds large shrimp, shelled and butterflied

Steps:

  • In a large, heavy-bottomed pot or Dutch oven set over medium heat, melt butter with olive oil. When the butter begins to foam, add garlic, onion, celery and pepper, and sauté until onion is translucent, stirring often, approximately 10 minutes. Adjust heat to high, add flour and stir briskly to make a blended, smooth roux. Continue cooking until the roux begins to brown, about 5 minutes. Reduce the heat to medium low, and continue to cook, stirring often, for an additional 20 to 30 minutes, until the mixture has turned a deep brown. Be careful not to burn it.
  • Add sage, thyme, sherry, Worcestershire sauce, nutmeg, cayenne pepper and clam juice or stock, and stir to combine, then return the heat to medium. When the mixture begins to simmer, add tomato paste, and season with salt and pepper. Cook for approximately 15 minutes, stirring often. Add shrimp, cook 3 to 4 minutes, then gently fold in the crab meat and simmer an additional 2 to 3 minutes to heat through. Serve ladled over stone-ground grits.

3/4 cup old fashioned oats
1/2 cup tomato sauce plus 3 tablespoon tomato sauce
2 large eggs
2 tablespoons Worcestershire sauce

2/3 lb ground pork
2/3 lb ground veal
1 tablespoon unsalted butter
melted butter, as needed
10 ounces button mushrooms, thinly sliced
2 tablespoons all-purpose flour
2 cups beef stock, preferably homemade
fresh thyme sprig (to garnish)

Steps:

  • Preheat the oven to 375°F Lightly oil a 9-by-13 inch flameproof baking pan. In a large bowl, combine the onion, oats, the 1/2 cup tomato sauce, the eggs, Worcestershire sauce, 1 teaspoons salt, and 1/4 teaspoons pepper. Stir to mix thoroughly. Add the ground meats and mix well with clean hands. Rinse an 8 1/2-by-4 1/2-inch loaf pan with water and pack the meat mixture into the wet pan. Unmold the meat mixture into the prepared baking pan.
  • Bake for 1 hour. Spread the 3 tablespoons tomato sauce over the top of the meat loaf and continue baking until an instant-read thermometer inserted in the center of the loaf registers 165F, about 10 minutes longer.
  • Meanwhile, melt the 1 tablespoon butter in a skillet over medium-high heat. Add the mushrooms and cook, uncovered, stirring from time to time, until lightly browned, about 8 minutes, set aside.
  • Using a large spatula, transfer the meat loaf to a platter and cover loosely with aluminum foil. Spoon off the clear yellow fat from the baking pan and measure it. Add melted butter as needed to make 2 tablespoons. Return the 2 tablespoons fat to the meat juice in the baking pan and place on the stove top over medium-low heat. Whisk in the flour until smooth to make a roux. Let bubble for 1 minute. Whisk in the stock, then scrape up the browned bits from the pan bottom. Bring to a simmer over medium-high heat, whisking often. Reduce the heat to medium-low add the reserved mushrooms, and simmer until lightly thickened, about 5 minutes Season to taste with salt and pepper.
  • Slice the meat loaf and serve hot, garnished with thyme and drizzled with gravy.

STEP #1 MEAT MIXTURE
1 lb hamburger (browned)
1 Tbsp garlic, minced
1 pinch salt
1 pinch black pepper
STEP #2 BISCUIT DOUGH
4 c flour
1 1/2 Tbsp baking powder
1/4 c cooking oil or crisco
1 tsp salt
1 1/2 c water or milk
1/2 stick butter, melted
STEP #3 GRAVY
4 Tbsp cornstarch
1 pinch pepper
1 pinch salt
2 c water or milk
4 beef bouillon, cubes (crumbled)
1 Tbsp worcestershire sauce

Steps:

