Number Of Ingredients 11

1/2 cup water
1 1/2 cups sugar
3 eggs
1 1/4 cups oil
1 3/4 cups flour
1 1/4 cups bananas, over-ripe and mashed
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup macadamia nuts, chopped
1 1/4 cups crushed pineapple, drained

Steps:

  • Mix oil and sugar together thoroughly. Add bananas, eggs and water.
  • Sift dry ingredients and blend into mixture. DO NOT over-mix.
  • Dust macadamia nuts with flour.
  • Fold dusted nuts and pineapple into mixture.
  • Lightly grease and paper line 3 mini loaf pans.
  • Pour batter into loaf pans.
  • Bake at 350 for 1 hour or until firm.

2 cups sugar
1 cup shortening
6 ripe bananas, mashed
4 eggs, well beaten
2 1/2 cups flour
1 teaspoon salt
3 teaspoons baking powder

Steps:

  • Cream sugar and shortening. Add bananas and eggs.
  • Sift dry ingredients and add them to the bananas, but don't overmix it.
  • Bake in greased loaf pan at 350 F for about 35 minutes.

Number Of Ingredients 8

1/2 pound(s) unsalted butter, softened (2 sticks) or 1 c vegetable oil
2 cup(s) sugar
4 large eggs
6 medium very ripe bananas, peel and mash
2 1/2 cup(s) unbleached all-purpose flour
2 teaspoon(s) baking soda
1 teaspoon(s) salt
1/2 cup(s) chopped macadamia nuts

Steps:

  • Oven to 350 degrees. Grease two 9" loaf pans. Combine butter and sugar, beat with electric mixer until creamy and pale yellow. Beat in eggs, one at a time, then add bananas. Sift together flour, soda and salt. Add to banana mixture and stir just until incorporated. Mix in nuts. Divide batter between two prepared pans and bake 50-60 minutes or toothpick test. Let each loaf cool in pan 10 minutes then remove to wire rack to cool completely.
