Steps:
- Place potatoes in a large saucepan; cover with water. Cover and bring to a boil. Cook for 20-25 minutes or until very tender; drain well., In a bowl, mash potatoes. Add cream cheese, cheddar cheese, sour cream, onion, egg, salt and pepper; beat until fluffy. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 40-45 minutes or until heated through. Sprinkle with additional cheese if desired.

- Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
- Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend. Sprinkle the bread crumb mixture over the mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill.
- Bake, uncovered, until the topping is golden brown, about 20 minutes.

- Place the potatoes, rosemary and garlic in a large saucepan and cover with cold water. Add a handful of salt and bring to a boil over medium-high heat. Boil until fork-tender, about 15 minutes. Drain well and remove the rosemary sprigs.
- Working over the same saucepan, press the potatoes and garlic through a potato ricer. Add the warmed cream and olive oil. Place the pan back over low heat and stir everything together using a rubber spatula. Add the mozzarella, Parmesan and 1/2 teaspoon salt and continue to stir until the mixture is hot, the cheese is melted and the potatoes are almost stringy in texture--this will take 5 to 10 minutes. Serve hot.
BAKED ITALIAN MASHED POTATO CASSEROLE
These mashed potatoes are made extra yummy by adding garlic and mozzarella and Parmesan cheeses. Recipe can be prepared and refrigerated until serving time. Just increase cooking time to be sure casserole is heated through.

- Boil potatoes with garlic until tender and drain.
- Mash potatoes and garlic together and add 6 tablespoons of the butter and then add the milk.
- Mash until potatoes are smooth.
- Add salt and pepper to taste.
- Add mozzarella and Parmesan cheeses.
- Stir to blend.
- Use 1 tablespoon of the remaining butter to grease the bottom and sides of a casserole dish.
- Coat the bottom and sides with breadcrumbs.

LAYERS OF POTATOES AND SMOKED MOZZARELLA
This dish can be prepared ahead and frozen for two weeks or refrigerated for two days. The smoked mozzarella provides strong flavor; the plain mozzarella, delicate. Yukon gold potatoes are not required, but they have a wonderful color.

- Scrub the potatoes. Cover with water, add garlic and cover pot, boiling until potatoes are tender, about 20 to 30 minutes, depending on size. When potatoes are cooked, drain and peel. Mash them, while they are hot, with the garlic, using a masher or food mill. Stir in the buttermilk and basil. Season with salt and pepper.
- Spoon half of the potatoes into a shallow casserole, and top with half of the mozzarella slices. Top with the remaining mashed potatoes, and arrange the remaining mozzarella slices on top. Refrigerate or freeze.
- To serve, defrost, if the potatoes have been frozen. Return to room temperature. Preheat oven to 375 degrees. Bake the potatoes and cheese for 20 to 25 minutes, until mixture bubbles and top is browning.

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

- Make mashed potatoes according to package directions for 7-8 servings.
- Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
