This makes such a beautiful glaze; it works well with chicken too. If you have time let it marinate all day for the deepest flavor. This elicits such an enthusiastic response from dinner guests but is super easy and needs very little hands on time. I'm not including marinade time into the cook or prep time.

1 lb salmon fillets
4 Tbsp chopped green onion
1 1/2 tsp garlic powder
1 1/4 tsp onion powder
3 Tbsp soy sauce
1/3 c orange marmalade
1 1/2 Tbsp water

Steps:

  • 1. Combine all ingredients except fish in a bowl and mix until blended.
  • 2. Add fish and let marinate for at least an hour.
  • 3. Preheat oven to 450 degrees. Place fish on baking tray with marinade covering all pieces. Bake for 12-15 minutes.

2 teaspoons sesame oil
2 teaspoons reduced-sodium soy sauce
½ teaspoon grated fresh ginger root
1 garlic clove, crushed
3 tablespoons white rice vinegar (or other white vinegar)
1 pound boneless, skinless salmon fillet, cut in four pieces
6 scallions, thinly sliced with green
¼ cup toasted sesame seeds

4 ounces butter, softened
2 tablespoons orange marmalade
8 (4 ounce) boneless salmon fillets, not steaks
1/2 cup vegetable oil
1/2 cup soy sauce
1/2 cup dry sherry or 1/2 cup rice wine
4 garlic cloves, minced
1 tablespoon grated gingerroot (about 1-inch piece)
6 tablespoons orange zest (about 3 large oranges worth)
2 tablespoons toasted sesame oil
2 tablespoons honey

Steps:

  • Make the marmalade butter by thoroughly combining the butter and marmalade - a stand mixer with a paddle is ideal. Roll the butter in parchment paper into a 1½" wide log and store in the refrigerator to harden.
  • Heat the oil over medium-high heat. Add the garlic, ginger root and orange zest and cook two minutes.
  • Add the soy sauce, wine, sesame oil and honey and cook until the alcohol has evaporated. Sniff the fumes to determine this. If the fumes irritate your nose, there is still alcohol present. Cool completely.
  • Pour marinade over the salmon and refrigerate for at least two hours.
  • Broil or grill the salmon for three minutes per side and top with the marmalade butter.

1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon ground ginger
4 salmon fillets (6 ounces each)

Steps:

  • In a small bowl, combine the first six ingredients; set aside 1/4 cup. Brush remaining glaze over salmon., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