  • 1. Preheat oven to 375*
  • 2. In large skillet brown 1 lb of hamburger along with spices, set aside.
  • 3. Biscuits: Place all dry ingredients into large bowl, either mix in cooking oil or Crisco if using Crisco use pastry cutter or fork till coarse meal like. Add water or milk a little at a time, mix add flour to mixture while kneading till dough comes away from the bowl, no longer sticky. Place on floured board roll out till 3/4 inch thick. Brush with melted butter, spread 1/2 the meat on top of biscuit dough, set the rest of the meat to the side. Spread chopped onion across the biscuit dough. (You may add shredded cheese if you like for appetizers) Roll biscuit dough up as if you are making cinnamon rolls make sure the roll is tight and pinch edges. Place seam down, using a serrated knife and flour. Dip knife into flour after each slice. Slice 1/2 inch thick and place onto cookie sheet, brush each with melted butter. Bake approximately 30 minutes or till golden brown.
  • 4. Next step: Gravy, with the remainder hamburger in the skillet, add spices to include bouillon, water or milk except 1/4 cup to be set aside for cornstarch mixture from last step. Heat up on medium high heat. In shaker or small bowl mix small amount of water or milk and cornstarch, stir till thickens to a gravy like consistency. If you need more cornstarch repeat last step of cornstarch and water or milk, Worcestershire Sauce. You may thin down with water or milk also. Cook till gravy comes to a boil stirring constantly.
  • 5. After meat rolls are baked remove, serve hot and spoon gravy over meat rolls. They can be eaten cold also.

1 cup stock, any flavor (I use 1 can Campbells low sodium beef broth)

  • In a sauce pan, melt the butter.
  • Cook the onion until lightly browned, roughly 5-8 minutes.
  • Whisk in the flour and cook for 1 minute.
  • Whisk in the stock and cook uncovered until thickened, roughly 5 minutes.
  • Whisk in the cream and season with salt and pepper to taste.
  • Serve while hot. (See Note).
  • Note - You can make this ahead of time since no meat drippings are needed. 1/2 pound Monterey Jack cheese, cut into 1/2-inch cubes
Creamy Onion Gravy
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 large white onions, thinly sliced (about 6 cups)
1/4 cup all-purpose flour
1 quart chicken stock or low-sodium broth
1 cup heavy cream

  • Meat Loaf 1.Preheat the oven to 400°. In a medium skillet, heat the oil. Add the onion, carrots, celery and garlic and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Scrape the mixture into a very large bowl and let cool. Add the panko, eggs, mustard, ketchup, Worcestershire sauce, Tabasco, 1 1/2 tablespoons of salt and 1 teaspoon of pepper and stir to form a paste. Using your hands, work in the ground meats and cheese until combined. 2.Line a large roasting pan with parchment paper. Firmly pat the meat mixture into 2 loaves, about 10 inches long. Arrange the loaves 3 inches apart on the parchment and roast in the lower third of the oven for about 1 hour, until lightly browned and an instant-read thermometer inserted in the center of the loaves registers 150°. Let the meat loaves rest for 15 minutes, then cut into thick slices and serve with the Creamy Onion Gravy. Creamy Onion Gravy 1.In a large saucepan, melt the butter in the olive oil. Add the sliced white onions and stir to coat. Cover and cook over moderate heat until the onions are very soft but not browned, 10 to 12 minutes. Stir in the flour and cook for about 2 minutes. Add the chicken stock and cook, whisking frequently, until the gravy is thickened, 7 to 8 minutes. Stir in the heavy cream and simmer the onion gravy over moderate heat for about 5 minutes. 2.Transfer the onion gravy to a blender and puree until smooth. Season with salt and black pepper. Return the onion gravy to the saucepan and simmer until it is reduced to 5 cups, about 5 minutes.

There is nothing like homemade gravy. What ever you are roasting beef, chicken, ham, pork, or turkey, you can make an awsome gravy with the pan drippings.

2 c water or consomee, or broth or part coffee if making ham gravy.
1/4 c or a little more gold medal wondra flour
1 c or more what ever pan drippings you may have
1 tsp salt
1 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Steps:

  • 1. After roasting remove your roast be it chicken, beef, ham, pork or turkey. Remove to a seperate plate or pan.
  • 2. Add the two cups water to the drippings with a wire wisk stir the drippings up from the bottom of the pan. Season the mixture with a little salt, black pepper, garlic and onion powder. Note: If your meat was a baked ham then add only one cup of water and one cup of black coffee. This only if you are making a ham gravy. This is called Red Eye gravy. Put the pan on the heat and begin to heat the mixture.
  • 3. To the heated mixture begin to sprinke your flour over the mixture and continue to stir with the wisk until it becomes the consistency of gravy. You may need to use a little more flour. Put your heat on medium and continue to stir until you have a nice gravy. You cannot use any other flour with this method other then the Gold Medal Wondra flour or a powdered flour made especially for gravies. If you do you will get lumps. If you want to add onions, or mushrooms saute in a seperate fry pan in a little oil your chopped onions and mushrooms then add to the gravy and simmer 10 minutes. If you have a lot of drippings you can add more water and more flour to make more then 2 cups of gravy. Of course you will have to adjust the seasonings. Most important make sure you cook your gravy a good ten minutes so the flour cooks good. Enjoy

