Make these layered brownie, marshmallow, and peanut butter cereal squares for a melt-in-your-mouth dessert.

19 to 21 ounce(s) pkg. fudge brownie mix
10 1/2 ounce(s) pkg. mini marshmallows
1 1/2 cup(s) semi-sweet chocolate chips
1 cup(s) creamy peanut butter
1 tablespoon(s) butter or margarine
1 1/2 cup(s) rice crispy cereal

Steps:

  • Prepare the brownie mix according to package directions, using a 13x9-inch baking pan and the directions for chewy(not cake-like) brownies. Bake according to directions. Sprinkle baked brownies with marshmallows and return to oven for 3 to 5 minutes or until golden. Cool in the pan on a wire rack. In a saucepan, combine chocolate chips, peanut butter, and butter. Heat and stir until the chocolate is melted. Remove from heat; stir in the cereal. Pour evenly over marshmallows. Refrigerate until topping is set. Cut into bars. Serve at room temperature.

These brownies are the all time favorite at our house and everyone else loves them too. The recipe originally came from a '97 TOH but I have made it so many times for so many people that it's known as "my" recipe, wish I had made it up! My only suggestion is don't let them over cook.

Number Of Ingredients 11

1 cup butterscotch chips (6oz)
1/2 cup butter
2 eggs
2/3 cup packed brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups miniature marshmallows
2 cups milk chocolate chips (12oz)
1/2 cup chopped walnuts (we never use) (optional)

Steps:

  • In a small saucepan over low heat, melt butterscotch chips and butter.
  • Remove from heat and cool for 10 minutes.
  • In a mixing bowl, beat eggs, brown sugar and vanilla.
  • Add butterscotch mixture and mix well.
  • Combine flour, baking powder and salt.
  • Add to batter and mix well.
  • Stir in marshmallows, chocolate chips and nuts.
  • Spread into a greased 13X9 baking pan.
  • Bake at 325 degrees for 25-30 minutes or until brownies test done.
  • I watch for the sides to pull away from pan and it is"set" when the pan is jiggled back and forth.
  • The toothpick test works but not as well as the other because of the marshmallows.
  • Cool completely before cutting into bars.

1 package fudge brownie mix (13-inch x 9-inch pan size)
1 package (10 ounces) miniature marshmallows
2 cups semisweet chocolate chips
1 cup peanut butter
1 tablespoon butter
1-1/2 cups crisp rice cereal

Steps:

  • Prepare brownie batter according to package directions for fudge-like brownies. Pour into greased 13-in. x 9-in. baking pan. , Bake at 350° for 28-30 minutes. Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted). Cool on a wire rack., In a microwave-safe bowl, melt the chocolate chips, peanut butter and butter; stir until smooth. Stir in cereal; spread over brownies. Refrigerate for 1-2 hours or until firm before cutting.
