4 tablespoons butter
1 cup onion, finely chopped
2 medium tomatoes, chopped
2 cups frozen corn, thawed
2 (14 ounce) cans creamed corn
1 (12 ounce) can fat-free evaporated milk
3 cups chicken broth
1/2-1 teaspoon salt
1 teaspoon black pepper

Steps:

  • In a large saucepan, melt the butter over moderate heat.
  • Add the onions and sauté for 5 minutes.
  • Stir in the tomatoes and cook for about 5 more minutes.
  • Add the corn, creamed corn milk, chicken broth, salt, and pepper. Simmer for about 15 minutes.
  • Serve with crackers.

2 ounces butter
1 cup finely chopped onions
1 small can of diced tomatoes (approx. 1 cup)
2 cups frozen whole corn
2 cups creamed corn (1 and 1/2 cans of 14.75 oz size)
1 can (5 oz ) evaporated milk
3 cups chicken stock
1/2 tsp salt
1/4 teaspoon black pepper
1 Tbs Wellington's Chili paste (available at Rodman's)
Chive snips

Steps:

  • In a large saucepan, heat the butter over moderate heat. Add the onions and sauté for 5 minutes. Stir in the tomatoes and cook for a few minutes. Add the corn, milk, stock, salt, and pepper and chili paste and simmer for 1-20 minutes. Run through with an immersion mixer before storing and again before serving.