  • Evenly spread onion soup powder.
  • Cover and seal with heavy duty aluminum foil.
  • Bake for 1 1/2 hours.
  • Take pan out and uncover aluminum foil -- Careful! steam is very hot.
  • Flip over chicken quarters.
  • Put back into oven (without aluminum foil) for additional 10-15 minutes until chicken is nicely brown as desired.
  • Occasionally wet chicken quarters with the fluids in the pan.
  • Serving:.
  • Arrange chicken quarters on a serving dish.
  • Pour fluids into small pot and bring to a light gentle boil.
  • In the meantime, mix and dissolve corn starch in one cup of tub water, and gradually add to the fluids in the pot. Make sure there are no lumps.
  • Keep stirring the bubbly gravy on medium heat for additional 3-5 minutes until thickens.
  • Pour some of the gravy to a serving gravy boat, and spread the rest all over ready to serve chicken quarters.

1 1/2 ounces dried porcini mushrooms (see Notes)
1 cup milk
1 1/2 cups small bread cubes (from 2 slices of hearty bread, crusts removed)
1 pound ground beef (see Notes)
1 pound veal (see Notes)
1 pound pork (see Notes)
1/3 cup chopped shallots
1/3 cup flat-leaf parsley
2 eggs
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 medium carrot, finely chopped
1 stalk celery, finely chopped
1 3/4 cups chicken stock
1 cup white wine
6 tablespoons butter

Steps:

  • 1. Preheat oven to 350°. Put mushrooms in a small bowl and pour 2 cups simmering water over them. Stir and let mushrooms sit 15 minutes. In another small bowl, pour milk over bread cubes. Squeeze bread with your fingers to soften completely. 2. Break the meats into small chunks, then toss together in a large bowl. Add shallots, parsley, eggs, salt, and pepper. 3. Use a slotted spoon to remove mushrooms from water; reserve liquid. Chop mushrooms fine and add about three-quarters to meat mixture; set remaining mushrooms aside. Gently squeeze bread to remove excess milk and add it to meat mixture; discard milk. Using your hands, gently mix bread, meat, and seasonings until blended. Form mixture into a ball, transfer to a large, heavy-bottomed metal roasting pan, and pat into a rounded loaf. 4. Sprinkle carrot, celery, and remaining mushrooms in bottom of pan. Pour in 3/4 cup each of mushroom soaking liquid (strain out any sediment, if necessary) and chicken stock. Bake until outside of loaf is browned and interior measures 180° on a meat thermometer, about 90 minutes. 5. Transfer meat loaf to a platter. Set roasting pan over 2 stovetop burners on high heat. Pour in wine and use a wooden spoon to loosen vegetables and browned bits. Add remaining mushroom liquid and chicken stock and simmer until liquid is reduced by half. Reduce heat to medium and whisk in butter; sauce will thicken slightly. Transfer sauce (with vegetable bits) to a gravy boat and serve alongside meat loaf.

This Authentic Italian Sunday Gravy is what I grew up eating. Nana's tomato meat sauce holds a fond place in my heart & her recipe lives on to this day.

2 Tablespoons olive oil
1 lb. pork spareribs
1 lb. beef stew meat
1 lb. Italian sausage ( spicy or mild, based on personal preference)
6 cloves garlic (peeled and left whole)
¼ cup tomato paste
3 28-oz. cans crushed tomatoes
1 cup water
8 leaves fresh basil (torn into small pieces)
Salt and Pepper (to taste )
1 Tablespoon sugar (more or less based on the flavor of your tomatoes)
Parmesan (shaved, for topping)

Steps:

  • Heat the oil in a large heavy pot over medium heat.
  • Pat the pork dry and put the pieces in the pot.
  • Cook turning occasionally, for about 15 minutes or until nicely browned on all sides.
  • Transfer pork to a plate.
  • Brown the beef in the same way and add it to the plate.
  • Place the sausages in the pot and brown on all sides.
  • Set the sausages aside with the pork and beef.
  • Drain off most of the fat from the pot.
  • Add the garlic and cook for about 2 minutes or until golden.
  • Remove and discard the garlic.
  • Stir in the tomato paste and cook for 1 minute.
  • Add the tomatoes to the pot.
  • Add the water; season with a pinch salt and pepper.
  • Return the pork, beef, and sausages to the pot and bring sauce to a simmer.
  • Partially cover the pot and cook over low heat, stirring occasionally, for at least 2 hours.
  • If the sauce becomes too thick, add a little more water.
  • At the end, add sugar, to taste, and adjust your seasonings one more time with salt and pepper. Add basil leaves and serve over your favorite pasta, topped with shaved Parmesan.

