Number Of Ingredients 7

4 boneless skinless chicken breasts, pounded to even thickness and brined in saltwater (*see easy instructions below)
1 Tablespoon melted butter or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (I prefer smoked paprika)
optional: fresh lemon wedges

Steps:

  • To brine the chicken breasts, fill a large bowl with 1 quart of warm water and 1/4 cup kosher salt. Stir to combine until most of the salt is absorbed. Add the whole chicken breasts and let them sit in the mixture to brine for 15 minutes. Or you can also also cover the bowl and refrigerate for up to 6 hours. Remove the chicken breasts from the brine, rinse them with cold water, then pat them dry with some paper towels. (If the chicken breasts you purchased have already been pre-brined in a sodium solution, skip this brining step completely.)
  • Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes before using.
  • Cut the chicken breasts into 1-inch pieces. Add them to a large mixing bowl and drizzle evenly with the olive oil. Toss to combine.
  • In a separate small bowl, whisk together the salt, pepper, garlic powder and paprika until combined. Sprinkle the seasoning mixture evenly over the chicken. Then toss for 1 minute, or until the chicken is evenly coated with the seasoning. Thread the chicken evenly onto the skewers.
  • Once the grill is hot, place the chicken kabobs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through (no longer pink on the inside).
  • Transfer the kabobs to a clean plate, and loosely tent with aluminum foil. Let the chicken rest for at least 5-10 minutes.
  • Then serve warm while the chicken is hot and juicy, drizzled with freshly-squeezed lemon juice if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

1 large green bell pepper, cut into 2 inch pieces
1 onion, cut into wedges
1 large red bell pepper, cut into 2 inch pieces
1 cup barbeque sauce

Steps:

  • Preheat grill for high heat.
  • Thread the chicken, green bell pepper, onion, and red bell pepper pieces onto skewers alternately.
  • Lightly oil the grill grate. Place kabobs on the prepared grill, and brush with barbeque sauce. Cook, turning and brushing with barbeque sauce frequently, for 15 minutes, or until chicken juices run clear.

I was feeling like a little barbecue action tonight so I dug out this recipe. I love fruit on the grill and the banana is a bit unexpected. The original recipe calls for chicken thigh pieces butI've always used chicken breasts.

3 -4 boneless skinless chicken breasts
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1 tablespoon honey
6 tablespoons olive oil
1 clove garlic, minced
4 strips bacon
2 bananas
salt and pepper

Steps:

  • Cut the chicken into bite sized pieces.
  • Combine the vinegar, lemon juice, honey, oil, garlic and salt and pepper to taste in a large bowl.
  • Add the chicken and toss until well coated.
  • Cover and leave to marinate 1-2 hours.
  • Cut each strip of bacon in half.
  • Cut the bananas into 1" lengths and brish with lemon juice.
  • Wrap a piece of bacon around each piece of banana.
  • Remove the chicken from the marinade, reserve the marinade for basting.
  • Thread the chicken and banana rolls onto the skewers.
  • Barbecue the kabobs over hot coals 8-10 minutes until the chicken is cooked through.
  • Baste the kabobs with the marinade and turn the skewers frequently.
  • Serve with corn on the cob and mango relish.

These oven baked chicken kabobs are easy to make without a grill or grill pan! Healthy and delicious, they're great for an easy weeknight meal.

1½ pounds boneless, skinless chicken breast
2 tablespoons extra virgin olive oil
1 tablespoon dijon mustard
3-4 cloves garlic, minced
1 teaspoon oregano
1/2 teaspoon sumac
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 red bell pepper, cut into bite sized pieces
1 yellow bell pepper, cut into bite sized pieces
3-4 large shallots, peeled

Steps:

  • Cut chicken breast into 1 inch pieces and set aside. In a large bowl, mix together olive oil, dijon, garlic, oregano, sumac, kosher salt, and pepper. Cover and marinate for at least 30 minutes and up to 12 hours.
  • Cover a baking sheet with aluminum foil for easy clean up. Preheat oven to 425 degrees F. Thread alternating pieces of chicken, peppers, and shallots onto metal skewers. Bake for 15-20 minutes until cooked through, meaning no pink in the center and registering 165 degrees F on a meat thermometer.
  • If you'd like more of a grill-like char on the outside, set your oven broiler to high. Broil kabobs about 6 inches away from the heat source for 1-2 minutes until lightly charred on edges. Serve warm!

⅓ cup honey
⅓ cup soy sauce
¼ teaspoon ground black pepper

Steps:

  • In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  • Preheat the grill for high heat.
  • Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
  • Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.
