1 (44 ounce) bottle Heinz ketchup (plastic squeeze bottle)
1/2 cup apple cider vinegar
1 cup strong brewed coffee (french roast)
1 cup dark brown sugar
4 tablespoons steak sauce (A1 gives a great flavor)
2 tablespoons dark molasses
2 -3 tablespoons liquid smoke (Some brands are stronger than others)
4 tablespoons Worcestershire sauce
1 cup dark brown sugar
1 teaspoon cumin
1 tablespoon dark chili powder
2 teaspoons onion powder
2 teaspoons granulated garlic
1 tablespoon baker's cocoa powder plus 1 teaspoon baker's cocoa powder
2 tablespoons ground chipotle peppers (I buy them at the Mexican store and grind them myself, much better than the store big company spice )

Steps:

  • Combine all ingredients in a sauce pan and bring to a boil.
  • Lower the heat and continue to simmer for at least an hour.
  • Cool the sauce and return to the Ketchup bottle. Save your previous batches bottles.

Four types of chiles give this BBQ sauce layers of smoky flavor. Dried chiles are roasted, then stemmed, seeded, and cooked with usual barbecue sauce ingredients including ketchup and molasses.

1 tablespoon canola oil
1 small onion, coarsely chopped
3 cloves garlic, coarsely chopped
3 cups canned plum tomatoes, with their juices, pureed
1/4 cup ketchup
3 tablespoons molasses
2 tablespoons packed dark-brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon red-wine vinegar
2 dried ancho chiles, roasted, stemmed, and seeded
2 dried pasilla chiles, roasted, stemmed, and seeded
3 dried chile de arbol, roasted, stemmed, and seeded
4 canned chipotle chiles, pureed
Juice of 1/2 lemon
Coarse salt and freshly ground pepper

Steps:

  • In a medium heavy-bottomed saucepan, heat oil over medium heat. Add onions and garlic, and cook until translucent, 3 to 4 minutes. Add tomatoes, and bring to a boil.
  • Add the remaining ingredients, and return to a simmer. Cook, stirring occasionally, until thickened, 30 to 35 minutes. Transfer to a food processor, and puree until smooth. Season with salt and pepper. Return to saucepan, and let stand until room temperature.

Adding chipotle chiles to this macaroni and cheese dish really adds a nice spicy, smoky kick.

1 (16 ounce) package elbow macaroni
1 (11 ounce) can condensed Cheddar cheese soup
1 (12 ounce) can evaporated milk
1 pound shredded Colby cheese
1 chipotle chile in adobo sauce, finely chopped
½ cup panko bread crumbs
1 tablespoon olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir soup, evaporated milk, Colby cheese, and chipotle chile into the cooked pasta until well combined. Spoon mixture into the prepared casserole dish.
  • Stir together panko bread crumbs and olive oil in a small bowl. Sprinkle bread crumb mixture over the top of casserole.
  • Bake in the preheated oven until the top is browned and the casserole is bubbling, 25 to 30 minutes.