2 tablespoons olive oil
4 cloves garlic, peeled and finely chopped
1 large Spanish onion, diced
2 ribs celery, diced
1 red bell pepper, diced
1 ¼ cups all-purpose flour
2 tablespoons fresh sage leaves, rubbed
1 tablespoon fresh thyme leaves, finely chopped
½ cup dry sherry
¼ cup Worcestershire sauce
3 pinches nutmeg
2 pinches cayenne pepper
3 to 4 cups clam juice, or fish or chicken stock
1 tablespoon tomato paste
Kosher salt and freshly ground black pepper to taste
3 pounds large shrimp, shelled and butterflied
1 ½ pounds jumbo lump crab meat.

Steps:

  • In a large, heavy-bottomed pot or Dutch oven set over medium heat, melt butter with olive oil. When the butter begins to foam, add garlic, onion, celery and pepper, and sauté until onion is translucent, stirring often, approximately 10 minutes. Adjust heat to high, add flour and stir briskly to make a blended, smooth roux. Continue cooking until the roux begins to brown, about 5 minutes. Reduce the heat to medium low, and continue to cook, stirring often, for an additional 20 to 30 minutes, until the mixture has turned a deep brown. Be careful not to burn it. Add sage, thyme, sherry, Worcestershire sauce, nutmeg, cayenne pepper and clam juice or stock, and stir to combine, then return the heat to medium. When the mixture begins to simmer, add tomato paste, and season with salt and pepper. Cook for approximately 15 minutes, stirring often. Add shrimp, cook 3 to 4 minutes, then gently fold in the crab meat and simmer an additional 2 to 3 minutes to heat through. Serve ladled over stone-ground grits.

Steps:

  • Using medium high heat preheat a large skillet that has been sprayed well with cooking spray or drizzled with enough olive oil to keep food from sticking.
  • Add the chopped onion, carrots and celery to the hot pan and sauté until the carrots, celery and onions become tender and the onions become translucent, about 8 minutes.
  • Add the meat and stir continuously to break up any large chunks.
  • Once the meat is browned drain all fat and add sauce. Reduce heat to low and cook until the sauce thickens.
  • Add salt and pepper to taste.
  • This is great over pasta or in any recipe calling for spaghetti sauce. Wonderful garnished with grated parmesan cheese, chopped parsley and/or chopped basil.
  • Note: For a little extra richness, add a pat of butter to your cooked pasta or directly to the sauce!

4-5 lb meaty pork neck bones (seasoned & cooked, meat removed from bone)
2 large onions, chopped
2 large bell peppers, deseeded & chopped
2 can(s) 14 1/2 oz. diced tomatoes
1 can(s) 6 oz. tomato paste
2 pkg 1.25 oz. dry spaghetti sauce mix
1 tsp nutmeg
2 tsp italian seasoning or oregano
2 tsp sugar or splenda
1 tsp each kosher salt & coarse black pepper (or to your taste)
1 1/2-2 lb frozen meat balls
2 jar(s) 24 oz. spaghetti sauce (your favorite brand)
4-5 clove garlic, minced
1 c grated parmesan cheese
1 lb pasta of choice ( i used fetuccini) (cooked according to directions
1 pkg 13 1/4 oz whole wheat pasta (optional, or your choice) cooked according to directions
2 Tbsp olive oil or canola oil

Steps:

