quick marinade:
1/3 cup olive oil
a few sprigs of fresh rosemary rough chopped or a couple teaspoons of dried rosemary
a couple sprigs of fresh mint, roughly chopped (dried will NOT do)
2 medium sized cloves of garlic crushed or minced (fresh NOT the stuff in a jar)
juice of one lemon
1/3 cup of red wine
1/4 cup of coffee grounds
salt (I like those artisan sea salts available at your gourmet shops or cooking oriented retail stores)
fresh ground pepper to taste
4 small delmonico steaks, 2 medium strip steaks or 4 lamb chops - whatever your meat preference

Steps:

  • about an hour to hour and a half before grilling, throw your marinade together - mix all ingredients EXCEPT salt & pepper & garlic & coffee grounds. Whisk together briskly in a mixing bowl and transfer to a shallow rectangular baking pan (like you would use for brownies, etc) rub your meat on BOTH sides with salt, pepper & garlic & coffee ground & place in marinade. cover with saran wrap & refrigerate. Marinade for about an hour, turning meat once. (the longer you marinate, however, the stronger the flavors- you can marinade and refrigerate the day before) rev up your grill when it's dinner time, grill to your meat doneness preference (I like medium rare personally, which is about 5 - 7 minutes a side on my little mini weber kettle charcoal grill)- you can use the marinade liquid to baste while cooking, but discard any leftovers - you can't reuse marinades. serve with oven roasted fingerling or baby red bliss potatoes & a nice salad & you have a simple, easy, restaurant worthy meal! enjoy!

2 lbs stewing beef or 2 lbs beef chuck
8 large potatoes
16 ounces fresh baby carrots
1 large yellow onion
4 -6 cloves garlic
3 bay leaves
2 tablespoons vegetable oil
3 tablespoons olive oil
4 ounces white flour
1 can tomato paste
1 teaspoon salt
1/2 teaspoon pepper (Fresh ground)
2 bottles good dark beer
8 ounces ketchup
6 cups water

Steps:

  • Add salt and pepper to flour.
  • cube meat into 1 or 2 inch pieces.
  • Coat beef with flour and spices.
  • combine and heat oils.
  • brown beef over high flame 5 minutes.
  • add beer, tomato paste, ketchup, and water.
  • bring to boil and reduce to medium heat.
  • Simmer covered 60 min.
  • stir every 20 minutes.
  • saute garlic and onion together.
  • add bay leaves, garlic, onion, carrots,potatoes additional salt and pepper added to taste.
  • Cook for 1 hour.
  • Enjoy immediately or allow to rest over night for richest taste.

A very simple but delicious marinade that keeps the meat so juicy it's unbelievable! This is great on both chicken and beef. This recipe is good for 4-6 boneless skinless chicken breasts or 2-4 steaks, depending on size.

4 garlic cloves, minced
1/2 cup balsamic vinegar
1/4 cup olive oil
fresh ground black pepper

Steps:

  • Season meat well with fresh pepper. Lay meat out in a baking dish. Next, mix garlic, vinegar and olive oil together. Stir well and pour over meat. Cover dish and place in refrigerator for 4-6 hours. Before cooking, remove meat from refrigerator, leaving in marinade and bring to almost room temperature before grilling. When grill is ready, remove and discard used marinade and grill to your liking. I prefer to season my meat with some Italian herbs (oregano, basil, etc.) before grilling but it is not necessary.
