5 large eggs
1 2/3 cups whole milk
5 tablespoons melted butter
1 2/3 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • 1. Preheat oven to 400 degrees. 2. Grease popover pans or muffin tins. 3. Beat eggs with electric mixer until frothy. Add milk and butter, mix well. 4. Add flour and salt, mix just until combined. 5. Divide among prepared cups, filling slightly less than half full. 6. Bank for 45-55 minutes, or until puffy and well browned. Serve immediately.

Blueberry Popovers image

A special popover recipe to serve at your next brunch. Eggy and rich but not too sweet and quite impressive, but simple. Please try the lemon juice and powdered sugar on the top. It really adds to the total flavor!

3 tablespoons butter, cut into 6 equal-sized pieces
1 cup whole milk
3 eggs, beaten
¼ cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup fresh blueberries
1 tablespoon white sugar
1 teaspoon ground cinnamon
¼ cup confectioners' sugar, or to taste
1 lemon, halved

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Put a piece of butter into each of 6 large muffin cups.
  • Put muffin tin in preheated oven until butter melts, about 5 minutes. Set aside.
  • Beat milk, eggs, 1/4 cup sugar, and vanilla together in a large bowl. Whisk flour into the milk mixture until you have a batter. Divide batter between muffin cups. Drop even amounts of blueberries into each batter portion. Stir 1 tablespoon sugar and cinnamon together in a small bowl; sprinkle evenly over the batter portions.
  • Bake in preheated oven for 5 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until popovers are no longer moist in the center, about 25 minutes. Dust tops of popovers with confectioners' sugar. Squeeze lemon juice over popovers. Serve warm.

This is from "The Marshall Field's Cookbook," but the recipe originated at the beautiful Oak Grill restaurant, located since 1947 on the 12th floor of the downtown Minneapolis Dayton's store (it's still there - now it's Macy's Oak Grill). I go there for the popovers - they are the best!

nonstick cooking spray, for pans
5 eggs
1 2/3 cups whole milk
5 tablespoons unsalted butter, melted and cooled
1 2/3 cups flour
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Lightly coat popover pans or deep muffin tins with nonstick cooking spray and heat pans in oven for at least 15 minutes.
  • In a large bowl, using an electric mixer on medium speed, beat eggs until frothy.
  • Add milk and melted butter and mix well.
  • Add flour and salt and mix to just combine.
  • Carefully divide batter among preheated pans, filling each cup just under half full.
  • Bake 30 to 40 minutes, until puffy and well-browned (finished popovers should pull away from pan easily and feel light to touch).
  • Remove from pan and serve warm.

Another favorite of mine from Dayton's/Marshall Field's/Macy's. The pine nuts, spinach and red pepper sauce give it a different flair. Good with skin-on mashed potatoes

4 ounces garlic-flavored croutons
1 cup beef broth
1 tablespoon vegetable oil
1 medium yellow onion, finely chopped
2 large eggs
2 1/2 tablespoons prepared pesto sauce
2 1/2 tablespoons pine nuts
1 1/2 teaspoons Worcestershire sauce
1 teaspoon seasoning salt
1/2 teaspoon pepper
2 lbs ground round
1 1/2 cups julienned fresh spinach leaves
1 garlic clove, peeled, halved
6 tablespoons butter (divided)
4 tablespoons flour
2 cups beef broth
salt and pepper
1 dash Worcestershire sauce
1 red bell pepper, cored, diced

Steps:

  • Meatloaf:.
  • Preheat oven to 350 degrees.
  • Finely crush croutons and combine with broth in small bowl. Let stand 10 minutes.
  • Heat oil in skillet. Add onions and cook over medium heat 8 to 10 minutes or until soft. Set aside.
  • In large bowl, beat eggs. Mix in pesto, pine nuts, Worcestershire sauce, seasoned salt and pepper.
  • Add meat, spinach, cooked onion and crouton mixture. Mix well.
  • Place mixture in bread pan and bake 1 hour and 15 minutes. Let stand 10 minutes before slicing.
  • Remove from pan and slice.
  • Serve topped with sauce.
  • Sauce:.
  • Rub saucepan with garlic. Discard clove.
  • Melt 4 tablespoons butter over low heat.
  • Add flour and stir until blended. Stir in beef broth.
  • Stirring constantly, cook sauce until it comes to boil. Add salt, pepper and Worcestershire sauce.
  • Remove from heat, stir.
  • Melt remaining 2 tablespoons butter in medium skillet.
  • Add bell pepper and cook over medium heat 5 minutes or until it begins to soften.
  • Add to reserved brown sauce.
  • Adjust seasonings as needed and heat through.