  • 1. Season Neck Bones with spices of your choice. I used minced onion, granulated onion & garlic Powder, kosher salt, coarse Black pepper, sumac (or lemon zest) 2 bay leaves, and cook until meat falls off the bones. Allow to cool and remove all visible fat from pot. (I COOKED ONE DAY & REHEATED THE NEXT DAY) Then reheat, and remove meat from the bones when it has had time to cool enough to handle. SAVE THE MEAT TO BE ADDED TO THE SAUCE.
  • 2. Chop the onions and peppers.
  • 3. Add the oil to a large skillet, and heat over low heat.
  • 4. Add the chopped onions and peppers to skillet along with the minced garlic, then allow to cook over medium low heat.
  • 5. Next add the diced tomatoes & tomato paste & stir to blend mixture together.
  • 6. Then add the dry spaghetti sauce, and stir to blend. Cook slowly over low heat stirring as you go to prevent sauce from sticking.
  • 7. Now add nutmeg, Italian seasoning, garlic powder if desired, & salt and pepper to taste, and stir to blend and continue cooking over low heat about 15 minutes.
  • 8. Next add the jarred Spaghetti sauce, stir to mix well and continue cooking.
  • 9. Remove meat from bones while sauce is cooking.
  • 10. Add the meat to the sauce mixture, and then add the precooked frozen meat balls. Continue cooking slowly, stirring occasionally to prevent sticking.
  • 11. Add grated parmesan cheese, and stir to blend into sauce. Cook for a total of about 1 1/2 to 2 hours, or longer if you have the time, but REMEMBER TO STIR TO PREVENT SAUCE FROM STICKING.
  • 12. COOK PASTA ACCORDING TO DIRECTIONS. Then spoon onto a serving platter.
  • 13. Add Meaty pasta sauce and extra grated cheese if desired. Serve with your favorite garlic bread, and tossed salad if desired.

MEAT GRAVY

This recipe is a family tradition. It has been handed down from generation to generation but never written down. There are things I'd like to explain before starting: some of the meats I use are interchangeable. The whole idea of a meat gravy is the different combination of meats, not the exact meats themselves. The two basic meats are pork and beef; some like to add veal, but I don't. Many in my family add their own third meat: some use poultry, mine is lamb. Some in our family only use beef and pork but I find it less tasty. Serve the sauce over your favorite pasta with grated cheese; I recommend Locatelli® Pecorino Romano. I also add meatballs and braciole to the sauce; see links below for those recipes.

¼ cup extra virgin olive oil
1 (2 1/2 pound) pork shoulder roast
24 cloves garlic, peeled and lightly cracked into large pieces (divided)
2 pounds pork spareribs
2 pounds beef oxtails, cut into pieces
1 lamb shank
8 (28 ounce) cans Italian-style whole peeled tomatoes
1 pound hot Italian sausage, casings removed
1 pound sweet Italian sausage, casings removed
3 (6 ounce) cans tomato paste
2 teaspoons salt, or to taste
fresh ground black pepper to taste
1 pinch crushed red pepper flakes
½ cup Burgundy wine or other dry red wine
8 leaves basil, chopped

Steps:

  • Heat the olive oil in a large pot over medium-low heat. Place the pork shoulder in the center of the pot and arrange 4 or 5 garlic cloves around the sides of the pan.
  • Brown the pork roast on all sides and transfer to a large baking dish; remove garlic cloves from pot with a slotted spoon and transfer to a bowl. Repeat the process, browning pork spareribs, oxtails, and lamb shank, adding about 4 cloves of cracked garlic with each batch of meat, and transferring meats to the baking dish. Transfer each batch of garlic cloves to the bowl when cooked.
  • While the meats are cooking, strain the cans of tomatoes and their juice. Use a food mill or press the tomatoes through a colander to remove all of the seeds and extra pulp. Discard seeds and pulp and transfer strained tomatoes to a large bowl; set aside.
  • Cook the sausage in the olive oil in the same pot over medium heat until browned, breaking it up with a wooden spoon as it cooks, until no longer pink, 10 to 12 minutes. Transfer the cooked sausage to a large bowl and refrigerate while you complete the next steps. When all of the sausage is browned, return the reserved garlic cloves to the pot and stir in tomato paste, salt, black pepper, and red pepper flakes.
  • Stir the tomato paste with a wooden spoon, scraping up the browned bits of meat in the pot. There will be a buildup of juices in the baking dish where the meats are resting; pour this liquid into the pot. Add the Burgundy wine and cook, stirring occasionally, until most of the liquid has evaporated, about 15 minutes.
  • Pour in the strained tomatoes and juice and stir in the basil. Cover the pan and bring the sauce to a boil, stirring occasionally. Remove the lid and add the cooked pork shoulder, pork ribs, oxtails, and lamb shank. Reduce the heat to low and simmer, stirring occasionally, for 4 to 5 hours. (If you're adding braciole, see Cook's Note.)
  • Remove the pork shoulder, pork spareribs, oxtails, and lamb shank. When cool enough to handle, remove the meat from the bones and finely chop it. Return meats to the pot of sauce and discard the bones.
  • Stir the cooked sausage into the sauce; simmer for an additional 1 hour. Taste the sauce and adjust the seasonings.
