I have to give my husband credit for this recipe. He ate some meatloaf at a roadside diner that he really enjoyed. It had very small diced potatoes in it and they served it with gravy on top. He came to the conclusion that the small potatoes came from corned beef hash. So the next time I made meatloaf, I added corned beef...

Number Of Ingredients 7

2 lb hamburger
1 can(s) corned beef hash
2 eggs
2 hamburger buns
1 onion
a few dash(es) salt and pepper
4 pkg brown gravy mix

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Wet hamburger buns with water, then squeeze out excess.
  • 3. Dice onion.
  • 4. Mix hamburger, corned beef hash, eggs, wet buns, onion, salt, and pepper.
  • 5. Bake in 9 x 13 casserole dish for 1 hour.
  • 6. Drain excess grease.
  • 7. Prepare gravy according to package directions and pour over meat loaf.
  • 8. Bake for 15 minutes.

Number Of Ingredients 13

-1 tbsp virgin olive oil
-1 small onion, finely chopped
-1 celery stalk, finely chopped
-1 small garlic clove, minced
-1/4C seasoned dried bread crumbs
-1/4C milk
-1 1/2 to 2 pounds lean ground beef
-2 eggs
-2tbsp freshly grated parmesan cheese
-1 tbsp minced fresh parsley
-1 tbsp worcestershire sauce
-1/4 tsp salt
-1/4 tsp freshlyground black pepper

Steps:

  • -warm olive oil in a small frying pan over medium heat. Add celery, onion, and garlic and saute for 4-5min. or until onion is translucent. Set aside to cool. -In a large bowl combine bread crumbs, and milk. Stir and let sit for 5min. -Add remaining ing. to bowl including onion, celery and garlic mixture. Mix. -Shape into a loaf and place in bread loaf pan. Preheat oven to 375 Bake uncovered for 55-60 min. Allow meat loaf to cool for 10 min. before serving.

1/2 pound ground veal
1/2 pound ground pork
3/4 cup bread crumbs (to further reduce sodium, see Homemade Seasoned Bread Crumbs, Breads & Muffins)
1 cup fat-free milk
1 egg substitute equivalent
1 medium onion, chopped (for variety, add 1/4 cup shredded carrot, 2 Tbsp chopped green pepper, and/or 1/4 cup sliced celery)
16 ounces canned stewed tomatoes

Steps:

  • 1. In a large bowl, combine all ingredients except tomatoes. Place into loaf pan, and pour tomatoes over the top.2. Bake at 350°F for 1 hour.
