16 jumbo shrimp, peeled and cleaned (10-15 count)
2 tablespoons butter, clarified
1/4 cup white wine
1 lemon, juiced
1 lb crab lump meat, fresh
1 cup mayonnaise
1/8 teaspoon Tabasco sauce
1/2 teaspoon lemon juice
1/8 teaspoon Worcestershire sauce
1/8 teaspoon Old Bay Seasoning
1/4 cup fresh breadcrumb
1/4 teaspoon salt
1/4 cup red bell pepper, finely diced
4 tablespoons chives, finely chopped

Steps:

  • Pick through crab meat carefully to remove any bits of shell or cartilage. Mix all Imperial Stuffing ingredients until thoroughly blended.
  • Split shrimp along bottom so that shrimp rests flat on pan and tails curl over stuffing. Stuff each shrimp with about 1 1/2 ounces of stuffing. Lay shrimp on a buttered pan or casserole and sprinkle with lemon juice and white wine.
  • Bake in a preheated 350° oven for 15 to 20 minutes, or until tails curl and stuffing is lightly browned.
  • Serve immediately.

1 egg yolk
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon dry mustard
2 teaspoons Worcestershire sauce
1 tablespoon mayonnaise
1 tablespoon chopped fresh parsley
1 pound Maryland jumbo lump crab meat

Steps:

  • Preheat the broiler.
  • In a large bowl, combine the egg yolk, salt, pepper, mustard, Worcestershire, mayonnaise, and parsley. Then, gently fold in crabmeat (be careful not to break up the lumps). Shape into cakes and broil for 5 minutes.

STEAM SHRIMP
3/4 lb shrimp
2 Tbsp old bay seasoning
1 can(s) beer,
JUMBO LUMP CRAB IMPERIAL
1 lb lump crab meat
1/2 c mayonnaise
1 tsp suga
1 tsp old bay seasoning
1 tsp parsley, italian
1 egg
1 lemon juice, fresh

Steps:

  • 1. First take each shrimp and skewer them from head to tail. (3/4 of pound colossal shrimp 12).
  • 2. Take 1/2 of the beer to steam them till they turn white NOTE not all the way done. Then the chef can drink the rest of the beer.
  • 3. Place Shrimp in an ice bath right away. to stop the cooking
  • 4. Mix mayonnaise, egg, sugar, old bay, lemon juice and parsley together and blend well, this is your imperial sauce.
  • 5. Gently fold crabmeat into imperial sauce, being careful not to break up crab meat.
  • 6. Here is when the fun comes in split or butterfly and clean each shrimp. You will need 12 If you have any left over the chef can eat them.
  • 7. Scope the mixture over the shrimp (2 per servicing) I add old bay or paprika for color
  • 8. Bake in 400 degree oven for 20 minutes (top will turn golden brown)
  • 9. Server with Black Rice, bean and Cole slaw
  • 10. Note you want them to look like Crabs

1 pound jumbo lump crabmeat (or lump)
1/2 cup mayonnaise
1 teaspoon sugar
1 heaping teaspoon old bay
1 teaspoon finely chopped Italian parsley
1 large egg lightly beaten
squeeze of lemon juice

Steps:

  • Mix mayonnaise, egg, sugar, old bay, lemon juice and parsley together and blend well, this is your imperial sauce. Gently fold crabmeat into imperial sauce, being careful not to break up crab meat. Place portions in baking dish using ramekins or small prep bowls. Bake in 350°F oven for 20 minutes (top will turn golden brown) Allow to cool just a few minutes before serving, it will set and be more flavorful as it cools slightly.

2 slices day-old white bread, cubed
2 tablespoons fresh parsley, finely chopped
½ teaspoon seafood seasoning, such as Old Bay™
½ teaspoon dried mustard
⅛ teaspoon ground black pepper
2 teaspoons fresh lemon juice
2 dashes liquid hot pepper sauce, such as Tabasco™
2 tablespoons butter, softened
½ cup mayonnaise
1 pound fresh lump crabmeat
4 (6 ounce) fillets rockfish

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 baking dish.
  • Mix the bread cubes, parsley, seafood seasoning, mustard, pepper, lemon juice, pepper sauce, butter, and mayonnaise together in a mixing bowl. Gently stir in the crabmeat until well blended, being careful not to break the crab chunks.
  • Place the fish fillets on a clean surface, and spoon 1/4 of the crab mixture onto one side. Starting on the side with the crab mixture, roll up the fillet around the crab filling. Place the rolled fish into the prepared dish open side down.
  • Bake in preheated oven until light brown and bubbly, and fish flakes with a fork, about 15 minutes.
