3/4 cup milk
4 tablespoons butter
2 tablespoons prepared horseradish
1 teaspoon salt

Steps:

  • In saucepan, cover the potatoes with salted water.
  • Bring to a boil; reduce heat to a simmer.
  • Cook until tender when pierced with tip of pairing knife, about 25 minutes.
  • In a small saucepan, bring milk to a simmer. Mash the potatoes with the butter, horseradish, hot milk and salt. (If too thin, cook over medium, stirring until thickened.).

5 potatoes, peeled and quartered
2 tablespoons butter, divided
ground black pepper to taste
½ cup sour cream
1 tablespoon prepared horseradish
2 teaspoons minced parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and mash with 1 tablespoon butter and black pepper. Stir in sour cream, horseradish and parsley. Whip potatoes and place in medium serving bowl.
  • Melt remaining 1 tablespoon butter and pour over potatoes. Serve immediately.

3 pounds red-skinned potatoes (about 10), cut into 1 1/2-inch chunks
Kosher salt
2 cups whole milk, plus warm milk as needed
3/4 cup finely grated peeled fresh horseradish (about 8 ounces)
3/4 cup sour cream
4 tablespoons unsalted butter, sliced
1/2 cup chopped fresh parsley
Freshly ground pepper

Steps:

  • Put the potatoes in a large pot and cover with cold water by 1 inch; season generously with salt. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, 20 to 25 minutes.
  • Meanwhile, combine the milk, horseradish and a pinch of salt in a small saucepan. Bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until the horseradish is tender and infuses the milk, about 10 minutes (it's OK if the mixture looks curdled). Cover to keep warm.
  • Drain the potatoes well, then return to the pot over low heat. Cook until the excess liquid evaporates, 1 to 2 minutes. Add the sour cream and butter and smash with a potato masher until the butter is melted and the potatoes are mostly smooth but with some chunks. Mash in the milk mixture and parsley until creamy; season with salt and pepper. If the potatoes still seem thick, add more warm milk as needed. Transfer the potatoes to a serving dish.

900g potatoes such as Desirée, King Edward or Maris Piper, cut in chunks
150ml whipping or double cream
100g unsalted butter
2 tbsp fresh horseradish , grated, or creamed horseradish

Steps:

  • Bring the potatoes to the boil in a pan of salted water and cook for 25-30 mins or until tender (alternatively, you could steam them). Drain in a colander and pass through a potato ricer, or mash thoroughly by hand, then pass through a sieve.
  • Heat the cream and butter until almost boiling, then gradually add the liquid to the potatoes until you have smooth purée. Stir in the horseradish, season to taste and serve with a drizzle of olive oil.

2 pounds red potatoes, skin on, cut into small chunks
2 clove garlic
1 1/2 cups heavy cream
3 sticks butter
Salt and fresh ground pepper
1 tablespoon prepared horseradish

Steps:

  • Fill a large pot or pasta pot with about 2 inches of water. Place a steamer basket into the pot, making sure it sits just above the water. Add the potatoes and garlic to the basket, cover the pot and turn the heat to medium. Steam the potatoes until fork tender, 15 to 20 minutes.
  • Meanwhile, combine the cream and butter in a small saucepan. Heat over medium-low heat until the cream is hot and the butter melted.
  • When the potatoes are done, remove the steamer basket and dump out the water from the pot. Add the potatoes to the empty pot and mash with a potato masher. 3 lbs russet potatoes or 3 lbs yukon gold potatoes, peeled and quartered
6 garlic cloves
1 small onion, chopped
crushed red pepper flakes
1/4 cup butter, cut into pieces
2 -3 tablespoons prepared horseradish
2 tablespoons chopped fresh chives or 1 tablespoon dried chives
1/2-1 cup milk

Steps:

  • Place potatoes, garlic and onion in a large saucepan of lightly salted boililng water. Cover and cook for 20-25 minutes or until tender. Drain.
  • Return potatoes and garlic to pan, heat slightly to remove excess moisture. Mash potatoes in pan, add red pepper flakes, butter, horseradish and chives. Gradually stir in enough milk to make potatoes fluffy. Season to taste with salt and pepper.
  • To make ahead: Make potatoes as directed. Transfer to a 1 1/2 to 2 qt casserole dish coated with non-stick cooking spray. Cover and refrigerate for 2 to 24 hours. Bake covered for 30 minutes at 350 degrees. Uncover and bake for 40 minutes more or until heated through.

900g King Edward or Maris Piper potatoes
50g butter
100ml whipping cream
3 tbsp milk
2 tbsp fresh horseradish , ready grated horseradish from a jar, or creamed horseradish

Steps:

  • Boil the whole potatoes in their skins for 30-40 mins, or until tender (timing depends on their size). Drain and peel off the skins. Put the potatoes back in the pan, cover and gently heat for a minute or two.
  • Remove from the heat and mash the potatoes with the butter until no lumps are left, then heat 100ml whipping cream and the milk together and add that to the mashed potatoes. Stir in 2 tbsp grated fresh horseradish, ready grated horseradish from a jar, or creamed horseradish (for a slightly milder taste), then season to taste.
