4 tablespoons butter
1/3 cup flour
3 cups whole milk
1 teaspoon black pepper
4 1/2 ounces dried beef, cut into strips
Texas toast slices (or biscuits, if desired)

Steps:

  • Melt butter in a cast-iron skillet over medium heat until bubbling. Stir in flour, and then add whole milk, whisking until flour is completely incorporated. Stir constantly until the sauce has thickened.
  • Add pepper and strips of dried beef to sauce mixture, stirring until pepper is incorporated and beef is evenly coated. Spoon over Texas toast or biscuit halves; serve warm and top with additional ground pepper, if desired.

This recipe came from my mother-in-law. It's a variation of the classic chipped beef on toast, or SOS, as my husband called it. It may sound kind of strange but once I tried it I have never gone back to the original.

2 pkg buddig chopped, smoked, and pressed beef
1/4 c all purpose flour
2 c milk
6 Tbsp butter
1/2 tsp salt
dash(es) black pepper
1 can(s) (15 oz.) cream-style sweet corn
6 slice cheddar cheese
4-6 slice bread for toast

Steps:

  • 1. Cut the chipped beef into small, bite-size pieces. In a large, deep skillet, melt 4 Tbsp. butter at medium temperature. Add the beef and cook until hot, stirring to break up pieces.
  • 2. Stir in flour until a thick paste is formed. Add remaining 2 Tbsp. of butter. Gradually stir in milk.
  • 3. When mixture begins to bubble, add creamed corn and cheese. Mix well and simmer 5 minutes over low heat. Season with salt and pepper. Serve hot over toast.
  • 4. My mother-in-law added a chopped green pepper to her recipe--add with the beef and cook until tender. I prefer it without the pepper.

4 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons minced garlic
1 tablespoon chopped fresh rosemary
3 shallots, minced
12 cups heavy cream
1 teaspoon salt
1 tablespoon black pepper
Chipped beef, for serving
Sourdough toast, for serving
Chopped fresh parsley, for garnish
Paprika, for garnish

Steps:

  • In a small pan, melt 2 tablespoons of the butter and add the flour. Cook, stirring, until the mixture begins to turn a light brown color, about 4 minutes. Remove from the heat.
  • In a large saucepan, melt the remaining 2 tablespoons butter. Cook the garlic, rosemary and shallots until the shallots are translucent. Add the cream and bring to a boil. Add the butter-flour mixture, reduce the heat and simmer for 10 to 15 minutes, stirring occasionally. Add the salt and pepper and strain.
  • For each serving, heat 1 cup of sauce to a simmer, add 2 ounces chipped beef and bring to a boil. Pour the mixture over two to three slices sourdough toast and garnish with parsley and paprika.

6 (4 ounce) packages carl Buddig beef, lunch meat
1/2 teaspoon salt
1 teaspoon pepper
16 pieces toast

  • Slice Beef into thin strips.

1/4-1/2 cup margarine or 1/4-1/2 cup butter
1 (12 ounce) jar dried beef
4 green onions
2 tablespoons flour
1 pint milk
5 -6 slices toast

Steps:

  • Cut the beef and onions very fine.
  • Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
  • Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.
  • Gradually add the milk, continue stirring until the mixture boils, then turn the fire down and cook slowly.
  • It should thicken enough to be a good gravy consistency.
  • Serve over toast.
  • Some people serve it on the toast with chopped hard boiled eggs.
