McCain Crispy Sweet Potato Fries With Mexican Chicken image

Wholesome, spiced and seasoned Mexican chicken with sweet roasted vegetables and McCain's Crispy Sweet Potato Fries.

4 bell peppers, deseeded and cut into large chunks
2 red onions, peeled and cut into wedges
6 garlic cloves, unpeeled
4 tablespoons balsamic vinegar
2 chicken legs
2 tablespoons mexican fajita seasoning mix
1 packet sweet potato, fries
1 lime, cut into wedges
1 drizzle olive oil
1 handful coriander

Steps:

  • For the McCain Crispy Sweet Potato Fries, preheat the oven to 220°C/430°F/Gas Mark 7. For fan assisted ovens preheat to 210°C/410°F.
  • For the chicken, preheat the oven to 210°C.
  • Place the peppers, red onion and garlic cloves into a large roasting tray and drizzle with olive oil and balsamic vinegar.
  • Rub the chicken legs on both sides with a little olive oil and then the Mexican fajita seasoning. Sit the seasoned chicken on top and drizzle with some olive oil. Place into the oven for 30 mins or until the chicken legs are cooked through. Remove from the oven and rest.
  • 10 minutes before the chicken legs have finished cooking, put the McCain Crispy Sweet Potato Fries on a baking tray in the oven and bake as per packet instructions.
  • Once ready, serve the fries with the roasted vegetables and the chicken legs.
  • Finish off with a squeeze of lime and some coriander leaves.

1 lb sweet potatoes or 1 lb carrot
2 teaspoons olive oil
1/2 cup white whole wheat flour or 1/2 cup all-purpose flour
1/4 teaspoon salt
2 eggs, lightly beaten
2 tablespoons water
1 cup fine dry breadcrumb
1/2 cup grated parmesan cheese
1 tablespoon olive oil

Steps:

  • 1. Preheat oven to 400°F. Lightly brush a 15x10x1-inch baking pan with olive oil. Peel vegetables and cut into thin wedges that are 3 to 4 inches long. Toss vegetables with 2 teaspoons of oil. Place the vegetables on the prepared pan and roast them for 10 minutes. Remove from oven. Transfer vegetables to a tray to cool until they can be handled (about 10 minutes).

This is a wonderful recipe. its a kid and adult pleaser. Crispy on the outside and nice and soft on the inside. Every one at the table fights over these when i make them. I've had sweet potatoes fries at restaurants several times. but i tried to come up with a baked/roasted version... reduce the fat increase the taste. I like to cut up the potatoes length wise... so my fries are nice and long. also i like them to be about a 1/3 of an inch thick.

2 teaspoons taco seasoning
2 -3 tablespoons flour
Pam cooking spray
salt

Steps:

  • Preheat oven to about 400°F.
  • Wash and cut potatoes into fries. Use only parts with the skin on.
  • Cover with whipped egg whites and then taco seasoning.
  • Toss in a ziploc bag with flour. Use a lot or a little depending on how crispy you want them.
